Strawberry Dream

This is like a pudding pop with strawberries – very rich, very creamy and very delicious !

8 oz. cream cheese, softened
1 c skim milk
1.5 oz. package sugar free vanilla instant pudding
1-1/2 c thawed cool whip
20 Nilla Wafers, coarsely broken
1 c sliced fresh strawberries (save some for tops of desserts)
1/2 c strawberry ice cream topping (or strawberry jam)

Beat cream cheese until creamy and gradually beat in milk. Add pudding and beat 2 minutes (it will be quite thick) then stir in cool whip and berries. Swirl in topping. Divide cookies among 18 cupcake liners (I use silicone ones) then spoon in the strawberry mix, garnish the tops with extra berries and freeze 4 hours. Let sit out 10 minutes before eating.

Cappuccino Granita

Think Chocolate Italian ice but with more of a coffee flavor – and that describes this pretty well 🙂 A great dessert for only 70 calories and a perfect ending to a summer night.

½ c sugar
2 T cocoa
3 c strong hot coffee (decaf)
1 c skim milk

Place a 13×9 metal pan in the freezer to chill. Combine all ingredients and cool for ½ hour then pour it into the pan and place in the freezer for 30 – 60 minutes. When ice crystals form on the edges, stir with a fork being sure to pull away all the frozen pieces around the edges and freeze another 2-3 hours stirring every ½ hour.

Raspberry Lemonade Pops

This tastes like a lemonade stand – utterly delicious ! The original recipe I had was for a pie, but the filling is just great in a homemade ice pop. How refreshing – tart and sweet at the same time just like a great lemonade !!

1 ½ c boiling water
.3 oz. package lemon Jello
4 oz. cream cheese, softened
6 oz. frozen lemonade concentrate, thawed
8 oz. cool whip, thawed
1 c raspberries

Add boiling water to jello and stir 2 minutes to dissolve completely. Cool a bit and then add in the lemonade. Beat cream cheese until creamy and then gradually add jello mix. Stir in cool whip and berries and pour into ice pop molds then freeze at least 4 hours.

This was a very sweet pie perfect for a hot summer day. I added lots of extra raspberries as a garnish and it really hit the spot !

8 oz. low fat cream cheese, softened
1 small package instant lemon pudding
1 c skim milk
2 t grated lemon zest
2 c Cool Whip, thawed and divided
¼ c raspberry preserves
Low fat graham crust
1 c raspberries + extras for garnish

Beat cream cheese, pudding, milk and lemon with electric beater and then gently stir in 1 c Cool Whip. Spoon preserves on bottom of crust and cover with the pudding mix. Top with the rest of the Cool Whip and the raspberries. Refrigerate 4 hours. Garnish each slice with extra berries.

Toffee Ice Cream Pie

You’d never know this is fat free ice cream. Adding the toffee bits and topping with Cool Whip and hot fudge make this as delicious as any full calorie dessert.

3 c fat free vanilla ice cream
2 1.4 oz. Heath bars, finely chopped
1 6 oz. low fat graham crust
½ c hot fudge topping
½ c cool whip, thawed

Combine ice cream and candy and then spoon into a crust then cover and freeze 3 hours. Cut into 8 slices and drizzle with hot fudge and top with cool whip.

Pom Pops

Chock full of antioxidants, sweet yet tart, and ever so refreshing. These pops are definitely worth the work.

2 ¾ c pomegranate juice
¼ c lemon juice
½ c Splenda
1 ¾ c apple juice
¾ c pomegranate seeds
2 apples cored and diced small

Mix pom juice with 1/8 c lemon juice. Simmer Splenda, apple juice and 1/8 c lemon juice and dissolve all the Splenda then cool to room temperature. Add half the apple juice mix and the seeds to the pom juice mix. Add the apples to the apple juice mix. Fill the molds half way with the pom juice mix and freeze 1 1/2 hours then add a layer of the apple juice mix and freeze another, insert the sticks and freeze at least 6 hours.

These take a little work to get out of the molds, so let sit a bit before trying to unmold or you may end up with just the stick in your hands 🙂 Or try using the Dixie cup method which you can more easily peel off the dessert. The ice cream separates into 2 different layers so you end up with a great looking 3 layer pop that tastes just divine.

2 c chocolate fat free ice cream, softened
1 T instant coffee
1 c cool whip, thawed
6 dixie cups and 6 sticks (or 6 ice pop molds)

Combine ice cream and 2 t coffee. Mix cool whip and 1 t coffee. Spoon ice cream mix into cups and then top with the cool whip mix. Cover cups with foil and push in the sticks. Freeze 4 hours or more. Peel cups from pops to serve.

Mandarin Dessert

Adding some Cool Whip and fruit to yogurt makes it a whole new dessert – the yogurt is so good for you, and the dessert is tasty and totally guilt free. Enjoy !

8 oz. lowfat orange yogurt
1 c Cool Whip Lite, thawed
11 oz. can Mandarin oranges, drained well

Mix yogurt and Cool Whip and then mix in oranges and chill.

Yogurt Pops

This is a filling for a pie that I have made for years. But it does great double duty as a healthy, fresh alternative to store bought ice pops.

20 oz. can crushed pineapple, drained well
8 oz. tub Cool Whip lite, thawed
6 oz. non fat lemon yogurt (don’t substitute – you need the lemon flavor to bring some tang to the pie)
6 oz. non fat yogurt – any flavor

Mix all ingredients and place in ice pop molds and freeze at least 4 hours. These keep great for several weeks in the freezer. Just rinse the outside of the mold with a little hot water to release the pops.

Green Apple and Pear Pops

What a refreshing snack on a hot summer day ! Pops of any kind make a great dessert or snack and these are no exception 🙂

2 granny smith apples, peeled and diced
2 c pear juice
½ t ground cardamom
1 ripe pear, peeled and diced
1 c applesauce

Mix apples, pear juice and cardamom and simmer on low heat 10 minutes to soften the apples. Add the pears and simmer another 5 minutes. Remove from heat and add the applesauce. Fill the molds and insert the sticks and freeze at least 8 hours.

For fun, place a green maraschino cherry at the bottom of each pop before filling with the other mix.
