Chicken and Barley Stew

So filling, so homey – this one comes out a bit wetter than a stew, but is not quite in the realm of a soup. It’s a great cold weather meal that really sticks with you.

1 c uncooked quick cooking barley
42 oz. fat-free chicken broth
1 T oil
1 3/4 c chopped onion
10 oz. frozen mixed vegetables
1 c chopped cooked chicken (Perdue Shortcuts work great here !)
Salt and pepper to taste
1/4 t thyme flakes

Place barley and broth in a large pan and bring to a boil then reduce heat and simmer 5 minutes. Heat oil in a skillet and add onion. Saute for 5 minutes then add mixed veggies and sauté another 2 minutes. Add veggies to barley mix along with chicken and spices and simmer 5 minutes.

This is a great healthy side salad that is sure to please. It’s nice to find *different* sides and this is definitely one of them !

3/4 c barley, uncooked
1 ½ c frozen corn, thawed and roasted
1 small green pepper, chopped
1/2 c zesty fat free Italian dressing
1/4 c chopped cilantro
2 T lime juice

Preheat broiler. To roast corn, spray a baking sheet with Pam and place corn on sheet. Broil 3-4 minutes or until it begins to blacken. Cook barley as directed. Spray a baking dish with Pam and roast corn 5-10 minutes or until starting to blacken. Let cool. Mix all the ingredients and refrigerate one hour so flavors mingle.

Ham and Barley Bake

There is something so homey about this dish. It is savory, filling, and sooooo does not say ‘diet’ – – it makes a fantastic dish to serve guests.

1 T buttery spread
1 c uncooked barley
1 c chopped carrots
4 scallions, sliced
2 ribs celery, sliced
3 cloves garlic, minced
1 lb. cooked smoked ham, cubed
2 t basil flakes
1 t oregano flakes
¼ t pepper
28 oz. beef broth
½ lb. fresh green beans cut into 1 inch pieces

Preheat oven to 350 degrees. Spray a 13×9 baking dish with Pam. Melt buttery spread in a skillet on medium high and add barley, carrots, onions, celery and garlic and cook 3 minutes. Remove from heat and stir in ham, basil, oregano and pepper and then pour into the baking dish. Bring broth to a boil in a saucepan and then pour over ham mix. Cover tightly with foil and bake 20 minutes. Remove from oven, stir in beans, recover, and bake another 30 minutes or until barley is tender.
