Beef Stroganoff Topped Potatoes (Crock Pot)

This serves up a super scrumptious stroganoff and serving it atop potatoes is a nice change from the typical noodles.

1 medium onion, chopped
1 ½ lb. boneless beef round steak cut into strips
2 4.5 oz. jars of Green Giant Sliced Mushroom and Garlic, drained
2 t beef boullion crystals
2 T water
1 t garlic powder
1 t onion powder
Salt and pepper to taste
6 medium baking potatoes
8 oz. low fat sour cream
1 T flour
1 T ketchup
Chopped parsley for garnish

Layer onion, beef and mushrooms in the crock pot. Combine beef boullion, salt, pepper, spices and water and pour over beef mix. Cover and cook on low 8-10 hours. An hour before serving, cook baked potatoes (LINK TO RECIPE). Mix sour cream, flour and ketchup and stir into beef mix. Place heat on high and recover and cook another 10 minutes. Cut potatoes in half lengthwise and loosen the pulp with a fork. Spoon beef mix over potatoes and sprinkle with parsley.

Barbecued Beef Sandwich

This reminds me of a good old Arby’s Roastbeef sandwich. This is a SUPER portion of meat combined with tangy BBQ sauce and it makes a great lunch ! Just meat and bread – that’s the way it should be sometimes !

8 slices thin deli sliced lean roast beef (Oscar Mayer pre-packaged meats are great)
2 T barbecue sauce
1 small club roll

Place meat in a small skillet with barbecue sauce and quickly heat. Place on roll and enjoy !

Beef Stroganoff Casserole

Another in my search for the perfect ‘homemade hamburger helper’ recipe. This one is definitely a contender ! It is very flavorful and sometimes you just gotta have beef (many of my others use ground turkey). It’s 404 calories – so just do a few jumping jacks before dinner and you’ll burn off those extra 4 🙂

1 lb. lean ground beef
¼ t salt
¼ t pepper
1 t oil
8 oz. sliced mushrooms
1 large onion, chopped
3 cloves garlic, minced
¼ c white cooking wine
1 can low fat cream of mushroom soup
½ c light sour cream
1 T Dijon mustard
4 c cooked egg noodles

Preheat oven to 350 degrees and spray a 13×9 pan with Pam. Cook meat in a skillet. Sprinkle with salt and pepper and cook until no longer pink, separating the pieces as it cooks. Drain liquid and fat from meat and set meat aside. In same skillet add mushrooms, onion and garlic and cook 3 minutes. Add wine and reduce heat and cook another 3-4 minutes then remove from heat and stir in soup, sour cream and mustard. Return beef to pan and mix well. Put noodles in the baking dish and then pour beef over the noodles. Mix well. Bake uncovered 30 minutes.

Yummy Burgers

Just adding some spices to ground beef before grilling it can make SUCH a difference. Don’t think that you need cheese and tons of condiments on a burger for flavor. Instead, try adding some lower cal herbs and spices to the meat and see what great burst of flavor you get !

¼ c beef broth
2 T Worcestershire sauce
2 t chili powder
1 t onion powder
½ t red pepper flakes
¼ t salt
¼ t pepper
1 pound lean ground beef
4 burger buns

Combine all the spices with the meat and make 4 patties. Grill burgers 6-8 minutes or until desired doneness. Serve on buns.

Cola Pot Roast (Crock Pot)

The soda really marinates and tenderizes the roast – this has a special flavor, one you’ll find yourself craving ! Pictures of pot roast never do it justice. Believe me, no matter how it looks, you want to make this one because it tastes just great.

3 lb. beef roast
2 cans low fat cream of mushroom soup
1 envelope dry onion soup mix
32 oz. diet Pepsi or diet Coke

Place meat in crock. Mix together soups and soda and pour over the roast. Cover and cook on high 6 hours.

At the end, put a nice brown on it by broiling for 5 minutes. Let sit 10 minutes, then slice.

Pot Roast (Pressure Cooker)

Pot Roast is just a special dish – it is so homey and so inviting. I love the way the meat gets so super, super tender. If you don’t have a pressure cooker, you can cook this stove top in Dutch Oven for 2 hours at a low simmer. But if you have a pressure cooker, then definitely try this recipe in there – the pressure cooker method adds even more flavor to an already fantastic dish.

1 lb. beef round steak ½ inch thick (thin London broil), cut into 4 pieces
2 T oil
6 large carrots, in 2 inch pieces
6 small new potatoes, halved
1 large onion, peeled and cut into wedges
1 t rosemary flakes
1 t thyme flakes
¼ t salt
¼ t pepper
½ t garlic powder
¾ c fat free beef broth
2 T flour
¼ c water

Heat oil in pressure cooker and brown meat on both sides. Remove and set aside. Add onions and cook for 5 minutes. Add carrots, potatoes, herbs, salt and pepper and then add the beef back. Pour the broth over the mix. Lock lid, bring to pressure and cook ½ hour. Quick release the pressure and remove meat and veggies to a platter and keep warm. Mix flour and water and stir into broth and cook until thickened and serve over meat.

If you don’t have a pressure cooker, do this stove top in a dutch oven and for the final cooking period, cook 2 hours on a low simmer.

Roast Beef and Swiss Sandwich

4 oz. lean deli roast beef, thinly sliced
1 slice low fat swiss cheese
1/3 c spinach leaves
1 slice red onion
½ T horseradish
½ T light mayonnaise

Mix mayo and horseradish and spread on bun then top with meat, cheese, spinach and onion.

Beef Ramen Bowl

Simple, versatile dinner that is ready in no time and tastes like a million bucks. You could easily substitute chicken or pork and leftover meats would be great to use here. You can also sub in any frozen veggie mix.

1 lb. beef sirloin cut into thin strips
2 c water
3 oz. Asian or Beef flavor ramen noodle mix
1 lb. fresh stir fry veggies (broccoli, cauliflower, carrots, red peppers)
¼ c soy sauce

Spray a skillet with Pam and cook beef 5 minutes or until browned then remove from skillet and keep warm. Boil stir in veggies and heat to boiling and continue to cook 4 minutes or until veggies are a bit tender. Stir in seasoning packet and broken up noodles and continue cooking 3 minutes. Finally add soy and then add beef and heat through.

Ginger Beef

Ginger and garlic just go together so well. And making a paste of them along with cilantro and sesame oil just adds so much flavor to the already flavorful beef. This is a great quick dish that you will make again and again.

1/4 c cilantro leaves
1 garlic clove, minced
4 quarter size slices peeled fresh ginger
2 T water
2 T dark sesame oil
1 lb. boneless sirloin cut into long slices
16 cherry tomatoes
2 small zucchini each in 8 pieces
2 c cooked brown rice

Preheat broiler. Spray baking sheet with Pam. Mix cilantro, garlic, ginger, water and oil in a food processor until a paste forms. Place the steak in a bowl and add cilantro paste and mix well. Turn out the meat mix onto the baking sheet and add the tomatoes and zucchini. Broil 3 minutes. Stir well. Broil another 3-4 minutes. Serve with warm brown rice.

Bayou Beef and Fettuccine

The Fibergourmet Cajun fettuccine really makes this dish all it is – the flavor is subtle yet delicious. Adding in some other layers of spice make this one a real winner !

1 lb. thinly sliced beef
14.5 oz. canned diced tomatoes with garlic and onion, undrained

½ t Cajun seasoning
Fresh basil leaves, chopped

Cook pasta according to package instructions. Sprinkle meet with Cajun seasoning. Heat skillet and spray with Pam and cook meat 5 minutes then stir in peppers and onions and cook 3-6 minutes, stirring frequently. Then mix in tomatoes, garlic, salt and pepper and cook 2 minutes. Stir in pasta and cook 2 minutes to heat through. Garnish with basil.
