    This recipe makes 5 silver dollar pancakes and you can eat them ALL yourself… for only 185 calories ! You might be tempted to make yourself 2 servings, but I tell you, these are so filling, you won’t have room ! Serve with sugar free maple syrup – at only 15 calories per ¼ cup, slather it all over :)

    1/4 c whole wheat flour
    1/4 c ripe banana, mashed
    3 T Egg Beaters
    1 T skim milk (or more if the batter is too thick)
    1/4 t baking powder
    1/4 t vanilla
    1 packet Equal
    dash salt
    dash cinnamon
    dash nutmeg

    Combine all the dry ingredients. Combine all the wet ingredients. Mix together. This is a thickish batter; it won’t be as thin as regular pancake batter. Cook 5 pancakes on a hot griddle.

    This makes a great breakfast, brunch or lunch. Try changing it up a little by switching green olives for black, fresh tomato for sundried, etc.

    1 light whole wheat English muffin
    1 Babybel cheese, sliced into thin rounds
    2 slices turkey bacon
    5 sundried tomato strips
    2 T chopped black olives
    4 very thin slices cucumber
    1 Romaine lettuce leaf

    Cook bacon according to package instructions. Toast muffin. While still hot, place cheese slices on bottom half. Then add bacon, tomatoes, olives, cucumber, lettuce and top with the other half of the muffin.

    1/2 c Egg Beaters
    1 Laughing Cow light cheese, cut in cubes
    Pam
    1 piece of 45 calorie bread, toasted
    1 T buttery spread

    Heat pan on medium heat. Remove from heat and spray with Pam. Return to heat. Add Egg Beaters and scramble lightly. Once eggs are set, add cubes of cheese and fold in until well distributed and eggs are done.

    Toast bread and add 1 T buttery spread. Serve immediately.

    I mix and match this one all week long. Sometimes Canadian bacon slices are substituted, sometimes shredded low fat cheddar, sometimes mushrooms – pretty much anything you would throw into an omelette works well here.

    348 calories per serving

    1 Smart Delicious Wrap (100 calorie version)
    Pam spray
    ½ cup Egg Beaters
    3 slices lean turkey bacon
    1 Light Laughing Cow cheese wedge
    2 T salsa
    ¼ c avocado slices
    Salt and pepper to taste

    Heat the wrap in the microwave for 15 seconds if they have been refrigerated – this helps them to roll better. Cook turkey bacon according to package instructions and set aside. Heat a small frying pan on med high heat. Remove from heat and spray with Pam. Return to heat and add the Egg Beaters to the pan. Add salt and pepper. Reduce heat to medium. Scramble eggs until set.

    Lay the wrap on a plate and spread the cheese evenly over the wrap. Lay the three slices of bacon in the center (be sure to leave a little room at the bottom for folding). Add the eggs in a strip down the center. Spoon the salsa over the eggs. Fold one side over, fold up a bit of the bottom, then fold the other side over to make a wrapped burrito. Serve avocado slices on the side.
