Turkey and Brie Sandwich

The arugula on this sandwich is the perfect pairing to the creamy brie and the sweet apples – it gives it just the right amount of contrast. This is one of my top 10 sandwiches of all times ! Brie+ turkey+apple+arugula=YUMMY !

4 slices 45 calorie whole wheat bread

6 oz. thinly sliced turkey breast (deli meat)
3 oz. brie
¾ c baby arugula
1 apple, sliced
Heat brie in microwave 15 seconds or so to soften it and then spread on 2 pieces of bread. Top with turkey, apples and arugula and finish making the sandwich. Spray a heated pan with Pam. Spray outsides of sandwich with a couple spritzes of butter spray and cook 2-3 minutes per side in a hot skillet or a total of 3-4 minutes in a Panini press.

Turkey and Feta Wrap

Wraps are a nice change from a sandwich – and they hold in the contents so much better than 2 slices of bread. Here is a standard turkey, bacon and tomato sandwich and because it is on a wrap you can add in some crumbled feta and avocado slices without worrying about them flying out the sandwich. And the avocado adds your MUFA for the meal 🙂 Enjoy !

1 Whole wheat wrap (80 calorie version by Smart and Delicious)
¼ c shredded lettuce
4 slices deli turkey breast
1 slice tomato, cut into strips
2 slices turkey bacon, cooked
¼ c avocado slices
Pepper

Sprinkle turkey with pepper. Place it all in the wrap and roll it up ! Here is a video that will show you how to fold up a wrap securely

Sausage and Potato Breakfast Pizza

It’s all your favorite breakfast ingredients all in one convenient package – breakfast pizza is a great way to start the morning ! Leftovers reheat well in a skillet or in the toaster oven.

8 oz. can low fat crescent rolls

12 oz. turkey breakfast sausage
1 c frozen shredded hash browns, thawed
1 c shredded fat free cheddar cheese
¼ c skim milk
½ t salt
¼ t pepper
8 oz. Egg Beaters
2 T grated Parmesan cheese

Preheat oven to 375 degrees. Spray a 12 inch pizza pan with Pam. Separate dough and then press together to form a round crust. This works best if you let the dough come to room temperature. Cook sausage until browned, crumbling it as you go. Top dough with drained sausage, potatoes and cheese. Mix milk, salt, pepper and Egg Beaters and pour over sausage mix. Sprinkle with cheese and bake 25-30 minutes or until crust is browned.

Turkey and Noodle Bake

I have made other dishes like this that turn out to be a healthier Hamburger Helper (like my Turkey Stroganoff), but this one is THE one – it is a little moister than my other version, and the flavoring is just perfect. You definitely have to try this one out !!

1 ¼ lb. lean ground turkey
1 ½ c sliced mushrooms
½ c chopped onion
½ c chopped green bell pepper
21 oz. fat free brown gravy
½ t onion salt
½ t salt
½ t pepper
3 c cooked yolk free egg noodles
1 c shredded part skim mozzarella cheese

Preheat oven to 350 degrees. Cook turkey, mushrooms, onion and green pepper in a skillet until turkey is no longer pink then add onion salt, salt and pepper and mix well. Reduce heat and simmer 15 minutes then place noodles in a 3 quart dish sprayed with Pam and top with the meat mix. Pour the gravy over. Sprinkle with cheese, cover and bake 20 minutes then uncover and bake another 15 minutes.

Turkey Slaw-Wich

A quick sandwich to throw together that doesn’t taste like a boring sandwich ! The slaw gives it a nice twist.

½ c coleslaw blend (shredded cabbage and carrots)
1 T Miracle Whip
1 t Dijon mustard
2 slices whole wheat bread, toasted
3 slices deli roasted turkey breast
1 slice fat free American cheese

Mix coleslaw, Miracle Whip and Dijon then make sandwiches with all the ingredients.

Turkey Stroganoff

Think Hamburger Helper without the hamburger 🙂 For the stroganoff flavoring and the noodles, I just used a box of Hamburger Helper Beef Stroganoff. But then I substituted turkey and added a few twists. This one is really super good !

1 lb. lean ground turkey
½ t pepper
½ t salt
1 t gravy master
1 t dehydrated onion flakes
3 ½ c water
1 package beef stroganoff sauce mix
3 c uncooked medium egg noodles
½ c sour cream
½ c canned peas
Parsley for garnish

Cook turkey in a hot skillet on medium high heat until it is no longer pink. Toward the end add 1 t of Gravy Master or Kitchen Bouquet so that the meat gets browner and more resembles ground beef. Mix in salt and pepper, onion flakes, water, sauce mix and noodles and bring to a boil. Then reduce heat to medium low, cover and cook 8 minutes or until noodles are tender. Half way through, stir in the peas. Stir in sour cream and heat through on low heat. Garnish with parsley just before serving.

Sausage and Cheddar Casserole

Easy to throw together and a very satisfying ‘bready’ dish. So if you’re in the mood for carbs – this is the one ! This makes a nice big try and really could easily be split into 8 servings so it’s a great breakfast for when you have overnight guests.

12 oz. turkey breakfast sausage, crumbled
2 c 1 % low fat milk
2 C Egg Beaters
1 t dry mustard
¼ t salt
½ t pepper
¼ t cayenne pepper
3 large eggs
16 slices lite wheat bread
1 c shredded low fat sharp cheddar cheese
¼ t paprika

Preheat oven to 350 degrees. Heat a large skillet to medium high and spray the pan with Pam the add sausage and cook 5 minutes to brown it. Remove from skillet. Combine milk, egg beaters, mustard, salt, peppers and eggs and whisk until combined well. Take the crusts of the slices of bread and tear the bread into cubes and then mix with the sausage and cheese. Add to the milk mixture and then pour it all into a 9×13 baking dish sprayed with Pam. Sprinkle with paprika and bake 45 minutes or until set. Let stand 10 minutes before cutting and serving.

Meatball Soup

This is a very quick soup to make, but it tastes as good as soups that simmer for hours.

12 precooked turkey meatballs ( I use Shady Brook Farms Italian flavor ones)
4 c vegetable broth
2 c water
1/2 c ditalini or orzo (or ¾ c FiberGourmet pasta for the same calories!)
1 14.5 oz. can Italian style diced tomatoes, undrained
2 c diced zucchini
Salt and pepper to taste
½ t garlic powder
¼ t crushed red pepper
1/4 c grated Parmesan cheese
Fresh parsley, chopped

Bring broth and water to a boil. Cook pasta 4 minutes (if you are using the FiberGourmet pasta, add 2-3 more minutes here as the pasta tends to take longer to cook). Stir in tomatoes, zucchini, salt, pepper, garlic powder, crushed red pepper and meatballs. Bring back to boil, then reduce heat and keep at a low boil 7 minutes or until pasta is tender. Garnish each bowl with chopped parsley and 1 T cheese.

Turkey Paninis

Turning a regular sandwich into a Panini makes it much more special – and all you are doing is grilling it up and pressing it a bit to melt down all the contents really well. A have a Panini pan that goes right on the stovetop – I also have a George Foreman type grill, but I like doing it stovetop better.

4 t pesto (get the prepared version from the refrigerator section of your grocer)
8 1 oz. slices sourdough bread
8 oz. deli turkey (low fat Sara Lee or Hormel prepackaged works great here)
2 oz. thinly sliced provolone cheese

Combine mayo and pesto and spread 1 T on each of 4 slices of bread. Top each slice with turkey, 1.2 oz. cheese, 2 tomato slices and the rest of the bread. Preheat grill pan and spray with Pam. Spray each sandwich with a few spritzes of the ICBINB Spray and add sandwiches and cook 3 minutes per side.

Quick, easily portable and a great lunch. If you gotta have mayo instead of mustard, then use low or no fat and reduce the light ranch dressing.
