Buffalo Chicken Wraps

User Perdue Shortcuts and you can be out of the kitchen in 10 minutes making these wraps. They make a great lunch and even a great lite dinner.

4 boneless skinless chicken breast halves cut into strips (Perdue Shortcuts work great here !)
¼ t salt
1 T hot pepper sauce
½ c finely chopped celery
½ c crumbled blue cheese
½ c fat free blue cheese or ranch dressing
4 10 inch fat free tortillas
1 1/3 c shredded lettuce
¼ c shredded carrot
Pam

Mix chicken salt and pepper sauce. Spray a skillet with Pam and cook chicken 4-5 minutes or until done (or just a minute or 2 to warm up if using pre cooked chicken). Combine celery, cheese and dressing. Spoon celery mix into wraps then chicken and top with lettuce and carrot. Fold up and serve.

Herbed Chicken

Crispy on the outside, juicy on the inside – this chicken dish is superb. Try serving with Mexican Mac and Cheese and a nice green salad. The leftovers are great for use in salads, for wraps and sandwiches, and for quick soups.

4 boneless skinless chicken breasts (Perdue Perfect Portions work great here !)
1 clove garlic, minced
1 t basil flakes
1 t rosemary flakes
1 t parsley flakes
¼ t kosher salt
2 T oil
Pam

Preheat oven to 475 degrees. Make some deep slit sin the chicken tops. Combine garlic and other herbs and 2 T of oil and brush onto chicken. Heat an oven safe skillet and spray with Pam and cook chicken slit side down with the pan covered for 5 minutes to get a nice sear on it. Turn and then place skillet into oven and cook 12-15 minutes.

Alternately grill chicken on a hot grill if you prefer 🙂

Honey Mustard Chicken Sandwich

Using the mustard mix as a basting sauce while cooking makes this so much better than just putting the mustard on the bread. The flavor gets really intensified and this ends up being a really great lunch sandwich.

¼ c Dijon mustard
2 T honey
1 t oregano flakes
¼ t salt
¼ t cayenne pepper
4 5 oz. boneless skinless chicken breasts
4 whole grain sandwich buns (100 calories each)
4 slices tomato
4 lettuce leaves

Mix mustard, honey, oregano, salt and cayenne and brush on chicken. Grill 15-20 minutes or pan fry in a skillet sprayed with Pam for 6-8 minutes or until done. Brush with extra sauce throughout the cooking. Serve on buns with lettuce and tomato.
