Turkey Sandwich Lunch Platter

Quick, easily portable and a great lunch. If you gotta have mayo instead of mustard, then use low or no fat and reduce the light ranch dressing.

Genji Spicy Ginger Miso Dressing

I’m not sure if this is a local product or if you can find it all over – a friend introduced me to it and you can get it at Whole Foods Markets. It makes a GREAT vegetable dip. Served with tri-color bell peppers, it makes an excellent snack or lunch side.

The dressing itself is 140 calories for 2T – – add the equivalent of a whole cut up bell pepper for about 25 calories.

Spinach Salad

This one is high in calories as salads go – but I can’t skimp on the egg or bacon or it just does not feel like a TRUE spinach salad to me. So I pair it with some really low cal seafood like Cajun Seafood Mix and it makes a great meal.
