Pasta Salad with Buttermilk Dressing

This is a great salad served either cold or at room temperature. The arugula was a great addition to a classic salad and the buttermilk dressing was light and flavorful.

8 oz. FiberGourmet rotini pasta
1 c frozen peas
1/2 c fat free buttermilk
1 T minced chives
1 t chopped thyme
½ t salt
½ t pepper
2 garlic cloves, minced
2 c baby arugula
1 t oil
3 oz. finely chopped prosciutto or deli ham

Cook pasta according to package directions adding in the peas during the last 2 minutes of cooking then drain and rinse in cold water to stop the cooking process. Mix buttermilk, chives, thyme, salt, and pepper and add pasta and arugula and toss well. Heat oil and cook garlic 1 minute then add ham or prosciutto and cook another 2 minutes. Drain and sprinkle on salad.

Ham and Bean Soup

A simple and hearty soup that tastes delicious. It’s a very versatile recipe – add some veggies, small pasta or extra spices to easily change it up. But don’t skip the ham – that is what really give it the great flavor 🙂

15.5 oz. can navy beans, drained and rinsed
15 oz. can black beans, drained and rinsed
2 14.5 oz. cans diced tomatoes
4 c fat free chicken broth
1 1/2 c diced extra lean ham (you can also use Canadian bacon)
1 garlic clove, minced
1 t chili powder
¼ t pepper
¼ t salt
½ t onion powder

Combine all and mix well. Bring to a boil and cook 15 – 20 minutes or until soup is slightly thickened.

1 T Miracle Whip
1 slice cheese (70 calories allotted for this)
6 slices deli shaved smoked ham

Spread both slices of bread with 1 t Miracle Whip and add the ham and cheese. Spread the outside of the sandwich with the rest of the Miracle Whip and cook in a skillet 3 minutes each side or until golden brown and cheese is melted.

Fettucine with Ham

The sauce in this dish and very flavorful – almost like an alfredo without being quite as creamy. Feel free to spice it up a bit more by adding extra pepper and red pepper flakes.

12 oz FiberGourmet fettucine
¾ lb. lean ham, cooked and cooked
2 T oil
1 medium onion, chopped finely
½ lb. sliced mushrooms
1 T flour
½ t rosemary
¼ t pepper
1 ¼ c fat free evaporated milk
½ c frozen peas, thawed
2 T fat free sour cream

Cook pasta according to package instructions. Saute ham in oil to brown it a bit and then remove from pan and set aside. Cook onion 4 minutes then add mushrooms and continue cooking another 4 minutes. Mix in flour, rosemary and pepper then gradually add milk and bring to a boil and cook 2 minutes to thicken it up. Then reduce heat and add peas and sour cream and cook 2 minutes. Mix with the drained pasta and ham and heat through.

Ham and Cheddar Loaf

This is a great lunch, or when cut into smaller portions, appetizer or lunch. It is very similar to a Stromboli that you would find in most of your local pizzerias. You can easily change this up and use turkey pepperoni or smoked turkey for the meat, shredded mozzarella or some ricotta for the cheese – it’s very versatile and a definite family favorite.

1 lb. prepared pizza dough, thawed
9 oz. deli shaved smoked ham or Canadian bacon
1 c low fat shredded cheddar cheese
¼ c Miracle Whip
¼ c Egg Beaters
1 T grated parmesan cheese

Heat oven to 350 degrees. Flatten dough on a floured surface and roll out into a 12×8 rectangle then put ham on it leaving a ½ inch border then mix cheese with Miracle Whip and spread that over the ham. Fold lengthwise into thirds (fold over twice) and pinch the seams to seal it then place on a baking sheet sprayed with Pam. Cut a few slits in the top to let out steam, brush with the Egg Beaters and sprinkle with parmesan then bake 35 minutes or until golden. Let sit 10 minutes before serving.

A big meaty, juicy, tasty sandwich just doesn’t seem like it can fit into a 400 calorie per meal diet – but it does ! And this one is sooooo tasty. Bacon, avocado, mayonnaise, dill, meat, cheese – you just can’t go wrong !!

¼ t dill weed
1/2 t lemon juice
1/8 t pepper
4 slices whole wheat toast
4 slices thin deli roast beef
4 slices thin deli ham
2 slices low fat provolone or swiss cheese
2 lettuce leaves
2 tomato slices
2 bacon strips cooked and crumbled
¼ c alfalfa sprouts
¼ c avocado sliced

Combine mayo, dill, juice and pepper and spread over the toast. Add the sandwich meat, cheese, lettuce, tomato, sprouts and bacon and the top with the avocado slices.

If you don’t have a grill, just pan fry or broil the ham. But whatever you do, don’t skip the pineapple salsa – it was just marvelous !

8 oz. can crushed pineapple in juice
2 T orange marmalade
1 T chopped cilantro
2 t chopped jalapeno pepper
2 t lime juice
¼ t salt

Ham:
1 1 ½ lb. slice pre-cooked ham slice

Heat grill. Combine all salsa ingredients and set aside. Grill ham 10-15 minutes or until heated through – then top with salsa and serve immediately.

Ham Sandwich

The cucumbers really make this a juicy sandwich without having to use any mustard or mayo. But if you can’t live without them, no worries, there are plenty of calories to spare in this satisfying lunch sandwich.

Baked Ham

Lean ham is a great ‘diet’ meal – it is relatively low in calories and definitely does not feel like you are eating diet food ! And the precooked, boneless ones available at the food store are a snap to make.

Place ham in an oven safe dish with a little water. Tent with foil and place in a preheated 325 degree oven. Bake 30-45 minutes or until hot throughout. Let stand 5 minutes and then slice into thin slices. Serve with creamy horseradish sauce.
