Taylor Ham and Cheese

If you’re from the NY Metro area, then right away you know what I’m talking about 😉 But if you’re not, you’re probably scratching your head. Taylor ham is a very regional item – I have never found it anywhere other than the Northeast and only part of the NE ! It is a compressed product of pork and spices / flavorings. It comes presliced or in a roll like a big roll of bologna. It has a flavor like NOTHING ELSE. It is served as a side to eggs (like bacon or sausage) or on a roll. A BIG breakfast sandwich here is Taylor Ham, Egg and Cheese on a hard roll. (Don’t even get me started about a HARD roll – in the NE it is a type of roll, it does NOT mean a stale roll – hehehehe).

I’ve skinnied up the extras so that this sandwich comes in at only 265 calories per serving. To my fellow NJ and NY peoples, enjoy 🙂 (those of you out of state will have to wait to you visit the area – when you do, be sure to try this incredible product).

2 slices light wheat bread (Stop and Shop has a great one that is only 35 calories per slice)
1 slice Kraft fat free singles cheese
2 thin slices Taylor Ham (pork roll)

Brown the pork roll in a hot skillet. Make a sandwich. Enjoy 🙂

(I cut into the pork roll a couple of times before frying – this helps it to not curl up during the cooking process).

Ham and Bean Sandwich

Heavy, filling and a great sandwich for a cold and blustery day. I think it works just as well as a breakfast sandwich as it does a lunch sandwich !

¼ c Egg Beaters
2 slices whole wheat toast
4 T white beans, mashed with salt and pepper and 1 t water and heated in the microwave one minute
4 slices very thin, lean baked deli ham
1 slice Kraft Singles cheese (American or cheddar)
Salt and pepper to taste
Pam

Heat skillet and spray with Pam. Scramble egg beaters or make a little circle out of them so they stay on the bread nicely.

When toast is done, spread one piece with beans. Then add ham, cheese, warm eggs and sprinkle with salt and pepper, and top with the final piece of bread.

Open Faced Ham and Brie

I was tempted to leave off the spinach on this one so I could get more brie flavor – I LOVE cheese 😉 But I didn’t and I’m glad I kept it on – it was a nice contrast to the cheesy goodness and embellished it rather than taking away from it. This goes together in 5 minutes and is a nice change from a boring old ham and cheese sandwich.

I Can’t Believe It’s Not Butter spray
¼ t garlic powder
Pam
2 oz. brie
4 thin slices deli ham (Oscar Mayer makes a great pre-packaged deli ham)
½ c spinach leaves
1 T fat free balsamic vinaigrette dressing

Spray outside of each slices of bread with butter spray and sprinkle with garlic powder. Place buttered side down in a hot skillet sprayed with Pam. Top with cheese and cook a few moments to get the cheese all melty. Top with ham. Remove from heat and layer on the spinach leaves and sprinkle with dressing. Serve open faced.

Turkey Sandwich with Guac

Guacamole is the perfect sandwich spread – anywhere you would add some avocado slices, think about using some guac instead. There is a prepared one that is just fantastic – Wholly Guacamole. It is super fresh tasting and available in the refrigerated section of your grocery store. The guac adds great flavor, moistness, and a healthful amount of MUFAs for your diet 🙂

6 slices thin deli sliced turkey breast (Hillshire Farms thin sliced is great !)
2 slices tomato
2 T Wholly Guacamole

Spread guac on bread then add turkey and tomato. Enjoy !

Turkey, Bacon and Avocado Wrap

Wraps make great lunches and you can stuff them with just about anything. This one has some of my favorite things…including BACON ! And spreading the Laughing Cow cheese on the whole wrap ensures that you get cheesy goodness in every bite !

1 Wrap (80 calorie La Tortilla Factory version)
1 wedge Laughing Cow Light Cheese (original Swiss flavor)
2 slices turkey bacon
3 slices deli turkey
Alfalfa sprouts or some shredded lettuce
1/2 c chopped or sliced tomatoes
3 slices avocado

Cook the bacon according to package instructions. Lay wrap on flat surface. Spread the cheese wedge on it. When placing ingredients down the center of the wrap, do not go quite to the bottom – leave a little room (1 inch) so you will be able to wrap is securely. Place the turkey slices down the center. Lay the bacon slices down the center. Spread sprouts and tomato down the center. And finally lay the 3 avocado slices down the center. Wrap securely.

Some people shy away from them for the simple reason that they do not know how to wrap them so that the stuff stays in place. Take a quick look at my video showing you how to get a nice tight wrap that will not leak.

Veggie Pitas

It’s a salad in a pita ! And a mighty good one at that !

2 T oil
1 T vinegar
1 t grated lemon zest
1 t oregano flakes
¼ t garlic powder
¼ t onion powder
Salt to taste
1/8 t cayenne pepper
¾ c chopped romaine lettuce
½ c finely chopped tomato
½ c finely chopped English cucumber
¼ c chopped black olives
¼ c crumbled low fat feta cheese
4 6 inch pita pockets, sliced

Mix oil, vinegar, zest, oregano, garlic and cayenne. Add in all the rest of the ingredients and mix well then spoon mix into pita breads.

Roast Beef Ranch Sandwich

Tangy ranch dressing, spicy horseradish, and lotsa meat and veggies – my kind of sandwich 🙂

4 small Club Rolls
32 slices thin sliced deli roast beef (Oscar Mayer pre-packaged meats are great)
1 small red onion, sliced
1 small tomato, sliced
2 c shredded lettuce
8 T non fat ranch dressing
3 T horseradish
4 T shopped parsley

Mix ranch, horseradish and parsley and refrigerate at least ½ hour. Place meet on rolls and spoon on the prepared dressing. Top with onion, tomato and lettuce.

Sub Sandwich

A little of this, a little of that – all on a roll … and you get a sub sandwich. This is a great mixed meat sub that is filling and a great take a long lunch.

1 T low fat mayonnaise
1 T mustard
½ c chopped lettuce
2 slices tomato
4 slices thin deli roast turkey (Oscar Mayer pre-packaged meats are great)
4 thin slices deli ham (Oscar Mayer pre-packaged meats are great)
1 slices low fat swiss cheese

Mix mustard and mayo and spread on the inside of both sides of the roll. Place all meats and cheese on roll and top with lettuce and tomato.

Sesame Beef Wrap

Part sandwich wrap, part egg roll – this is a great lunch or dinner wrap packed with flavor and crunch.

1 large size 100 calorie wrap
3 oz. leftover lean beef (such as filet mignon or sirloin) sliced very thin
1 c shredded cabbage
½ t minced garlic
¼ c green bell pepper, sliced very thin
½ of a large rib of celery, sliced thin
2 T light Asian Toasted Sesame Dressing (by Kraft)
Salt and pepper to taste

Heat a skillet and spray with Pam. Add peppers and celery and sauté for 5 minutes. Add a tablespoon or so of water along the way to keep the veggies moist. Add garlic and sauté another 30 seconds. Add beef and cabbage and continue cooking 1-2 minutes. Add salt and pepper and then place it all in your wrap and roll it up. Here’s a link to a video that shows you how to wrap them up securely

Turkey Melt

Hot turkey and gravy out of the oven are good enough along – but add in bacon and cheese and you definitely have a winner ! I can’t believe this is only 293 calories – it tastes so decadent.

8 slices wheat bread (45 calories per slice or less) toasted
1 lb. sliced cooked turkey
1/2 c water
1 c condensed low fat Cream of Mushroom soup
1 c shredded low fat sharp cheddar cheese
8 slices lightly cooked turkey bacon

Preheat broiler. Lay toast on a baking sheet and distribute turkey slices among bread. Mix water and soup and heat thoroughly. Spoon heated soup over turkey and sprinkle with the cheese and then top with bacon. Broil 3-4 minutes or until cheese is melted.
