Broccoli and Rice

This turns out a creamy, delicious side dish that goes great with beef, chicken, pork or fish. The ranch dressing gives it a nice tang and an unexpected flavor.

Spinach Pie

This is basically a crustless quiche. It is great served for brunch, lunch, as an appetizer, or even as a dinner side dish. So good !

Spinach Pie
Spinach Pie

8 servings
150 calories per serving

16 oz. low fat cottage cheese
10 oz. frozen chopped spinach, thawed, and drained well (press in a sieve to get rid of all the water)
1 c shredded low fat mozzarella cheese
4 eggs, lightly beaten
6 oz. roasted red peppers, well drained, and chopped
1/3 c grated parmesan
1 t oregano flakes
½ t garlic powder
½ t onion powder
Salt and pepper to taste
Pam

Preheat oven to 350 degrees. Mix spinach and cheeses. Add eggs, peppers and spices. Pour into a 9 inch pie plate or cake pan sprayed with Pam. Bake 40 minutes or until the center is set. I like to use a glass pie plate for this, that way if the center does not set before the top is getting brown (which sometimes happens), you can slip it into the microwave for a few quick minutes to finish it up. This reheats great !

Vegetarian Stuffed Peppers

So different from your typical stuffed pepper – this is a great vegetarian recipe. These make a great dinner with a side salad. Or serve half a portion (1/2 a pepper) as a side.

4 servings
324 calories per serving

4 yellow bell peppers
1/2 c orzo
15 oz. can chickpeas, rinsed and drained
Pam
1 large shallot, chopped
6 oz. baby spinach, chopped coarsely
1 t oregano flakes
1 t garlic powder
1/2 c crumbled feta cheese
½ c shredded low fat mozzarella cheese
1/4 c sun dried tomatoes, (dehydrated, not the ones in oil), chopped
1 T sherry vinegar
Salt and pepper to taste

Preheat oven to 350 degrees. Take the peppers and cut them in half lengthwise. Leave the stems on. Clean out the insides (seeds and membranes) and set aside. Cook orzo according to package instructions. Heat a skillet and spray with Pam. Saute shallot for 3 minutes adding a tablespoon or 2 of water if they start to dry out. Take ¾’s of the chickpeas and roughly mash them. Add spinach to shallots and cook another minute. Add orzo, chickpeas, oregano, garlic, tomatoes, salt and pepper and heat through. Add cheese and vinegar and stir well. Spoon mix into the pepper shells. Spray a baking dish with Pam and place peppers in pan. Sprinkle with mozzarella, cover and bake 30 minutes.

Skinny Eggplant Lasagna

This dish is a cross between lasagna and eggplant rollatini (which is a dish often served as an appetizer and is eggplant rolled up around ricotta cheese and topped with pasta sauce – yum!). In this recipe, instead of rolling it up, I have layered it in a baking dish much like a lasagna would be made. The results – a skinny lasagna full of yummy cheese.

Skinny Eggplant Lasagna
Skinny Eggplant Lasagna

9 servings
142 calories per serving

2 medium eggplants, peeled and sliced lengthwise into thin slices (1/4 inch thick)
1 jar (26.5 oz.) pasta sauce (I used Hunts Pasta Sauce for this dish)
1 ½ c fat free ricotta cheese
2 c fat free cottage cheese
Salt and pepper to taste
1 t garlic powder
1 T chopped basil
2 t chopped parsley
4 T parmesan cheese
½ c fat free shredded mozzarella cheese

Preheat oven to 350 degrees. Spread ½ c or so of sauce in the bottom of a 9×13 baking dish. Mix cottage cheese, ricotta cheese, 2 T parmesan cheese, salt, pepper, garlic powder, basil and parsley. Layer 1/3 of the eggplant slices to fully cover the bottom of the dish. Sprinkle with salt and pepper and then spread half of the cheese mix on top of the eggplant slices. Cover with ¾ c of sauce then layer the next third of eggplant slices to cover the whole dish. Add the rest of the cheese mix and then another ¾ c of sauce. Finally add the last third of the eggplant slices to make the top. Spread the rest of the sauce over the top and then sprinkle with 2 T parmesan cheese. Cover with foil and bake for 45 minutes. Remove cover and spread the mozzarella cheese over the top. Bake another 10 minutes. Remove and cool for 10 minutes before slicing.

Place veggies on a platter and brush with the rest of the dressing and sprinkle with salt and pepper. Add the rest of the items to the platter and serve immediately.

Baked Ravioli

This is a rich, delicious dish. The whole ‘ravioli splitting in the boiling water’ hazard is gone and this is something you can put together ahead of time and then bake just before serving. Very easy, very convenient and very good !

Empanapita from the Keep the Beat ™ cookbook from the National Institutes for Health We Can! (Ways to Enhance Children’s Activity & Nutrition) Campaign

Check out the online cookbook, Keep the Beat ™ (available in pdf format) for some great ideas for healthful food that kids will eat and they will enjoy preparing with you. Kids learn by example – show them how good healthy food can be !!!

This is a great combination of an empanada and a pita – the recipe is fun to make and is a great healthy alternative to traditionally fried empanadas. You can easily change this up and use leftover pork or turkey instead. And you can even make it a bit more authentic by adding some sofrito to the mix. This was a great meal !

Empanapita
Empanapita

4 servings
373 calories per serving

2 6½-inch whole wheat pitas
1 c Tangy Salsa (see recipe below – or you can sub a store bought salsa)

For filling:
2 c canned low-sodium black beans, rinsed
2 c frozen broccoli, corn, and pepper vegetable mix, thawed
2 c grilled boneless, skinless chicken breast, diced (Perdue Shortcuts work great here !)
½ c shredded low-moisture part-skim mozzarella cheese
¼ c sofrito tomato cooking base (in the Goya section of your market) – optional
1 T fresh cilantro, chopped
2 T scallions, sliced
Salt and pepper to taste

For Tangy Salsa (22 calories per serving):
½ c jarred roasted red peppers, drained and patted dry
½ c no-salt-added diced tomatoes (or substitute 1 medium tomato, chopped)
1 small lime, peeled and cut into small chunks
¼ t ground black pepper
¼ t ground cumin
1 T fresh cilantro, rinsed and chopped

Tangy Salsa
Tangy Salsa

Preheat oven to 400 ºF. Combine beans, vegetables, chicken, cheese, sofrito and seasonings. Mix well.
Cut pitas in half, and open the pockets. Divide filling evenly between the four and place on a nonstick baking sheet, and bake for about 10 minutes until the filling is hot, cheese melts, and chicken is reheated. You can make these a bit ahead of time and heat when ready – this makes it a great recipe for when you are having guests.

For salsa, combine all ingredients and toss well (it is best if you make this ahead and let sit an hour or 20 so let the flavors mingle). Serve each empanapita with ¼ cup of Tangy Salsa.

Don’t skimp on the salsa – it really makes the meal ! I added ¼ c lime juice, 1 T sliced scallions, salt and pepper and omitted the roasted red peppers. The lime pieces add such a nice fresh flavor !!

Tomato and Mozz Panini

Another from the stable of easy grilled cheese sandwiches – I do so many in the very similar way of cooking – but each is stuffed with different types of ingredients and gives you a whole different taste treat. This one is like easting a Caprese Salad.
