VIDEO: How to Use an Avocado Slicer

Whether you’re slicing avocados for sandwiches, salads or snacks, it’s nice to have pretty slices rather than gouged out chunks. Avocados are not the easiest things to work with – but they are well worth the work! Nothing tastes quite like an avocado. And there is now a kitchen tool out there that takes all the hard work out of it. Just slice your avocado in half, remove the pit, and then use the tool to do the rest. I made a quick video so you can see how they work.

And here is a link to buy one on Amazon !

Black Bean Burgers

These are not are not a replacement for burgers – if you think of it that way, you are going to be disappointed. Take these for what they are – an amazing savory, tasty pressed veggie patty that is only 120 calories. Topped with avocado and salsa, and placed on a bun, it makes a great meal.

4 Morningstar black bean burgers
4 Arnold Thins 100 calorie flat buns
1 avocado, sliced (or 3 T Wholly Guacamole per burger)
1 c salsa

Cook black bean burgers according to package instructions. Place on buns and top with 1/4 the sliced avocado and 1/4 c salsa. Although not shown on the package, I often heat the oven to 375 degrees and place the burgers on a baking sheet sprayed with Pam and then cook for 15 minutes – they come out perfect !

Santa Fe Bean Salad

This has a lot of flavor and is a great lunch salad. You don’t even realize you’re eating lettuce 🙂 And it even fills up my husband ! If you don’t like black beans, substitute kidney or white beans.

Breakfast Wrap DuJour

I mix and match this one all week long. Sometimes Canadian bacon slices are substituted, sometimes shredded low fat cheddar, sometimes mushrooms – pretty much anything you would throw into an omelette works well here.

1 Smart Delicious Wrap (100 calorie version)
Pam spray
½ cup Egg Beaters
3 slices lean turkey bacon
1 Light Laughing Cow cheese wedge
2 T salsa
¼ c avocado slices
Salt and pepper to taste

Heat the wrap in the microwave for 15 seconds if they have been refrigerated – this helps them to roll better. Cook turkey bacon according to package instructions and set aside. Heat a small frying pan on med high heat. Remove from heat and spray with Pam. Return to heat and add the Egg Beaters to the pan. Add salt and pepper. Reduce heat to medium. Scramble eggs until set.

Lay the wrap on a plate and spread the cheese evenly over the wrap. Lay the three slices of bacon in the center (be sure to leave a little room at the bottom for folding). Add the eggs in a strip down the center. Spoon the salsa over the eggs. Fold one side over, fold up a bit of the bottom, then fold the other side over to make a wrapped burrito. Serve avocado slices on the side.
