Tex Mex Cobb

Chop up all your veggies and fixings and lay them out on a platter in rows. It’s a beautiful presentation and everyone can grab exactly what they want for their salad. The dressing for this one is so simple and so low cal, but it tastes divine !

20 oz. mixed greens (Spring mix, baby greens, etc.)
12 oz. seasoned chicken breast strips (Perdue Shortcuts work great here)
4 hard boiled eggs, chopped
15 oz. can black beans, drained and rinsed
1 c low fat shredded cheese
12 slices turkey bacon, cooked and crumbled
2 small avocados, sliced
2 c grape tomatoes, halved
2 ribs of celery, sliced
2/3 c fat free ranch dressing
1/3 cup chunky salsa
Salt and pepper to taste

Over a large platter with the greens then arrange chicken, eggs, beans, cheese, bacon, avocados and tomatoes in rows and sprinkle with salt and pepper. Mix the salsa and dressing and pour over platter.

Chicken Jambalaya (Crock Pot)

A taste of Louisiana without all the work of a typical jambalaya. This is a really good version that is so easy to make ! It is homey and filling and flavorful and all the things a good jambalaya should be (even MUSHY is a good characteristic in a jambalaya and my daughter days this one is mushy). Serve with some extra tabasco on the side for people like me 🙂

1 lb. boneless skinless chicken breasts cut into bite sized pieces
1 c chicken broth
2 c vegetable broth
¾ c water
1 ½ c raw brown rice
4 oz. low fat turkey sausage cut into slices
½ c celery, thinly sliced
Leaves from the top of the celery ribs
½ c onion, chopped
½ c green bell pepper, chopped
2 t Cajun seasoning
2 garlic cloves, minced
¼ t hot pepper sauce
1 bay leaf
Salt to taste
14.5 oz. can of diced tomatoes

Spray a skillet with Pam and on medium high heat, cook chicken and sausage until browned, about 2-3 minutes per side. Place in crock along with all the other ingredients. Cover and cook on high 5 hours. Remove bay leaf before serving.

Asian Grilled Chicken

This sweet and tangy Asian sauce is the perfect summer BBQ meal. The sweet honey chars just a bit and makes these legs super flavorful. Try serving with Asian Sesame Slaw for a perfect meal.

8 chicken drumsticks (about 2 pounds), skinned
High Heat Pam
3 T apple cider vinegar
3 T soy sauce
4 T honey
2 T chopped parsley
2 t minced ginger
Pepper to taste

Par boil the chicken legs for 15 minutes so you don’t have to keep them on the grill too long and they don’t dry out. Preheat grill and spray with high heat Pam. Brush half the sauce on chicken legs and grill 15 minute or until done throughout. Put the remainder of the sauce in the microwave and cook 1 minute (make sure it comes to a boil). Mop the legs with the rest of the sauce when they come off the grill.

The Carne Asada and Basque Norte marinades are great on chicken and beef alike. The Carne Asada was perfect on a thin, thin sirloin that I grilled. When done, I sliced it up and had it inside flour tortillas with some salsa and caramelized onions – OH SO GOOD !!

Just enough spice, just enough glaze – this is a great grilled chicken.

3 T honey
3 T soy sauce
1 t grated lime zest
3 T lime juice
1 t red pepper flakes
½ t hot chili garlic sauce (available in the Asian section of your market)
4 5 oz. boneless skinless chicken breasts

Mix honey, soy, lime zest and juice, and red pepper in a zip loc bag. Add chicken, seal and refrigerate for 2-12 hours. Preheat grill and spray with high heat cooking spray and cook chicken 5 minutes each side or to desired doneness.

Buffalo Meatballs

This is a DELICIOUS meal ! Serve them up alone as an appetizer, with a small salad for lunch, or with a few sides for a great dinner. The recipes packs a punch of flavor and anyone in your family who likes buffalo wings will love this. The sauce is really what makes the dish in my mind !

1 lb ground chicken
1/4 c Egg Beaters
1/2 c minced celery
1/2 c breadcrumbs
1/3 c Frank’s Buffalo Sauce (or your favorite brand)
salt and pepper to taste
1/2 t oregano
1/2 t garlic powder
1/2 t onion powder

2 T butter
2 T flour
1 c chicken or beef stock
1/4 c Frank’s Buffalo Sauce (or your favorite brand)

Preheat oven to 450 degrees. Mix meat, egg beaters, breadcrumbs, 1/3 c sauce, salt, pepper, oregano, garlic powder and onion powder. Spray a baking sheet with Pam. Make 36 small cocktail sized meatballs and place on a baking sheet with the sides all touching (this helps retain moisture in the meatballs as they cook). Bake 15-20 minutes or until done. While they are cooking melt butter in a small saucepan and then add flour and cook for 1 minute, stirring the entire time. Add stock and simmer 3 minutes. Add 1/4 c buffalo sauce, salt and pepper and simmer 1 minute. Serve this sauce over the meatballs or on the side as a dipping sauce.

Add some celery and carrot stix and some low fat blue cheese dressing on the side. You won’t miss the mess of wings with this healthy option that is just as good !

Zesty Chicken

This dish takes crispy chicken to the next level. After you cook it up, you make a quick glaze and run the chicken through it before serving. This makes is sooooo very flavorful, very moist, and something just a little different from your regular breaded chicken.

2 5 oz. boneless skinless chicken breasts
¼ t kosher salt
1/8 t pepper
¼ c panko breadcrumbs
2 t garlic clove, minced
¼ t oregano flakes
2 T lemon juice
2 T honey
2 t Tabasco sauce
1 t grated lemon zest
2 t olive oil

Season chicken with salt and pepper. Mix breadcrumbs, garlic and oregano and dredge chicken in the breadcrumb mix. Mix lemon juice, honey, Tabasco and zest to make a glaze. Heat oil in a skillet and add chicken and brown both sides, cooking about 6 minutes per side or until done through. Remove chicken from skillet and add glaze and reduce until thickened, about 1 minute, Return chicken and flip to coat both sides with the glaze.

Chicken Tortellini Stew (Crock Pot)

This is a soupy stew or a thick soup 🙂 Whatever it is, it’s absolutely delicious. The sweet fennel adds just the little something different that makes this meal one of a kind.

2 carrots, sliced
2 cloves garlic, minced
1 lb. boneless skinless chicken breast cut into bite sized pieces
1 medium fennel bulb, chopped
19 oz. cannellini beans, drained and rinsed
Salt and pepper to taste
1/2 t garlic powder
1 3/4 c chicken broth
2 c water
9 oz. refrigerated tortellini
1 c baby spinach leaves
2 green onions, sliced
1 t basil flakes
2 T grated parmesan cheese

Spray crock pot with Pam. Layer carrots, garlic, chicken, fennel and beans then add broth, water, garlic powder, salt and pepper. Cover and cook on LOW 6-8 hours. Sit in pasta, spinach, onions and basil then cover and cook on HIGH 20 minutes. Spoon into bowls and garnish with cheese.

Chicken Tikka Masala

This is one of my daughter’s favorite dishes and she made it up for me the other night. My goodness, this has to be one of the best things I have EVER eaten. You can taste each individual spice and it’s like heaven on earth.

Marinade:
1 c plain non fat yogurt
1 T lemon juice
2 t ground cumin
1 t cinnamon
2 t cayenne pepper
2 t black pepper
1 T ginger, minced
2 t salt
1 lb. boneless skinless chicken cut into bite size pieces

Sauce:
1 T butter
1 clove garlic, minced
1 jalapeno pepper, sliced and then cut the rounds in half
2 t ground cumin
1 ½ t coriander
¼ t cardamom
¼ t turmeric
2 t paprika
¼ t cayenne
2 t salt
4 oz. tomato paste mixed with 4 oz. water
1 c heavy cream
¼ c cilantro, chopped

Mix all the marinade ingredients except the chicken. Place chicken in a zip loc bag and add the yogurt mix. Mush it around to coat all the chicken and then refrigerate 1 hour to overnight. Preheat grill. Grill chicken in a grill basket 5-6 minutes or until done. (You can also broil 4 minute a side)

Melt butter and sauté garlic and jalapeno 1 minute then add all the spices, tomato paste mix and cream. Simmer 15 minutes to thicken. Add chicken and simmer 5 minutes to heat through. Garnish with cilantro.

Chicken Cordon Bleu

This is a very traditional dish that has been skinnied up – but don’t think it’s short on the flavor !

4 5 oz. boneless, skinless chicken breasts
Salt and pepper to taste
1/3 c shredded Swiss cheese
2 T low fat cream cheese
1/4 c breadcrumbs
1 T chopped parsley
4 t oil, divided
1/4 c chopped ham

Preheat oven to 400 degrees. Sprinkle chicken with salt and pepper. Mix swiss and cream cheese. Mix some pepper with the breadcrumbs and parsley then add 2 t oil. Heat 2 t oil in an oven proof skillet and cook the chicken 2-3 minutes per side to brown it. Move chicken to a baking sheet sprayed with Pam and spread with cheese. Sprinkle with ham and breadcrumbs. Bake 7-8 minutes or until done.
