Spinach and Cheese Squares

This is basically a super easy recipe for a superb spinach quiche. The crust is light, the filling perfect, and this makes a great appetizer or lunch.

1 ½ c Egg Beaters
¾ c skim milk
1 T dried onion flakes
1 T grated parmesan cheese
¼ t garlic powder
1/8 t pepper
¼ c bread crumbs
¾ c fat free shredded cheddar cheese, divided
10 oz. frozen spinach, thawed and drained well

Heat oven to 350 degrees. Combine eggs, milk, onion, parmesan, garlic powder and pepper. Spray an 8×8 pan with Pam and press bread crumbs evenly into the bottom. Place ½ c of cheddar on top of the bread crumbs then add the spinach. Pour the egg mix on top of the spinach and then add the rest of the cheese. Bake 40-45 minutes or until a knife inserted in the center comes out clean. Let stand 15 minutes before serving.

Egg Salad Sandwiches

Who’d have thought you could make egg salad using Egg Beaters? But there is a method to HARD COOK Egg Beaters and this egg salad sandwich was pretty darned good !

1 c Egg Beaters
¼ c celery, chopped
2 T fat free mayo
12 slices whole wheat bread
6 lettuce leaves
1 large tomato in 6 thin slices

Hard cook egg beaters by placing then in a nonstick skillet, covering and cooking 10 minutes over very, very low heat. Cool and then cut into cubes and mix with celery and mayo. Place lettuce and tomato on sandwiches and top with egg salad.

Bacon, Egg and Cheese Muffin

This breakfast muffin has not one, but TWO pieces of Canadian bacon, cheese and eggs – all for 250 calories ! Compare that to the fast food breakfast sandwiches that weigh in between 300 and 500 calories and the choice is clear !

1/4 c Egg Beaters
2 slices Canadian bacon
1 slice Kraft fat free American cheese
1 lite whole wheat muffin, toasted
1 T lite buttery spread

Heat pan on medium high heat. Remove from heat and spray with Pam. Return to heat. Add Egg Beaters and reduce heat to medium and use a spatula to keep eggs contained to a small circle while they set and cook. Cook until done. Meanwhile, heat bacon in microwave 30 seconds. Butter muffin and place cheese on hot toasted muffin so it will melt. Add eggs and bacon.

Shepherd’s Pie

All the potato goodness of original Shepherd’s Pie recipes, but using ground turkey instead of ground beef cuts down on a lot of calories and a lot of fat. This one dish meal is definitely a complete meal…very filling !

1 bag Oreida steamed mashed potatoes
Salt and pepper to taste
2 lb. ground turkey
1 onion, chopped small
2 carrots, chopped small
2 T Worchestershire sauce
1/4 t onion powder
1/4 t garlic powder
1/4 t parsley flakes
1 c frozen peas
2 T buttery spread
1/3 + 1/4 c fat free half and half
¼ c Egg Beaters

Preheat oven to 350 degrees. Prepare potatoes according to package instructions. Mash slightly then add chives, butter, 1/3 half and half and ¼ cup Egg Beaters. If they are still stiff, add up to ¼ c hot water.

Heat skillet on medium high, add turkey. Season with salt and pepper and brown it 5 minutes. Add onions and carrots and season with salt and pepper. Cook 5 minutes until veggies are softened. Add Worcestershire, onion powder, garlic powder and parsley. Reduce heat to low and cover and cook another 6 minutes. Stir and add peas and ¼ cup half and half.

Put turkey and vegetable mix into a deep 9×9 baking dish. Top with potatoes. Bake 20 minutes. Don’t over bake as turkey tends to dry out.

Scrambled Eggs with Cheese (and a side of toast)

This is a great place to mix and match – anything that goes into an omelette can go in here – mushrooms, peppers, onions, ham, etc.

1/2 c Egg Beaters
1 Laughing Cow light cheese, cut in cubes
Pam
1 piece of 45 calorie bread, toasted
1 T buttery spread

Heat pan on medium heat. Remove from heat and spray with Pam. Return to heat. Add Egg Beaters and scramble lightly. Once eggs are set, add cubes of cheese and fold in until well distributed and eggs are done.

Toast bread and add 1 T buttery spread. Serve immediately.

Naked Pumpkin Pie

What’s pumpkin pie without the crust? It’s naked pumpkin pie ! And by removing the crust, you also remove oodles of calories. Serve with a slice of low fat graham cracker if you miss the crunch too much. For 400 calories, you can almost eat the whole pie (Did I say that out loud?) 🙂

15 oz. can of pure pumpkin (NOT the prespiced pumpkin pie mix)
12 oz can fat free evaporated milk
½ c Egg Beaters
2 ½ t pumpkin pie spice
½ c Splenda
1 ½ t vanilla extract

Preheat oven to 400 degrees. Spray a pie plate with Pam. Mix all the ingredients in a bowl and then pour into the plate. Bake for 15 minutes. Then reduce the heat to 325 degrees and cook for another 40-45 minutes. Cool completely.

Broccoli Casserole

The sauce ingredients make this a great casserole. It’s certainly not boring or dull – it has a rich flavor and a nice, creamy consistency.

10 oz frozen chopped broccoli, thawed
1 can fat free cream of celery soup
1/2 c 2% shredded cheddar cheese
1 t seasoned salt
1/4 c skim milk
1/4 c fat free mayo
1/3 c egg beaters
1/2 c panko bread crumbs

Preheat oven to 350 degrees. Pam a 11×7 baking dish. Put broccoli in dish. Mix soup, cheese and salt. Stir in milk, mayo and egg beaters and pour over the broccoli. Top with the bread crumbs and spray lightly with Pam. Bake 45 minutes. Broil for 2 minutes to brown the top. Serve immediately.

Breakfast Wrap DuJour

I mix and match this one all week long. Sometimes Canadian bacon slices are substituted, sometimes shredded low fat cheddar, sometimes mushrooms – pretty much anything you would throw into an omelette works well here.

1 Smart Delicious Wrap (100 calorie version)
Pam spray
½ cup Egg Beaters
3 slices lean turkey bacon
1 Light Laughing Cow cheese wedge
2 T salsa
¼ c avocado slices
Salt and pepper to taste

Heat the wrap in the microwave for 15 seconds if they have been refrigerated – this helps them to roll better. Cook turkey bacon according to package instructions and set aside. Heat a small frying pan on med high heat. Remove from heat and spray with Pam. Return to heat and add the Egg Beaters to the pan. Add salt and pepper. Reduce heat to medium. Scramble eggs until set.

Lay the wrap on a plate and spread the cheese evenly over the wrap. Lay the three slices of bacon in the center (be sure to leave a little room at the bottom for folding). Add the eggs in a strip down the center. Spoon the salsa over the eggs. Fold one side over, fold up a bit of the bottom, then fold the other side over to make a wrapped burrito. Serve avocado slices on the side.
