Teriyaki Grill Basket

Throw away those kabob skewers and get a grill basket – it makes cooking small pieces of things on the grill a snap ! Just cut it up, marinate and then throw in the grill basket. It’s like stir frying on the grill and you get a great even cook on all the bits.

1/3 c soy sauce
2 T vegetable oil
1 T brown sugar
1 garlic clove, minced
1 t ground ginger
1 t seasoned salt
Pepper to taste
1 1/2 pounds boneless skinless chicken breast, cut into bite sized pieces
12 whole fresh mushrooms
1 large green bell pepper, cut into 1 1/2-inch pieces
1 large onion, cut into wedges
12 cherry tomatoes

Mix soy, oil, sugar, garlic, ginger, pepper and salt. Place chicken pieces in a Ziploc bag and pour over the marinade. Seal and refrigerate for at least 4 hours. During the last hour, add the veggies to the bag. Heat grill and spray a grill basket with high heat Pam. Cook veggies and chicken until chicken is done.

Grilled Pork Sliders

Sweet sauce, succulent pork – what a great slider this makes ! It’s easy to do the pork ahead of time and keep warm – so this is a great dish for entertaining.

1/2 c BBQ sauce (use your favorite)
2 T dark rum
2 T honey
1 lb. pork tenderloin, fat trimmed
8 slider buns

Heat grill. Mix sauce, rum and honey and bring to a boil down for a couple of minutes. Use half of the sauce to baste the pork while you grill it 20 minutes or until done. Let pork stand for 5-10 minutes and then slice thinly.

Place slices on buns and add some of the reserved sauce. Optionally add some caramelized onions for a super savory sandwich.

To caramelize onions, heat 1 T oil in a skillet and then cook onions 5 minutes on high heat. Reduce heat to medium low and continue cooking 20 minutes or until golden brown. You may need to add hot water a tablespoon at a time to keep them from drying out. When done, season with salt and pepper.

Raspberry Lemonade Pie

This tastes like a lemonade stand in a slice of pie ! It is so refreshing and delicious. Instead of the second pie, I used the extra filling to make homemade ice pops.

1 ½ c boiling water
.3 oz. package lemon Jello (sugar free)
4 oz. cream cheese, softened
6 oz. frozen lemonade concentrate, thawed
8 oz. cool whip, thawed
1 c raspberries
2 low fat graham crusts

Add boiling water to jello and stir 2 minutes to dissolve completely. Cool a bit and then add in the lemonade. Beat cream cheese until creamy and then gradually add jello mix. Stir in cool whip and berries and pour into crusts then refrigerate at least 4 hours. It will be very thin at this stage – after it is refrigerated it will thicken up a lot. You can also freeze this and simply thaw ½ hour or so before serving. Garnish with a few leftover raspberries.

Spaghetti Carbonara

This recipe makes up a wonderfully flavorful sauce – anything with bacon is good in my book !

4 ounces uncooked FiberGourmet spaghetti
1/2 cup skim milk
3 T grated Parmesan cheese
1 T chopped parsley
Salt and pepper to taste

1/3 c chopped pancetta or thick cut bacon (about 1 1/2 ounces)
1/4 c finely chopped onion
1 garlic clove, minced
1 large egg

Cook pasta according to package instructions. Drain reserving ¼ c of the cooking water. Mix milk, cheese, parsley, salt and pepper. Heat a skillet and spray with Pam then sauté pancetta 3 minutes. Add onions and garlic and continue cooking another 5 minutes until onion is browned. Reduce heat to medium low and add milk mix and spaghetti to the pan. Whisk egg in a bowl and add the reserved cooking liquid stirring constantly so egg does not start to cook. Gradually add to pan stirring constantly and cook 4 minutes on low until sauce is thick.

Winter Fruit Salad

Fruit salad with a kiss of lime and honey. This is a great fruit combination – the sweet mango, crunchy jicama, tart pomegranate and citrus are a perfect taste treat. So very healthy, make a batch and eat off it for a few days !

1/2 c pomegranate seeds (about 1 pomegranate)
1/2 c julienned jicama (if you do not have this substitute apple)
2 medium ripe mangoes, peeled and cut into thin slices
2 tangerines or clementines, peeled and sectioned
2 blood oranges, peeled and sectioned (sub red grapefruit or navel oranges if you cannot find blood oranges)
1 pear, thinly sliced
2 T fresh lime juice
2 T honey
1/4 t ground red pepper
1/8 t coarse sea salt

Mix the fruits and toss gently. Combine honey, lime, salt and pepper and pour over fruit. Serve room temperature or chilled.

Mashed Things

This one got its name because we kept asking each other to pass the mashed things. They were so good that I got my husband to eat carrots and my daughter to eat cauliflower 😉

1 red potato, peeled and cubed
1 c small cauliflower florets
1/2 c baby carrots
1 c chicken broth
1 oz. cream cheese, softened
1 t garlic powder
Salt and pepper to taste
1 slice Kraft fat free singles American cheese
2 T skim milk
5 squirts ICBINB Spray

Bring veggies to a boil in the broth. Cover and simmer 15 minutes or until veggies are soft. Drain the veggies and place them in a bowl with the cream cheese, cheese, garlic, milk, salt and pepper and beat with a mixer until creamy. If they are too dry, you can add more milk. Spray with the I Can’t Believe it’s Not Butter spray just before serving.

Easy Pork Carnitas

This is another great authentic recipe that cooks all day in the crock pot – it turns out a fantastically tender and juicy meat that is easily shredded and tastes great with a bit of lime and avocado.

1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon crumbled dried oregano
1/2 teaspoon ground coriander
1/4 teaspoon ground cinnamon
1 ½ lb. boneless pork shoulder roast
2 bay leaves
2 cups chicken broth
1 lime cut into wedges

Mix together salt, garlic powder, cumin, oregano, coriander, and cinnamon in a bowl. Rub spice mix into the pork.. Place the bay leaves in the bottom of a slow cooker and add the broth then put the pork on top. Cover and cook on low about 10 hours, turning half way through. Remove and let cool then use 2 forks to shred the meat. Use the left over liquid to moisten the meat. Plate and squirt each portion with a bit of lime just before serving. I like to serve this on a flour tortilla with some avocado slices (not included in calorie count above – add 210 calories for a flour tortilla and 2 -3 slices avocado)

Turkey Wild Rice Casserole

This is so creamy and full of nutty flavor from the wild rice. It’s a great dish and a perfect way to use up left over turkey.

4 slices bacon, cut into small pieces
1 lb. cooked turkey breast cut into bite sized pieces
1 c carrots, julienned
1/2 c onion, chopped finely
1/2 c celery, sliced
1 c raw wild rice
1 can low fat cream of chicken soup
2 1/2 c water
2 T soy sauce
1/2 t marjoram flakes
Salt and pepper to taste

Preheat oven to 350 degrees. Spray a skillet with Pam and cook bacon until almost crisp then add turkey, carrots, onion and celery and cook 3 minutes or until turkey is heated. Cook rice according to package instructions. Mix rice and turkey then add soup, water, soy and spices and place in a baking dish sprayed with Pam. Cover and bake half hour.

Turkey Noodle Soup

Another super quick soup that tastes like it’s been simmering for hours, but it’s just a ½ hour meal. Try using Perdue Shortcuts turkey strips if you don’t have any leftover turkey on hand.

¾ c cooked cubed turkey breast
1 rib celery, sliced
Leaves from top of celery
2 cloves garlic minced
Salt to taste
1/8 t marjoram flakes
1/8 t pepper
1 bay leaf
½ t onion powder
½ c canned diced potatoes
¼ c frozen peas and carrots mix
¼ c yolk free egg noodles
Dash Kitchen Bouquet

Mix water, turkey, celery, onion, garlic, salt, onion powder, marjoram, pepper and bay leaf and bring to a boil then reduce heat, cover and simmer 15 minutes. Then mix in the potatoes, peas and noodles. Cover and simmer 10 minutes or until potatoes are tender. Remove bay leaf before serving.

Turkey and Stuffing

This was sooooo good – it’s like Thanksgiving dinner without all the work. I use the scallopini cut of turkey cutlets so they are nice and thin and you can cook them up quickly so they don’t get dried out. Add a small green salad on the side and you have a great balanced meal that makes the day feel like a holiday 🙂

4 slices fresh turkey breast (3/4 lb.)
½ c chopped green pepper
2 T water
2 c fat free chicken broth
12 oz. fat free turkey gravy
3 c dry cubed seasoned stuffing
Salt and pepper to taste

Spray a skillet with Pam and on medium high heat cook turkey breasts sprinkled with salt and pepper; cook 4 minutes each side or until turkey is golden then remove from skillet and keep warm. Combine pepper and water in pan. Cover and cook 2 minutes. Add gravy, reserving ¼ cup for later use, Add broth to skillet and bring to a boil and then remove skillet from heat. Stir in stuffing and mix well then return turkey to the pan. Cover and let stand 5 minutes and then our extra gravy over the top and serve.
