Chickpea Salad with Feta Cheese
5
I’m not a huge fan of plain salads. But when you add lots of fiber (chickpeas) and cheese, then they become special and they do fill you up. This one has both and has a great citrus dressing. Add a few squirts of fresh lime of orange juice to give it even more citrusy taste.

Hi there Aileen,
I came over via your entry on MLLA. I do like your submission. My husband would love it too, for the feta and tomato and me for the chickpeas. Ticks all the right boxes for us. Thank you for sharing. -
This sounds like it could be the whole meal. Great for dieters and vegetarians. Good job!
