Breakfast Pizza

This breakfast pizza also makes a great appetizer or lunch. You can easily change it up a little by adding different veggies – mushrooms, tri color peppers, even some spinach leaves !

1 can refrigerated biscuit dough
½ lb. turkey bacon slices
2 T butter
2 T flour
¼ t salt
1/8 t pepper
1 ½ c skim milk
½ c low fat shredded cheddar cheese
¼ c sliced bell peppers

Preheat oven to 350 degrees. Spray a 13×9 baking dish with Pam. Separate biscuits and place on a floured surface side by side. Roll into a 14×10 rectangle and place in sprayed pan patting the edges up side of the dish. Bake 15 minutes. Remove from oven and set aside. Cook bacon until crisp – cool it – and then crumble and set aside. Melt butter in a pan and stir in flour, salt and pepper. Gradually stir in milk and cook on medium heat until thickened, about 5 minutes. Remove from heat and stir in cheese until it is melted. Spread sauce over crust and sprinkle with bacon and peppers. Bake 20 minutes or until crust is golden brown.

Mushroom and Pepper Pizza

Lotsa different toppings can go on here to change it up. Anything that goes on a real pizza tastes good here. Extra veggies really don’t push up the calorie count much…mushrooms, peppers, onions, broccoli, etc.

4 6-inch whole wheat pitas (Arnold’s Sahara are a good low cal choice)
3/4 cup marinara sauce
1/4 t crushed red pepper
1/4 t garlic powder
1/2 t oregano flakes
1 c shredded low fat mozzarella cheese
½ green bell pepper in thin slices
½ c mushroom slices
1/2 T olive oil mixed with 1 t water

Preheat oven to 350 degrees. Brush oil on the pitas. Spread with sauce and sprinkle with oregano, pepper and garlic powder. Sprinkle cheese over the tops. Add mushrooms and peppers. Cook for 15 minutes or until cheese is bubbly and starting to brown.

I like it extra spicy, so I also add some red pepper flakes right on top of the sauce.

Eggplant Pizza

This one really hits the spot ! I spice it up a little by adding crushed red pepper flakes 🙂 Don’t like eggplant, then substitute tomato slices. But be sure to give this one a try.

1/2 c marinara sauce
1 10 oz. Boboli (precooked pizza shell available at all food markets)
1 small eggplant, peeled and cut into thin slices
1/2 c part skim ricotta
2 T parmesan cheese
2 T thinly sliced basil
Dried oregano flakes
Onion powder
Garlic powder

Preheat oven to 450 degrees. Spread sauce on Boboli. Sprinkle with a little dried oregano flakes, onion powder and garlic powder. Top with eggplant slices and drop ricotta by tablespoonfuls evenly over the eggplant. Bake directly on oven rack 12-15 minutes. Sprinkle with basil and parmesan right when it comes out of the oven.
