Turkey Melt

Hot turkey and gravy out of the oven are good enough along – but add in bacon and cheese and you definitely have a winner ! I can’t believe this is only 293 calories – it tastes so decadent.

8 slices wheat bread (45 calories per slice or less) toasted
1 lb. sliced cooked turkey
1/2 c water
1 c condensed low fat Cream of Mushroom soup
1 c shredded low fat sharp cheddar cheese
8 slices lightly cooked turkey bacon

Preheat broiler. Lay toast on a baking sheet and distribute turkey slices among bread. Mix water and soup and heat thoroughly. Spoon heated soup over turkey and sprinkle with the cheese and then top with bacon. Broil 3-4 minutes or until cheese is melted.

1 Arnold Select Thin rolls (100 calories)
4 thin slices deli ham (Oscar Mayer pre-packaged meats are great)
4 thin slices deli turkey (Oscar Mayer pre-packaged meats are great)
1 slice Kraft fat free cheese
2 T chopped marinated artichokes
2 T chopped marinated Italian peppers
¼ c baby arugula leaves
1 T low fat mayo

Toast bread (if desired) then spread on the mayo. Top with meats and cheese, then the artichokes, peppers and arugula.

Turkey, Black Bean and Edamame Salad

Edamame are just baby soybeans – they are tender, sweet, and you often see them served at Japanese restaurants. I like to buy frozen ones and keep them on hand for different recipes. Salads are a great way to serve them 🙂

2 c cubed smoked turkey
15.5 oz. can black beans, rinsed and drained
14 oz. can corn
1 c shelled edamame cooked according to package instructions
1 red bell pepper, chopped
¼ c chopped cilantro
1 T minced garlic clove
Salt and pepper to taste
2 T oil
2 T cider vinegar
1 t Dijon mustard
4 c field greens

Mix the turkey, beans, corn, edamame, bell pepper, cilantro, garlic, salt and pepper. Whisk oil, vinegar and mustard and pour over the turkey mix and season with salt and pepper. Place mixture over the lettuce and serve immediately.

1 Arnold Sandwich Thins roll (only 100 calories each !)
1 T low fat thousand island dressing
1 slice low fat swiss cheese
3 oz. smoked turkey deli meat
2 T sauerkraut, rinsed and drained
Salt and pepper to taste

Preheat oven to 350 degrees. Spread half the dressing on both buns. Add cheese, turkey and kraut to the roll and sprinkle with salt and pepper. Top with the remaining piece of roll, wrap in foil and bake 5-7 minutes.

Warm Turkey Sandwich with Caramelized Onions

The caramelized onions make this taste totally different than just a regular turkey sandwich – it’s such a filling and satisfying sandwich that it makes just as good a dinner meal as it does lunch. You might even want to serve it open faced and add a tablespoon or so of turkey gravy. This has enormous flavor.

1 T oil
2 medium sized onions, sliced thinly
Salt and pepper to taste
24 slices thin deli turkey (Oscar Mayer makes a great pre-packaged deli turkey)
4 Arnold Select Thins (thin rolls)
4 T low fat mayo
4 butter or green leaf lettuce leaves

Heat oil in a skillet and then cook onions 5 minutes on high heat. Reduce heat to medium low and continue cooking 20 minutes or until golden brown. You may need to add hot water a tablespoon at a time to keep them from drying out. When done, season with salt and pepper. Remove from pan and keep warm.

Place turkey in pan to briefly heat it. Then place it onto rolls that have been spread with mayo. Top with onions and add lettuce leaves.

Asian Turkey Soup (Crock Pot)

Meals that you start in the morning and then come home to much later are so convenient ! This soup has that great all day simmer flavor. And like many soups, it is so versatile – – have some extra peas this week, throw them in. Have vegetable broth, but not chicken broth, switch it out. Have chicken instead of turkey…no problem ! Make this one your own !

28 oz. chicken broth
1 ½ c water
1 lb. turkey breast or boneless skinless chicken breasts, cut into bite sized pieces
2 c sliced mushrooms
2 medium carrots cut into short thin strips
½ c chopped onion
2 T soy sauce
2 T grated fresh ginger
4 cloves garlic, minced
1 ½ c sliced bok choy
1 c instant brown rice
Salt and pepper to taste
2 T Asian hot garlic chili sauce (optional – stir it in at the beginning stages if you like a spicy soup)

In a 4 qt. crock pot mix turkey, broth, mushrooms, water, carrots, onions, soy, ginger and garlic (and optional chili sauce). Cover and cook on low 7-8 hours or high 4 hours. If cooking on low, turn to high heat after 7-8 hours and stir in bok choy and raw rice. Cover and cook 15 minutes more.

So much flavor !!! And I just love using cucumber instead of lettuce on a sandwich. This is a great lunch.

2 T low fat crumbled feta cheese
4 thin slices cucumber
3 kalamata olives, slices (or black olives)
1 T low fat balsamic vinaigrette
¼ t oregano flakes

Place meats on roll. Top with cucumbers. Combine cheese, olives and dressing and pour over sandwich. Sprinkle with oregano.

Meatball and Mushroom Soup (Crock Pot)

This did not photograph particularly well – but let me tell you, the meal was DELICIOUS ! You can’t eat this fast enough – you just want more of that awesome broth and the meatballs in your mouth ! You can also use predone turkey meatballs and take a whole lot of the work out of this recipe. Just make sure to do the broth like it says – you won’t be disappointed !

½ lb. ground turkey
½ t garlic powder
½ t onion powder
¼ t pepper
¼ c Egg Beaters
1 T oil
1 c carrots, sliced
2 cloves garlic, minced
2 c sliced mushrooms
1 can fat free beef broth
1 can fat free cream of mushroom soup
2 T tomato paste
Parmesan cheese for garnish

Mix together turkey and seasonings and then add egg and still until well mixed. Make small meatballs and heat in a skillet coated with the oil. Put meatballs in crock and all the rest except the cheese. Cover and cook on low 6-8 hours or on high 3-4 hours. Garnish with Parmesan cheese once in individual bowls.

Turkey Burger with Avocado

The avocado topping brings back much needed moisture to an often dry turkey burger. Feel free to add tomato and onion slices – they carry a minimum of calories. If you can’t get your hands on a nice ripe avocado, substitute Wholly Guacamole (a super fresh guac available in the refrigerator section of your market).

2 100 calorie buns (Arnold Select Sandwich Thins – multi grain)
Pam
1/2 c worth of avocado slices (about 6 slices) – or use some Wholly Guacamole (available at most markets)
garlic powder
salt and pepper

Heat a pan on medium high. Remove from heat to spray with Pam. Heat frozen burgers according to package instructions (you can alternately grill or broil the burgers, but cook them slow so they do not dry out). When done, place on a bun and add 3 slices of avocado on the top.

This makes the job of making avocado slices a breeze – tools such as these make perfect slices all the time !
