Chicken Posole Soup

I think this is the Mexican version of leftover soup – a bit of salsa, a bit of hominy, a bit of chicken, a bit of cilantro – – and all seasoned with cumin, that wonderful spice that makes it taste so rich.

4 c fat free chicken broth
15.5 oz. can white hominy, drained
¾ c tomatillo salsa (often called salsa verde)
2 c shredded cooked chicken breast
1 ½ t cumin
½ c chopped fresh cilantro

Mix broth, hominy and salsa and bring to a boil. Toss chicken with cumin and add to broth and simmer 10 minutes. Place in bowls and garnish with cilantro.

South of the Border Chicken

This is one of those PERFECT meals. Some meals are just spiced perfectly, cook up perfectly time and time again, and deserve a place in the Hall of Fame of recipes – this is one of those. If you love Mexican inspired dishes, you have to give this one a try !

12 oz. boneless skinless chicken breasts
¼ t pepper
¼ t salt
2 t oil
1 medium onion, chopped
2 cloves garlic, minced
1 c fat free beef broth
1 8 oz. can tomato sauce
1 15 oz. can black beans, rinsed and drained
1 4.5 oz. can chopped chilies
1 t chili powder
½ t ground cumin
3 c hot cooked rice

Sprinkle chicken with salt and pepper and place in a hot skillet sprayed with Pam. Cook 5 minutes or until they begin to brown then set aside and keep warm. Heat oil and add onion, garlic and 2 T of the broth. Cook 6 minutes or until tender then add tomato sauce, beans and the rest of the broth and mix well. Add the pepper, chili powder, cumin and chicken and bring to a boil the reduce heat and simmer 15 minutes. Serve over rice.

Cucumber Raita

This Indian condiment / sauce is great served next to any spicy dish. It will remind you of tzatziki because of the cucumber and yogurt, but the similarity ends there with a whole different flavor combination from the green peppers and cilantro. This is so refreshing and at 23 calories per serving, you can serve it next to just about anything.

8 oz. plain low fat yogurt
2 small cucumber, peeled, seeded and finely chopped or grated
¼ c finely chopped green bell pepper
2 T finely chopped fresh parsley or cilantro
¼ t ground cumin
Black pepper
¼ t salt

Whisk yogurt and add all the rest of the ingredients other than the pepper. Cover and refrigerate until well chilled. Sprinkle with pepper just before serving.

Cilantro Lime Fillets

Cooking the fillets in foil pretty much steams them and it is so very easy to do. This is a nice mild way to serve fish and I think the preparation would do just as well on meaty fish steaks such as tuna or swordfish.

4 4 oz. cod, tilapia or flounder fillets
¼ t pepper
1 ½ t oil
1 ½ t dried onion flakes
1 clove garlic, minced
¾ t ground cumin
2 T minced cilantro
1 lime peeled and thinly sliced
1 T margarine, melted

Preheat the oven to 375 degrees. Place each fish fillet on a piece of aluminum foil and sprinkle with pepper. Heat oil and add onion flakes and garlic and cook 1 minute them add cumin and place the mix over the fish. Sprinkle fish with cilantro and add a few lime slices to each fillet. Fold the foil over securely so the fish can steam and place the packets on a baking dish and bake 35-40 minutes.

For instructions on folding, Reynold’s says:
For each foil packet, bring up the two sides of the foil and double fold with about 1-inch wide folds. Leave room for heat circulation inside the packet as the food cooks. Double fold each end to form the foil packet.

Spicy Black Bean Salad

I’ve been making this side salad for years. It is great alongside so many dishes ! Sometimes it’s even good as a lunch served with a few low fat crackers.

15 oz. can black beans, rinsed and drained
1 can mandarin oranges, rinsed
2-3 scallions, thinly sliced
1/3 c chunky salsa
¼ c lime juice
2 cloves garlic, minced
½ t ground cumin

Mix all ingredients and refrigerate at least 3 hours.

Curried Lentils

The ginger was the big flavor in this dish and that’s all right by me ! Ginger and cumin just belong on lentils. This is not a super low cal side, so serve it next to a lighter dish like fish or chicken.

1 ½ c dry lentils, rinsed and drained
6 c water
1 t ground cumin
1 t oil
1 large onion, chopped
1 medium tomato, chopped
1 t chili and garlic sauce (available in the Asian section of your market)
1 t powdered ginger
1 clove garlic, minced
½ t ground turmeric
½ t salt
2 T chopped cilantro

Bring lentils and water to boil then reduce heat and simmer, partially covered, 45 minutes. Once in a while, spoon off the foam that appears on the top of the pot. Heat a skillet and add cumin, oil and onion and cook about 5 minutes. Add tomato and chili sauce and continue cooking until tomato is very broken down, about 5 minutes. When lentils are tender and water is absorbed mix all together except the cilantro and cook 15 minutes. Add cilantro just before serving.

Black Bean Pies

Though the Morningstar Farms black bean patties are MIGHTY GOOD, these were also good and if you’re just in the mood to do it from scratch, this is a great recipe !

3 t oil
½ onion, chopped finely
½ green pepper, chopped finely
2 large garlic cloves, minced
1 T honey
1 T cider vinegar
½ t chili powder
½ t cumin
¼ t red pepper flakes
15 oz. can black beans, drained and rinsed
¼ c breadcrumbs
2 T flour
4 T low fat sour cream
2 T cilantro, chopped

Spray skillet with Pam. Heat 2 t oil on medium high and sauté onion, pepper and garlic 4 minutes or until golden then add honey, cider, chili, cumin and red pepper and mix well. Add beans and breadcrumbs to the pan and reduce the heat to medium and cook 10 minutes stirring frequently. Remove pan from heat and mash bean mixture with a potato masher until it is the consistency of a thick puree, and then shape mix into 4 patties (like a hamburger). Spread flour on a platter and coat patties on both sides. Spray same skillet with Pam and ad 1 t oil. Saute patties until light browned turning once. Serve each with sour cream and cilantro.

Fish Tacos

Any kind of fish will do ! And these are a great change to the boring lunch sandwich. Whenever I have bits of fish leftover, I freeze them – then you can just defrost and do a quick reheat and you are ready to make tacos !

½ jalapeno pepper finely chopped
2 T lime juice
1 T chopped cilantro
1 T oil
1 lb. firm white fish filet (halibut, orange roughy, etc.)
1 t chili powder
1 t cumin
8 corn or flour tortillas
2 c shredded lettuce
1 tomato, chopped
1 avocado, sliced

Mix jalapeno, lime juice, cilantro and some salt. Heat oil in a skillet. Sprinkle fish with chili powder, cumin and some salt to taste and cool 5 minutes per side or until done. Warm tortilla according to package and them fill with fish, lettuce, tomato and avocado. Top with jalapeno mix.

Texas Peppersteak

Peppersteak is great no matter how you slice it 🙂 But this recipe really is a winner – the sauce made with coffee and balsamic turned an already savory dish into something just exquisite.

½ t ground cumin
½ t ground coriander
½ t chili powder
¼ t salt
¾ t pepper
1 lb. boneless top sirloin steak, trimmed
1 clove garlic, halved
2 cloves garlic, minced
1 T oil
2 red bell peppers, thinly sliced
1 onion, thinly sliced
1 t brown sugar
½ c brewed strong coffee
¼ c balsamic vinegar

Combine first five ingredients. Rub steak with cut garlic and then rub the spice mix into the steak. Heat 2 t of oil into a skillet and cook the steak 6-8 minutes per side or to desired doneness. Get a nice sear on the outside for extra flavor ! Remove steak from pan and tent with foil to keep warm. Add 1 t oil to the skillet and stir in the pepper and onions and cook 4 minutes then add the minced garlic and brown sugar and heat a minute before stirring in the coffee and vinegar. Heat 3-4 minutes. Slice steak into thin pieces and plate with pepper mix on top. Pour any sauce from pan over platter.

Black Bean Hummus

This is exactly what is says – the flavor of black bean dip mixed with the flavor of hummus and it was quite good ! Serve with Triscuits or homemade pita chips for a great appetizer or snack !

15 oz. can black beans, rinsed and drained
1 T tahini (sesame seed paste)
1 T low fat sour cream
4 garlic cloves, minced
1 T minced tomato
1 T lime juice
1 t cumin
Pepper to taste

In a food processor mix all ingredients and process until smooth.
