Pom Granita

A granita is a frozen dessert with very much the same consistency of a ‘slushie’. It is a great refreshing dessert. This one uses Pom juice and just a hint of simple syrup to add a bit of sweetener. This is so good for you; it is packed with antioxidants. But the better part is just how wonderful it is – it’s POM WONDERFUL !

Place a metal bowl in the freezer to chill. Combine ingredients and pour into the bowl and place in the freezer for 30 – 60 minutes. When ice crystals form on the edges, stir with a fork being sure to pull away all the frozen pieces around the edges and freeze another 2-3 hours stirring every ½ hour. Best to serve right after the initial freeze time, but if f you let it sit overnight, be sure to defrost for 15 minutes or so before serving.

The addition of Pom juice to an already incredibly fresh cranberry relish … I’d call it a stroke of genius. You have to try it to believe how good it is !!

1 bag cranberries
3/4 c Splenda
1 granny smith apple, cored and in quarters
1 seedless oranges (peel and all !), in quarters
8 oz. Pom Wonderful pomegranate juice

Rinse the cranberries and pick out any bad ones. Place in a food processor and process until they are in small pieces. Remove to a bowl. Place apples in processor and blend until small pieces. Remove to bowl with cranberries. Place oranges in processor and process until all skin is in small pieces. Remove to bowl with cranberries and apples. Add Splenda and juice and mix well. Refrigerate at least 4 hours so flavors blend.

Pom Wonderful

Pomegranates ! One of my favorite fruits. They’re not well know, but they’re well worth getting to know.

While I love them, they are a HUGE pain to prep – just cutting into them leaves you with little stain marks all over the place – no matter how you do it, it can’t be done neatly. But between the unique taste and the healthy benefits, I don’t want to give up pomegranates….and in walks POM WONDERFUL 🙂 This amazing beverage is 100% pomegranate juice…Already all cut up, all squeezed out, and all right there in a cute little bottle just waiting in the refrigerator for you 🙂

Even without all the health benefits, I would drink this up like there’s no tomorrow. I love the rich, tart flavor. I think I am actually addicted to it 😉 And then there’s the recipes….Pom is great for making reduction sauces, as a syrup, in frozen desserts, and as an ingredient in other beverages. It’s versatile, fun, healthy and flavorful.

Be on the lookout – I have about 3 POM recipes coming up for you shortly ! And grab yourself some POM WONDERFUL !

V-8 Spicy Hot

V-8 juice is not just for beverage consumption (though a nice tall Bloody Mary comes to mind whenever I pour it!). Their ‘Spicy Hot’ variety makes a GREAT ingredient for cooking. From sauces to soups, this product is a great addition to your pantry staples. And they even have a low sodium version that has 70% less sodium than regular V-8 Spicy Hot 🙂

1 cup is only 50 calories and gives you 2 full servings of vegetables. So as well as being a tasty ingredient, it’s a very healthful one. There’s no fat and no cholesterol, but tons of flavor. And that makes it great for using in recipes.

I have a soup recipe coming up soon that uses V-8 as a main part of the soup base – it is DELICIOUS, and it’s very healthy – I can’t wait to get it posted for you. I am sure you will enjoy 🙂

In the meantime, think about using it in some of your favorite recipes for a low sodium, spicy, HEALTHY kick !

chili – instead of tomato sauce, try some V-8 and a few tablespoons of tomato paste (since you will need a little thickener)

tomato sauces for over pasta – as well as diced tomatoes, add some V-8 Spicy Hot to kick up the flavor

soups – use Spicy Hot V-8 as the main base or mixed with broth – such depth of flavor is added this way that quick soups taste slow simmered

Portobello and Ricotta Wontons with Wild Mushroom Cream Sauce

I modeled this recipe after a restaurant favorite of mine – it is a wild mushroom ravioli appetizer that I could not help but order every time I frequented a certain restaurant, but the calorie count was over the top. Not this one !! Between the RICH cream sauce and the multiple mushroom flavors, this meal tastes just as decadent but with so few calories, you can eat it without any guilt.

Portobello and Ricotta Wontons
Portobello and Ricotta Wontons

Thanks to Marxfoods.com for the wild mushrooms to create this masterpiece ! The different varieties lend quite a flavor to this dish. The dish would just not be the same using run of the mill mushrooms. The mixture of the chanterelles and matsutakes inside the little packet of goodness combined with the flavors of the porcini, lobster and black trumpet mushroom sauce … well, it’s just a little bit of heaven right here on earth.

Marxfoods offers a bunch of wild mushroom varieties – I think my favorite in this dish were the black trumpet mushrooms – they have a very delicate texture and the aroma is akin to a truffle. These are definitely on my list of favorites.
