Turkey Panini

Turkey with a zesty cheese sauce is the perfect lunch !

3 T lowfat mayonnaise
2 T nonfat plain yogurt
2 T shredded (not grated) Parmesan cheese
2 T chopped basil
1 t lemon juice
Pepper to taste
8 slices light whole wheat bread
8 oz. thinly sliced deli turkey
8 slices tomato
2 t canola oil
ICBINB spray

Mix mayo, yogurt, cheese, basil, lemon juice and pepper. Spread 2 t of the mixture on each slice of bread and then fill the sandwiches with turkey and tomato. Heat 1 t oil in a large nonstick pan and put in 2 sandwiches. Use a Panini press to weight down the sandwiches. Cook until golden, about 2 minutes. Spray the top with I Can’t Believe It’s Not Butter Spray and then flip the sandwich and cook until the second side is golden. Repeat with the 2 remaining sandwiches.

Grilled Chicken Sandwich

When you add creamy avocado to a sandwich, there is no need for any other dressing. And avocado is a great MUFA for your diet. This grilled chicken sandwich is very tasty.

3 oz. chicken breast
1 hoagie / sub roll
1 slice tomato
1 large slice lettuce
Salt and pepper to taste
Garlic powder to taste
¼ c avocado slices

Heat grill. Sprinkle chicken with salt, pepper and garlic powder and grill 3-4 minutes each side or until done. During the last minute, slice your roll and place face down on the grill to toast the bun. Make a sandwich of all the ingredients.

If you do not have a grill, you can toast the roll in a toaster oven and you can pan fry the chicken in a skillet sprayed with Pam.

Chicken Salad Sandwiches

I’ve been making this chicken salad since the 80’s when a friend shared her recipe with me. Before then, I definitely was not a fan of the thought of apples and chicken together. But ever since that first bite all those years ago, I have never made traditional chicken salad again without apples ! If you’ve never tried, give it a shot !

12 oz. cooked boneless skinless chicken breast, in small chunks (Perdue Shortcuts work great here)
1 granny smith apple, diced small
2 t lemon juice
¼ c low fat mayo
8 slices 45 calorie per slice wheat bread
Salt and pepper to taste

Mix all ingredients and let sit in refrigerator at least 1 hour so flavors combine well. Make sandwiches and enjoy !

Spinach Burgers

This is flavorful and as good as you’ll find at any restaurant…I think even better ! It’s what a gourmet burger should be. The sautéed spinach and cheese are heaven. Eat yours without any toppings or add some Dijon or a slice of lettuce and tomato.

10 oz. baby spinach
2 lb. lean ground beef
1/2 c shredded low fat cheddar cheese
2 T Worcestershire sauce
3 cloves garlic, sliced thin
Salt and pepper to taste
8 small Portugese rolls

Preheat grill. Spray a skillet with Pam and heat. Add garlic and sauté 1 minutes. Add spinach and 1 T Worcestershire and cook until spinach is wilted down. Remove from skillet and chop (I find kitchen shears work great here) the cool to room temperature or cooler. Mix beef, cooked spinach, salt, pepper and 1 T Worcestershire. Make 8 burgers and grill to desired doneness.

Grilled Pork Sliders

Sweet sauce, succulent pork – what a great slider this makes ! It’s easy to do the pork ahead of time and keep warm – so this is a great dish for entertaining.

1/2 c BBQ sauce (use your favorite)
2 T dark rum
2 T honey
1 lb. pork tenderloin, fat trimmed
8 slider buns

Heat grill. Mix sauce, rum and honey and bring to a boil down for a couple of minutes. Use half of the sauce to baste the pork while you grill it 20 minutes or until done. Let pork stand for 5-10 minutes and then slice thinly.

Place slices on buns and add some of the reserved sauce. Optionally add some caramelized onions for a super savory sandwich.

To caramelize onions, heat 1 T oil in a skillet and then cook onions 5 minutes on high heat. Reduce heat to medium low and continue cooking 20 minutes or until golden brown. You may need to add hot water a tablespoon at a time to keep them from drying out. When done, season with salt and pepper.

Poblano Grilled Cheese

Looking for something a little spicy and a little different? This will definitely perk up your lunch ! The poblano pepper makes a great grilled sandwich – coupled with the bean and salsa mash, you barely want anything else – even the cheese becomes secondary (and that is often IMPOSSIBLE).

4 poblano peppers
14 oz. can pinto beans
3 T salsa
1/8 t salt
½ c shredded low fat Cheddar cheese
2 T low fat plain yogurt
2 T chopped cilantro
8 slices 45 calorie per slice whole wheat bread

Place peppers in a glass bowl, cover with plastic wrap and microwave 4 minutes to soften. Let sit covered until cool. Mix beans with salsa and salt and mash most of them to form a paste. Mix cheese with yogurt and cilantro. Heat a Panini maker or indoor grill with a press. Spread the bean mix on 4 slices of bread and then top with the cheese mix. Split the peppers in half and remove the seeds then place peppers over the cheese and finish the sandwich. Spray both sides of the sandwiches with 5-6 squirts of ICBINB spray. Grill until golden brown.

Greek Chicken Pitas

Greek food is so flavorful and fresh tasting. And many of the dishes are surprisingly simple to make. Using store bought tzatziki here is a time saver, but if you want to make it from scratch, it’s pretty easy. It’s just a mixture of plain Greek yogurt, garlic and cucumber pieces. You can skip the tzatziki if you don’t like it, then just substitute some hummus to add in more moisture.

1 lb. chicken tenders
1 t Greek seasoning (mix of oregano, salt, onion powder, garlic powder and paprika)
1/2 c tzatkizi
4 8 inch pita breads
2 c romaine lettuce, chopped
2 plum tomatoes, sliced
1 cucumber, seeded and cut into strips
1/4 c crumbled feta cheese

Spray a large skillet with Pam. Heat on medium high and add chicken. Sprinkle with the seasoning and cook 6-8 minutes or until lightly browned and done throughout.

Slice pitas so you will be able to fill the pocket. Add chicken, lettuce, tomatoes, cucumbers, feta and tzatziki. I often slice the chicken up first so it gets more distributed throughout the sandwich.

Grilled Cajun Chicken Sandwiches

This is a sandwich that makes your mouth happy 🙂 The combination of the Cajun flavoring on the chicken along with the roasted red pepper and pepperoncini is just perfect. This one is a sure crowd pleaser and cut into strips, would make a great appetizer.

2 slices Italian bread
1 ½ t light mayonnaise
6 slices Cajun spiced deli chicken breast (if unavailable, sprinkle roasted deli chicken with some Cajun seasoning)
3 strips jarred roasted red peppers
1 small pepperoncini pepper sliced
1 no fat cheese slice (Kraft Singles are nice and creamy!)
2 t lite Italian dressing

Brush the outside of the sandwich with the dressing and cook in a skillet 3 minutes per side or until golden brown. Spread mayo on bread and then add all the ingredients.

Monte Cristo Sandwich

A Monte Cristo Sandwich is dipped in egg and fried – this version adds LOTS of gooey Gruyere cheese (the kind you find on top of French Onion Soup). If you prefer a milder cheese, switch to Swiss or cheddar.

1 T Dijon mustard
1 T fat free mayonnaise
8 slices Italian bread (1 oz. each) I recommend that you get a kitchen scale – it takes out the guess work !!
6 oz. deli ham, thinly sliced
1 c shredded Gruyere cheese (substitute Swiss or cheddar or jack if you don’t like Gruyere)
1/4 t black pepper
1/2 c Egg Beaters
1/4 c skim milk
Pam

Combine mustard and mayo. Spread each of 8 slices with an even amount of the mix. Then layer 4 slices each with ham and cheese. Sprinkle evenly with pepper and cover with other 4 pieces of bread. Combine eggs and milk. Dip both side of each sandwich in the mix. Heat a large skillet on medium high heat and spray with Pam. Cook sandwiches 3 minutes each side or until lightly brown.

French Dip Sandwich

This is your classic French dip with a twist – you add some sauteed peppers and onions to make an already good sandwich just GREAT ! You will find yourself making this one again and again !

1 jar au jus gravy
32 slices thin sliced deli roast beef (Oscar Mayer pre-packaged meats are great)
4 small Club rolls
1 small onion, sliced
1 bell pepper, sliced
Pam

Saute onion and pepper in a pan sprayed with Pam. Add a tablespoon of water at a time if needed to keep moist. Cook until veggies are tender, about 7 minutes. In a skillet heat the gravy and add the roast beef to heat it through. Place meat on rolls and top with peppers and onions. Serve with dipping sauce.
