Chicken Salad with Artichokes

Lunch salads don’t have to be the same boring thing day in and day out. This one has marinated grilled chicken and artichokes giving it a great Italian flavor.

½ c lite Italian dressing
½ lb. boneless skinless chicken breast halves
2 c torn arugula
2 c torn romaine leaves or other greens
14 oz. can quartered artichoke hearts
2 plum tomatoes, cut into wedges
½ c low fat shredded cheddar cheese
4 fresh basil leaves cut into strips

Pour ¼ c dressing over chicken and refrigerate ½ hour. Heat grill and cook chicken 6-8 minutes each side or until done then cut into strips. Combine arugula and lettuce and top with artichokes, chicken, tomatoes, cheese, basil and the rest of the dressing.

Chicken Posole Soup

I think this is the Mexican version of leftover soup – a bit of salsa, a bit of hominy, a bit of chicken, a bit of cilantro – – and all seasoned with cumin, that wonderful spice that makes it taste so rich.

4 c fat free chicken broth
15.5 oz. can white hominy, drained
¾ c tomatillo salsa (often called salsa verde)
2 c shredded cooked chicken breast
1 ½ t cumin
½ c chopped fresh cilantro

Mix broth, hominy and salsa and bring to a boil. Toss chicken with cumin and add to broth and simmer 10 minutes. Place in bowls and garnish with cilantro.

This dish is so packed with flavor, so satisfying, so easy to make and I am so going to make it again very soon !

½ c prepared pesto sauce
1 c fat free chicken broth
9 oz. prepared sliced chicken (Perdue Shortcuts work great here)
8 oz. FiberGourmet Fettucine noodles (without FiberGourmet pasta, you have to add another 80 calories per serving to this)
Salt and pepper to taste
2 large tomatoes, chopped

Mix pesto and ¾ c broth in a skillet and add the chicken and mix well then cover and cook on medium for 5 minutes. Cook the pasta according to package directions and toss with ¼ c broth and season with salt and pepper then add chicken mix and mix well. Garnish with chopped tomatoes.

South of the Border Chicken

This is one of those PERFECT meals. Some meals are just spiced perfectly, cook up perfectly time and time again, and deserve a place in the Hall of Fame of recipes – this is one of those. If you love Mexican inspired dishes, you have to give this one a try !

12 oz. boneless skinless chicken breasts
¼ t pepper
¼ t salt
2 t oil
1 medium onion, chopped
2 cloves garlic, minced
1 c fat free beef broth
1 8 oz. can tomato sauce
1 15 oz. can black beans, rinsed and drained
1 4.5 oz. can chopped chilies
1 t chili powder
½ t ground cumin
3 c hot cooked rice

Sprinkle chicken with salt and pepper and place in a hot skillet sprayed with Pam. Cook 5 minutes or until they begin to brown then set aside and keep warm. Heat oil and add onion, garlic and 2 T of the broth. Cook 6 minutes or until tender then add tomato sauce, beans and the rest of the broth and mix well. Add the pepper, chili powder, cumin and chicken and bring to a boil the reduce heat and simmer 15 minutes. Serve over rice.

Herbed Chicken

Crispy on the outside, juicy on the inside – this chicken dish is superb. Try serving with Mexican Mac and Cheese and a nice green salad. The leftovers are great for use in salads, for wraps and sandwiches, and for quick soups.

4 boneless skinless chicken breasts (Perdue Perfect Portions work great here !)
1 clove garlic, minced
1 t basil flakes
1 t rosemary flakes
1 t parsley flakes
¼ t kosher salt
2 T oil
Pam

Preheat oven to 475 degrees. Make some deep slit sin the chicken tops. Combine garlic and other herbs and 2 T of oil and brush onto chicken. Heat an oven safe skillet and spray with Pam and cook chicken slit side down with the pan covered for 5 minutes to get a nice sear on it. Turn and then place skillet into oven and cook 12-15 minutes.

Alternately grill chicken on a hot grill if you prefer 🙂

Chicken Club Sandwiches

So simple – especially of you plan these for a day after you make chicken the night before – then you are just pulling pre-made cutlets out of the frig and that’s just as easy as pulling out cold cuts. What makes this a club – – well, the BACON, of course 🙂

4 bacon slices
4 4 oz. chicken cutlets
¼ t pepper
8 slices multigrain bread
¼ c light mayonnaise
1 T Dijon mustard
4 green leaf lettuce leaves
2 plum tomatoes, thinly sliced

Cook bacon them remove from pan and reserve 1 T of the drippings. Sprinkle chicken with pepper and place in pan and cook 4 minutes per side. Toast bread and place a mix of mustard and mayo on 4 slices. Top with lettuce and tomato, then the chicken and bacon.

Chimichurri Chicken and Green Beans

Chimichurri sauce just makes everything better ! It’s a great mix of parsley, vinegar, garlic and lemon and is much like the Italian gremolata. Serve with some coucous for a great complete meal !

3 T oil
4 boneless skinless chicken breasts (1.25 lb.)
½ t salt
¼ t pepper
12 oz. fresh green beans
1 T water
¾ c parsley
1 T cider vinegar
2 cloves garlic, halved
¼ t red pepper flakes
Zest of 1 lemon

Brush chicken with 1 T oil and sprinkle with half the salt and pepper. Heat grill and cook chicken 12-15 minutes or until done. While the chicken is cooking place beans and water in a glass bowl, cover with plastic wrap and microwave 3 minutes. In a food processor combine 2 T oil, the rest of the salt and pepper, parsley, vinegar, garlic and red pepper and process until almost smooth. Place chicken on bed of beans, with sauce and lemon zest on top. Squeeze extra lemon juice over top and user lemon slices as garnish.

Chicken and Black Bean Quesadillas

This is so savory and flavorful…and filling ! You can also cut these into smaller servings and make as a snack or appetizer.

2 c shredded cooked chicken breast (Perdue Shortcuts work great here!)
2/3 c salsa verde
15 oz. can black beans, rinsed and drained
4 80 calorie tortilla wraps
1 c shredded low fat Mexican four cheese blend
Pam
Extra salsa verde for dipping
Salt and pepper to taste

Mix chicken, 1/3 c salsa, salt and pepper. If chicken is cold, you may want to heat it a couple minutes in the microwave – this way the quesadilla comes to heat quicker. Combine beans with the rest of the salsa and mash slightly to break up some of the beans. Spread 1/3 bean mix over half a tortilla and then top with ½ of the chicken mix and ¼ c cheese. Fold in half and spray the outsides of the tortillas with Pam. Heat a skillet and cook each quesadilla a couple of minutes each side. Cut into wedges and serve.

Lemon Pepper Chicken

Lemon Pepper is a great spice for poultry – and when I do a grill basket version of this chicken recipe, I really pour it on !

12 oz. chicken, cut into bite sized pieces
4 c mix of sliced onion, yellow bell peppers, and halved mushrooms
2 T oil
1 T lemon pepper seasoning
1 t finely shredded lemon zest
Lemon wedges
Pam

Heat grill. Toss shrimp and 1 T oil. Mix veggies and 1 T oil and seasoning.

Spray grill basket with Pam and heat. Add chicken and cook 3 minutes, stirring occasionally. Add veggies and cook 6 minutes or until chicken is done. Stir in juice of one lemon. Serve topped with lemon zest.

Southwest Chicken Panini

Spicy hot and spicy good. You can tone this one down by using chili powder instead of chipotles, but it you like it hot, roll with it 🙂

2 c finely chopped cooked chicken breasts (Perdue Shortcuts work great here)
1 ½ t diced chipotle peppers in adobo sauce (available in the Mexican section of your grocery store)
2 T Miracle Whip lite
2 T light ranch dressing
8 slices Italian bread
8 slices tomato
4 fat free cheese slices
ICBINB Spray

Heat Panini grill. Mix chicken, chipotles and dressings and fill bread slices, then add tomatoes and cheese and spray outside of bread with I Can’t Believe it’s Not Butter spray (about 5 squirts per slice of bread) and grill about 2 minutes per side or 4 minutes total in a Panini press.
