Barley Salad

This is a great healthy side salad that is sure to please. It’s nice to find *different* sides and this is definitely one of them !

3/4 c barley, uncooked
1 ½ c frozen corn, thawed and roasted
1 small green pepper, chopped
1/2 c zesty fat free Italian dressing
1/4 c chopped cilantro
2 T lime juice
Pam

Preheat broiler. To roast corn, spray a baking sheet with Pam and place corn on sheet. Broil 3-4 minutes or until it begins to blacken. Cook barley as directed. Spray a baking dish with Pam and roast corn 5-10 minutes or until starting to blacken. Let cool. Mix all the ingredients and refrigerate one hour so flavors mingle.

Italian Rice Salad

This salad uses the artichoke marinade as the main ingredient in the dressing to it’s a snap to throw together. If you have fresh herbs on hand, thrown in a few tablespoons for added flavor. This side dish is perfect next to just about anything.

6 oz. jar marinated artichoke hearts, liquid reserved
2 T lemon juice
1 t minced garlic
Salt and pepper to taste
3 c cooked white rice, chilled
15 oz. can diced tomatoes, drained
3 cloves garlic, minced
6 oz. can pitted black olives, drained

Mix the artichoke marinade with the lemon juice, 1 t garlic, salt and pepper. Spray a sauté pan with Pam and cook 3 cloves minced garlic for 1 minute or until golden and fragrant. Mix artichokes, rice, tomatoes, garlic and olives and refrigerate at least 1 hour.

Zesty Zucchini and Parm

These make a perfect appetizer or even a great side dish – this is a great recipe to use up all those garden zucchini !

1 t oil
2 zucchini sliced 1/4 inch thick
Salt and pepper to taste
Red pepper flakes to taste
1/4 c grated parmesan cheese

Preheat broiler. Spray baking sheet with Pam and lay zucchini rounds down in a single layer. Sprinkle with red pepper, salt, pepper and cheese. Broil 5-6 minutes until cheese is browned.

Snacker Potato Balls

These make a great snack, a perfect appetizer, or a wonderful dinner side dish. The shake and bake crumbs really give them a nice flavor through and through.

Makes 24 balls

2 lb. baking potatoes (about 5), peeled and cut into chunks
2 scallions, thinly sliced
¼ c egg beaters
Salt and pepper to taste
4 oz. low fat velveeta, cut into 24 cubes
1 pouch Shake and Bake

Cook potatoes in boiling water 20-25 minutes or until tender then drain and cool for ½ hour. Mash them and add scallions, egg beaters, salt and pepper. Heat oven to 400 degrees. Roll potato mix into 24 balls (about 2 T each) inserting a cube of velveeta into each and making sure it is all sealed up in the middle. Sprinkle shake and bake on a baking sheet and place potato balls on sheet and turn so they get coated. Bake 16 minutes.

Celery and Cuc Salad

Fresh from the garden ! A quick side salad of cucumbers and celery. Oh so good.

4 celery stalks sliced thin
1 small-medium cucumber, peeled, halved, seeded and cut into very thin slices
1/3 c packed parsley leaves
3 t sherry vinegar
2 t oil
Salt and pepper to taste

Combine all in a bowl and mix well.

Sauteed Escarole with White Beans

I have a lot of recipes pairing white beans and escarole – but this one is just a bit more – this one adds extra veggies and the dish is totally different than plain old sautéed escarole. The creamy texture of the beans just goes great with the crisp zucchini and corn.

2 heads escarole, rinsed well and chopped
2 oz. pancetta or bacon, chopped
1 zucchini, quartered and cut into julienne strips
1 garlic clove, minced
1 c frozen corn kernels , thawed
15 oz. can white beans, rinsed and drained
1 T red wine vinegar
1 t olive oil
Salt and pepper to taste
½ t garlic powder

Heat a large skillet and spray with Pam. Add escarole and cook 6 minutes to wilt. Remove and set aside. Cook bacon 2 minutes then add zucchini and cook 4 minutes. Add garlic and corn and cook 1 minutes. Add back the escarole then mix in parsley, beans, salt, pepper, garlic powder, vinegar and oil. Toss well and serve.

Baked Mac and Cheese

Add a layer of healthy spinach, use low fat cheese and FiberGourmet pasta and quickly you have a healthy alternative and a fan favorite 🙂

3 T breadcrumbs
1 t oil
½ t paprika
20 oz. frozen spinach, thawed
1 3/4 c skim milk, divided
3 T flour
2 c shredded low fat extra sharp Cheddar cheese
1 c low fat cottage cheese
1/8 t nutmeg
Salt and pepper to taste
8 ounces FiberGourmet penne or elbow pasta

Preheat oven to 400 degrees. Spray a 2 quart baking dish with Pam. Mix breadcrumbs, oil and paprika. Squeeze out spinach in a colander so it is very dry. Mix ¼ c milk with flour. Heat 1 ½ c milk until steaming and them whisk in the rest of the milk and continue whisking until it is thickened, about 3 minutes. Remove from heat and stir in cheddar until melted. Then stir in cottage cheese, nutmeg, salt and pepper. Cook pasta about 4 minutes (do not cook all the way or it will be too mushy after it bakes). Mix pasta and cheese and place half of it in the baking dish. Then add the spinach and top with the rest of the pasta. Sprinkle with the breadcrumb mix and then bake 30 minutes or until golden.

Broccoli AuGratin

I like when you can take a healthy vegetable and disguise it enough that you can get a picky kids to eat it 🙂 This one has enough cheese and crumbly topping to make it disappear !

3 c water
2 c baby carrots, cut in half
4 c broccoli florets (very small pieces)
10 whole wheat Ritz crackers, crushed
3 T grated parmesan cheese
1 T butter, melted
4 oz. light Velveeta, cut into 1/2-inch cubes
2 oz. light cream cheese

Preheat broiler. Boil water and add carrots. Simmer for 8 minutes then add broccoli and simmer another 3 minutes. Drain and place in a bowl.

Microwave Velveeta and cream cheese on high 1 minute then stir and cook another 30 seconds or until completely melted. Pour on top of veggies. Mix crackers and parm and butter and sprinkle on top of the veggies and cheese and place under broiler for 2-3 minutes to brown the crumbs.

Corn Salsa

This can be eaten as a side, or use in smaller portions as a salsa over the top of broiled fish or chicken. Very savory, very easy to put together and very healthy !

1 c corn kernels (frozen and thawed or fresh)
¼ c chopped cilantro
1 jalapeno or ¼ of a green bell pepper, chopped finely
¼ c fat free zesty Italian dressing
Squirt of lime

Mix all together and chill at least 1 hour.

Green Beans and Pepitas

This is one of THE best veggie side dishes I have made in a long time. I bought a bunch of pepitas to make them for snacks and then came up with some other great ways to use them – this is one of the best ! The flavor and texture of the pepitas goes so well with the beans and the very simple seasoning. This is a special one !

1 pound green beans
2 tablespoons oil
1/4 c pepitas (raw pumpkin seeds)
Kosher salt
Pepper to taste
1 t rosemary
1 garlic clove, minced

Boil water and add some regular salt and cook beans 5 minutes. Drain and rinse with cool water then cut them into 1 inch pieces. Heat 1 T oil in a skillet. Saute pepitas until they start to brown and pop, about 5 minutes. Sprinkle with salt and pepper and remove to a bowl. Heat the rest of the oil and cook garlic and rosemary 30 seconds. Add beans and pepitas and cook 2 minutes to heat through. Sprinkle with salt and pepper.
