The saltiness of the kalamata olives makes this salad very tasty !

1/4 c mixed olives (I use a mixture of black and kalamata)
Zest of one lemon
2 T olive oil
Kosher salt
Pepper
Mix all the ingredients and let sit ½ hour for the flavors to mingle.
