Pumpkin Oatmeal

A nice change to the regular boring old oatmeal. This one adds lotsa flavor without adding too much sugar. And the serving size is sure to fill you up !

1 c water
Pinch salt
1/3 c quick oats
1/4 c canned pumpkin
2 T almonds, toasted and chopped
1/4 t cinnamon
2 t brown sugar
Pinch nutmeg

Toast almonds by placed in a hot skillet for 5 minutes. Bring water to boil and add salt and oats. Cook, stirring, for 90 seconds. Combine the rest in a small bowl. Reduce heat to low and stir in the pumpkin mix. Sprinkle with nuts. Serve immediately.

Spicy Jamaica Tilapia

Quite sweet and definitely tastes of the islands ! This sweet/spicy sauce would do well on any white fish, but I love tilapia !

¼ c brown sugar
1 t ground cumin
1 t red pepper flakes
6 tilapia fillets, 4 oz. each
¼ c lite zesty Italian dressing
¼ c lime juice
½ c orange juice
¼ c chopped cilantro
2 T chopped mint leaves

Heat dressing in a skillet on medium high. Combine sugar, pepper and cumin and sprinkle 2 T over one side of the fish and put in skillet sugar side down then sprinkle with the rest of the sugar mix. Cook 5 minutes each side or until done. Remove from pan. Add juices to skillet and heat through then stir in cilantro and mint and spoon over the fish.

Cheryl’s Crock Pot Sweet Potatoes

Wherever the recipe came from, this is now “Cheryl’s Sweet Potatoes” to me since my friend Cheryl gave me this recipe 🙂 These are a bit on the high side for calories, so serve them with a nice light serving of fish or chicken. They are so satisfyingly good – just sweet enough without being too sweet ! You could skinny these up using less butter, Splenda brown sugar blend – – but why mess with perfection !?!?!

2 lb sweet potatoes, peeled and cut into small cubes
1/4 c packed dark brown sugar
1 t cinnamon
1/2 t nutmeg
1/8 t salt
2 T butter, cut into pieces
1 t vanilla

Combine potatoes, sugar, cinnamon, nutmeg and salt and place in the crock pot. Cook on low for 7 hours or high for 4 hours. Add butter and vanilla at the end, stir gently to blend.

Caramelized Pork

For those that like a little sweet with their savory, this is a great quick pork dish. The meat comes out nice and tender and the caramelized glaze is quite good ! Try Serving with Mushroom and Zucchini Orzo.

1 lb. pork tenderloin cut into 1 inch slices
2 t canola oil
2 cloves garlic minced
2 T brown sugar
1 T orange juice
1 T molasses
½ t salt
¼ t pepper

Flatten the pork slices to ½ inch thick each (place between pieces of plastic wrap and pound with the bottom of a heavy skillet). Brown the pork in oil on medium high heat and then remove from the pan and keep warm. Saute the garlic in the same skillet for 30 seconds and then stir in the brown sugar, OJ, molasses, salt and pepper then return the pork to the pan and cook 4 minutes.

Caramel Apple Pudding Cake

This was sooooo easy to do and everyone just loved it ! You pour a whole lotta liquid over the top but by the end of the backing time, all the brown sugar makes its way to the bottom and drizzled over the top, it is pure heaven !

9 oz. yellow cake mix
1 t apple pie spice
1/3 c skim milk
1 medium apple peeled and coarsely chopped
¾ c brown sugar
1 ½ c water heated to 120 degrees

Preheat oven to 350 degrees. Spray a 9 inch cake pan with Pam. Combine cake mix, spice and milk then stir in apple and spread the mix in the prepared pan. Combine brown sugar and water and mix well and then pour over the batter. Bake ½ hour or until toothpick inserted in the center comes out clean. Spoon warm cake into dishes and serve immediately.

2/3 c flour
2 c Golden Grahams cereal, crushed
½ c brown sugar
½ t cinnamon
1/3 c melted margarine
2/3 c apricot preserves

Heat oven to 350 degrees. Mix flour, cereal, sugar and cinnamon then stir in butter. Reserve ¾ c of the mix and press the rest of it into the bottom of a square 8×8 baking pan. Spread preserves over and then sprinkle with the rest of the cereal mix. Bake 25 minutes or until light golden brown. Cool 15 minutes and then cut.

Sweet Potato Pie

There’s nothing quite like a good sweet potato pie – and this is definitely a good one. Not too sweet, full of flavor, and super easy to put together.

1 15 oz. cans sweet potatoes in light syrup, drained
1 1/4 c low fat evaporated milk
2 large eggs
1/4 c Splenda brown sugar
1 t pumpkin pie spice
1/4 t salt
6 oz. low fat graham cracker crust
2 T chopped pecans

Preheat oven to 350 degrees. Mash potatoes with a mixer on medium speed. Add milk, eggs, sugar, spice and salt. When blended, put into crust and top with pecans. Bake 45 minutes and cool completely on a wire rack.

Quick Baked Beans

Great to serve next to a no fat hot dog (which is only 145 calories on a bun!). This is a great side dish full of fiber and full of rich flavor.

15 oz. can of red kidney beans, drained and rinsed
¼ c ketchup
2 T brown sugar
1 T cooked bacon crumbles
Dash of Smoke Flavoring (optional)
2 t dried minced onion
2 t spicy brown mustard

Combine all and cook on low heat 15 minutes so flavors mingle.

Peach Cobbler

Definitely serve this one warm with some vanilla ice cream or some whipped cream – it’s a great dessert that bakes up quickly and tastes so homey.

5 c sliced frozen peaches
1/3 c maple syrup
1/4 c firmly packed brown sugar
2 T MINUTE Tapioca
1 T lemon juice
1/2 t cinnamon
1/4 t nutmeg
1 c Bisquick
2 T sugar
¼ – 1/2 c milk
Preheat oven to 375 degrees. Mix peaches with syrup, brown sugar, tapioca, lemon juice and cook on medium heat until it comes to a boil then pour into 9 inch square baking pan. Stir Bisquick, sugar and milk until soft dough forms then drop by heaping tablespoonfuls onto hot fruit. Optionally sprinkle with a little more cinnamon then bake 28 – 30 minutes or until biscuits are golden brown.

Homemade Flatbreads

I make these so often that I just had to repost – – this last time I used olive oil and simply sprinkled with sea salt and they were just divine !

These flatbreads are so versatile. They make a great side, or a great snack or even a great appetizer. Try different spice combinations – olive oil and parmesan cheese, or olive oil and cayenne pepper and garlic powder for a zesty taste treat. To make a sweet version, sprinkle with a mixture of Splenda brown sugar and cinnamon.

1 1/2 t kosher salt
1 t poppy seeds
1 t sesame seeds
1 1/2 t sesame oil (you can sub olive oil)
1 1/2 t water
12 wonton wrappers

Preheat oven to 400 degrees. Lay wontons flat without overlapping on a cookie tray. Mix oil and water and brush over wontons. Sprinkle with salt and seeds. Bake 5 minutes or until crisp.
