Caribbean Chicken

This recipe makes a nice mellow flavored meal full of Caribbean richness and warmth. Try serving with a tossed green salad and some rice.

¼ c minced onion
1 T sugar
1 T finely chopped jalapeno pepper (seeds removed)
2 t cider vinegar
2 t soy sauce
½ t salt
½ t ground allspice (or a mix of ground cloves and ground nutmeg)
½ t thyme
½ t pepper
¼ t red pepper flakes
1 ½ lb. boneless, skinless chicken thighs
Pam

Combine all except chicken and Pam in a large bowl. Add chicken and toss well to coat. Heat a grill pan (or the BBQ grill in the backyard !) on medium high heat and spray with Pam. Cook 5 minutes per side or until done.

Rice and Sausage

What a great quick and easy meal for a weeknight ! It’s kinda like having sausage and peppers over rice – definitely a great flavor !

Pam
10 oz. low fat andouille sausage or kielbasa, cut into bite sized pieces
1 onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 celery stalk, diced
Salt and pepper to taste
1 14.5 oz. can diced tomatoes
2 c cooked brown rice

Heat skillet and spray with Pam and cook sausage until crispy, about 10 minutes. Add onion, garlic, red pepper, celery, salt and pepper and cook 8-10 minutes then add tomatoes and cook another 4 minutes. Serve with brown rice.

Roasted Vegetable Salad

Adding balsamic to grilled or broiled vegetables brings out a whole new dimension of flavor. Vinegar is often used as a flavor enhancer and boy does it do the trick here. This is a great side, lunch, appetizer – – however you slice it, you gotta make it ! 🙂

1 green pepper
1 red pepper
1 yellow pepper
8 oz. Portobello mushroom caps
6 eggplant slices
1 c low fat Balsamic Vinaigrette Dressing

Cut peppers lengthwise into quarters and place all veggies on a broiler rack or on a wire rack atop a baking sheet and brush them with 1/2 c of the dressing. Broil 6-8 minutes turning and brushing a few times with the another ¼ c of the dressing. Slice mushrooms and mix all ingredients together and dress with the last ¼ c of dressing.

Roasted Peppers and Garlic

When you roast peppers, you make them ultimately sweet and bring out tons of natural flavor. When paired up with some simple oil, garlic, and seasoning, you get quite a treat !

If you only have one color pepper, don’t let that hold you back from roasting them up. In the line up of most sweet to least sweet, you have the red, orange, yellow and green bell pepper. All have a very distinct flavor and all are delicious ! I add a bunch more garlic to these than the recipe calls for – just because 🙂

1 green bell pepper
1 red bell pepper
1 yellow bell pepper
1 orange bell pepper
2 T oil
2 garlic cloves, thinly sliced
½ t oregano flakes
Coarse salt
Ground pepper
Handful of basil leaves

Preheat oven to 450 degrees. Halve the peppers and remove the seeds. Place cut side up on a cookie sheet and drizzle with oil. Add garlic slices to pepper halves along with oregano, salt and pepper. Roast 35 minutes or so (or until skin starts to blister) and then remove from oven and sprinkle with a handful of fresh torn basil leaves.

Chicken Satay

Satay is a Thai preparation of skewered meat served with a peanut sauce – here I’ve taken away the skewers to make things a bit easier and it doesn’t change the taste of the dish one bit 😉

2 boneless, skinless chicken breasts, 8 oz. each, sliced lengthwise into 6 strips each.
1 t toasted sesame oil
1 t low sodium soy sauce
1 garlic clove, minced
1/2 t red pepper flakes
Salt and pepper to taste
1/4 c creamy peanut butter
2 T rice vinegar
2 t lime juice
1 t brown sugar
Vegetable oil

Toss chicken with sesame oil, soy, garlic and 1/4 t pepper flakes. Season with salt and pepper. Heat grill pan or skillet on high heat. Work in batches brushing pan with vegetable oil and then cooking chicken until done, 3-4 minutes per side. Serve with dipping sauce.

Create dipping sauce by mixing peanut butter, vinegar, lime juice, brown sugar, the rest of the pepper flakes and 2-3 T water.

Fish in Red Pepper Sauce

The color was so vibrant and the sauce so flavorful that this did not seem light and forgettable like many fish dishes are – – instead, this was mmm mmmm good and the red pepper sauce was just perfect.

1 lb. cod fillets
¼ c flour
¼ c low fat zesty Italian dressing
½ c onions
2 oz. low fat cream cheese
¼ c roasted red peppers
¼ c chicken broth
1 clove garlic, peeled
2 T chopped cilantro

Coat fish with flour. Heat dressing in skillet on medium high and add fish and cook 5-7 on each side or until done. Place cream cheese, onions, peppers, broth and garlic in a blender and blend until smooth then spoon into a pan and bring to a boil on medium high heat then lower and simmer 5 minutes. Place fish on platter and top with sauce and sprinkle with cilantro.

Pasta and Lentils (Crock Pot)

Once again, without FiberGourmet pasta, this meal would not have been near as substantial for the low amount of calories – I can’t live without FiberGourmet Pasta !

I was a bit heavy handed on the crushed red pepper and this came out just fantastic tasting – spicy and hot with a nice deep flavor from having simmered all day long.

½ c chopped onions
½ c chopped carrots
½ c chopped celery
2 c canned diced tomatoes, undrained
1 c tomato sauce
4 oz. dried lentils, rinsed and drained
½ t oregano flakes
½ t basil flakes
½ t garlic powder
¼ t crushed red pepper
4 c FiberGourmet pasta (cooked)
Up to a cup of hot water

Mix all except pasta in the crock and cover and cook on low 8-10 hours or high 3-5 hours. If your crock pot gets hot and this mix is drying out too much, add up to a cup of hot water. Cook pasta according to package directions. Add cooked, drained pasta to crock and serve immediately.

Roasted Broccoli

So lemony, so garlicky, so very good and so very good for you !

1 large head broccoli, cut into long florets
2 T oil
10 cloves garlic
½ t red pepper flakes
Salt and pepper to taste
Juice on one lemon

Spray a baking sheet with Pam and heat oven to 450 degrees. Place broccoli and garlic on pan. Sprinkle with red pepper, salt, and pepper and then drizzle with oil. Cook 10 minutes and then stir. Cook another 10-15 minutes. Sprinkle with lemon when you remove it from the oven.

A little chicken, lotsa vegetables and lotsa flavor !

2 c chopped cooked chicken breast
2/3 c thinly sliced red bell pepper
½ c thinly sliced English cucumbers
1/2 c sliced celery
1/2 c light ranch dressing
1/4 c crumbed goat cheese
4 c chopped romaine lettuce
6 8-inch fat free flour tortillas

Layer all the ingredients in tortillas, wrap and secure with a toothpick. Here’s my instructional video in how to secure a wrap so nothing leaks out the bottom.

Sauteed Escarole

This is one of my favorite dishes at Italian restaurants. It may seem like a lot of escarole to start, but it cooks down a TON. My version is the super garlic version – feel free to tone it down by using half the recommended garlic !

2 T olive oil
4 garlic cloves, minced
8 c cleaned and chopped escarole
Salt and pepper to taste
1/2 t garlic powder
OPTIONAL – 1/2 t crushed red pepper flakes

Heat the oil in a large skillet on medium high. Add minced garlic and saute for 1 minute, stirring constantly so that the garlic does not burn and get bitter. Add escarole a few handfuls at a time and mix every 30 seconds or so making sure all escarole comes in contact with the bottom of the pan so it heats and wilts. Once wilted a bit, add salt, pepper, garlic powder and red pepper flakes. Continue cooking 5 minutes or until to desired doneness. You can take it off while there is still some crunch to the larger pieces, or I like to cook it all down quite a bit and serve it very wilted and cooked.
