This tastes like a lemonade stand in a slice of pie ! It is so refreshing and delicious. Instead of the second pie, I used the extra filling to make homemade ice pops.
16 servings (2 pies)
198 calories per serving
1 ½ c boiling water
.3 oz. package lemon Jello (sugar free)
4 oz. cream cheese, softened
6 oz. frozen lemonade concentrate, thawed
8 oz. cool whip, thawed
1 c raspberries
2 low fat graham crusts
Add boiling water to jello and stir 2 minutes to dissolve completely. Cool a bit and then add in the lemonade. Beat cream cheese until creamy and then gradually add jello mix. Stir in cool whip and berries and pour into crusts then refrigerate at least 4 hours. It will be very thin at this stage – after it is refrigerated it will thicken up a lot. You can also freeze this and simply thaw ½ hour or so before serving. Garnish with a few leftover raspberries.
Fruit salad with a kiss of lime and honey. This is a great fruit combination – the sweet mango, crunchy jicama, tart pomegranate and citrus are a perfect taste treat. So very healthy, make a batch and eat off it for a few days !
118 calories per serving
1/2 c pomegranate seeds (about 1 pomegranate)
1/2 c julienned jicama (if you do not have this substitute apple)
2 medium ripe mangoes, peeled and cut into thin slices
2 tangerines or clementines, peeled and sectioned
2 blood oranges, peeled and sectioned (sub red grapefruit or navel oranges if you cannot find blood oranges)
1 pear, thinly sliced
2 T fresh lime juice
2 T honey
1/4 t ground red pepper
1/8 t coarse sea salt
Mix the fruits and toss gently. Combine honey, lime, salt and pepper and pour over fruit. Serve room temperature or chilled.
Where do I begin? Sweet angel food cake? No, that was good, but that’s not the start. Luscious homemade whipped cream? No, as decadent as that was, it’s not the start of the story. The best, best part of this was the strawberry mix – – combing the balsamic and sugar along with the berries enhanced the flavor so much that it was like eating strawberries to the 10th power. It was just wonderful ! When you combined that flavor with the whipped cream and cake, this was just the most perfect dessert. I think it was way better than regular Strawberry Shortcake !
At only 160 calories, there is plenty of room to add some chocolate sauce – I’ll have to try that next time 🙂
160 calories per serving
4 2 ½ inch thick slices Angel Food Cake (prepared)
1 pint strawberries, sliced
½ T balsamic vinegar
1 T sugar
¼ c heavy cream
¼ t vanilla
Mix berries with vinegar and ½ T sugar and let sit. Combine cream, vanilla and ½ T sugar and beat at high speed until soft peaks form. Top each slice of cake with cream and strawberries.
These are sooooo easy to put together. Serve warm from the oven and you’ll have the family waiting in line for the sweet goodness of these perfect sweet rolls.
160 calories per serving
1 can low fat refrigerated dinner rolls or biscuits
1/3 c apricot – pineapple preserves (or any flavor preserves that you like)
2 t sugar
¼ t cinnamon
¼ c sliced almonds
Preheat oven to 375 degrees. Spray a 9 inch round cake pan or a deep dish pie plate with Pam. Separate dough into individual rolls and place in pan – I do a circle around the edge with 8 rolls and 2 in the center. Starting ¼ inch in from the edges cut a deep X into the top of each roll then open slightly by pulling the dough toward the edges. Fill each with 2 t of the preserves. Sprinkle with sugar and cinnamon then sprinkle with almonds and bake ½ hour or until golden. Serve warm.
These whip up in no time and are so versatile – you can use any flavor jello and any flavor fruit – – just make sure it’s frozen fruit. The frozen fruit is what makes the jello firm up in no time flat. I did this with raspberries and the dessert was just amazing tasting !
85 calories per serving
3/4 c boiling water
1 c Cool Whip, thawed
.3 oz. package flavored sugar free jello, raspberry or strawberry flavor
2 c frozen raspberries or strawberries
Add water to jello and stir 2 minutes to dissolve then stir in 2 c frozen fruit until jello starts to thicken. Add ½ c of the mix to the Cool Whip and whisk to blend then spoon into dessert cups and cover with the rest of the jello mix. Refrigerate 15 minutes.

I love desserts that are quick and easy – there’s nothing like opening a box, melting and drizzling, and ending up with a dessert that makes your mouth water for more ! These are a cross between a cookie and a candy and at only 87 calories per serving, I like them even better 🙂
Place cookies flat side up in a single layer. Microwave caramels to melt, stiffing frequently. Let stand 5 minutes. Melt chocolate. Spoon 1/2 t caramel on to each cookie then top with a nut and drizzle with chocolate.
Moist and flavorful ! This is like eating a super moist cupcake with a piece of cheesecake thrown in for good measure.

1 c canned pumpkin (not pumpkin pie mix – just regular pumpkin)

Try serving this with Cinnamon Tortilla Crisps. This has such a flavor explosion already then you add the kick from the jalapeno and this is a dessert or snack that is near perfection ! Be sure to chop everything very small and very uniform – that is part of what makes this as special as it is.

Delightful !! It’s basically a homemade Mound’s Bar but even more delicious ! Add a few nuts if you prefer Almond Joys 🙂 You don’t even miss the chocolate on the bottom – there is more than enough here ! Each bar is a GOOD size.
