Mocha Parfaits

Rich, creamy and very flavorful. The family won’t even know they are eating healthy cottage cheese ! So much healthier than sugar laden puddings, ice creams, etc.

16 oz. low fat cottage cheese
1/4 c sugar
1 T cocoa powder
1 1/2 t instant coffee powder
2 cups sliced strawberries
1/2 cup + 2 T Cool Whip Lite
1/4 cup sliced almonds, toasted

Blend cottage cheese, sugar, cocoa and coffee in a blender. Take 1half of the mixture out of the blender and distribute among the 4 parfait cups. Place 2 T Cool Whip in blender and quickly blend. Distribute half the berries in the parfait glasses. Then add the remainder of the mocha mix and the remainder of the berries. Top with Cool Whip and nuts.

Cocoa Popcorn

This is barely sweet – much more of a cocoa flavor than a sweet flavor and yet it definitely satisfied my sweet tooth. This is a great sweet snack for in front of the TV.

6 c popped popcorn
1 T margarine
2 T light corn syrup
1 T unsweetened cocoa powder
1 ½ T skim milk
1/8 t salt

Preheat oven to 350 degrees. Place popcorn in a large baking pan and warm in the oven. In a small pan melt margarine, then add syrup, cocoa, milk and salt and stir until well mixed. Pour over popcorn and stir to coat all pieces.

Mocha Bundt

This is a very dense cake – almost more like a brownie consistency. But no matter the consistency – it’s CHOCOLATE ! Served with a nice spritz of whipped cream, it hit the spot.

3 1/2 c cake flour
2/3 c cocoa powder
3 T dry milk powder
1 3/4 t baking powder
1/2 t salt
7 T margarine, softened
3/4 c Splenda
1/3 c Splenda brown sugar blend
3 large eggs
2 large egg whites
1 1/2 c low fat buttermilk
3/4 c strong brewed coffee
Pam
Whipped Cream for garnish

Preheat oven to 300 degrees. Spray a bundt pan with Pam. Sift flour, cocoa, milk, baking powder and salt in a large bowl. In another bowl beat margarine and both sugars until mixed and then beat in eggs and egg whites one at a time beating 1 minute after each egg. Combine buttermilk and coffee in a cup. Beat 1/3 if the flour mix into the margarine mix on low speed and then beat in half of the coffee mix and continue beating until the liquid is absorbed. Repeat and then pour batter into pan and smooth the top. Bake 50-60 minutes or until a toothpick comes out clean. Cool in pan 10 minutes and then on a wire rack until completely cool. Serve with whipped cream.

Chocolate Cream Pie

Quick prep, creamy chocolate filling, crowd pleasing taste – – what else can a Chocolate Cream Pie offer?!?!

2 c skim milk
2 packages sugar free chocolate pudding (1.3 oz. each)
1/4 c dark chocolate chips
1 low fat graham cracker crust (6 oz.)
8 oz. Cool Whip Free, thawed
Cocoa Powder for dusting

Mix milk and pudding in a medium pan on medium heat whisking continually. Cook 8 minutes or so, until it comes to a boil. Remove from heat and add chips stirring until all are melted. Fill a large bowl with ice water and place bottom of pan in the ice bath for 5 minutes or until cooled off – be sure to stir frequently so the mix will cool down quicker. Pour the mix into the crust and cover with plastic wrap and refrigerate 3 hours or more. Just before serving, put on a layer of whipped topping and garnish slices with a dusting of cocoa powder.

Crock Pot Brownies

Can you say ooey gooey chocolate? This recipe sure does ! This is definitely a 4 star keeper 🙂

2/3 c sugar
1/3 c cocoa powder
1 t baking powder
1/4 t salt
2/3 c fat free evaporated milk
1/3 c margarine, melted and cooled
1/4 c Egg Beaters
1 1/2 t vanilla
1 c semi sweet baking chips

Powdered Sugar

Spray a 4 qt crock pot with Pam. Mix flour, sugar, cocoa, baking powder and salt. Combine milk, margarine, egg and vanilla in another bowl. Mix the dry mix into the wet mix until smooth. Finally stir in the chips. Spread batter in the crock pot and cook on low 2-3 hours or until a toothpick inserted comes out clean. Let cool 30 minutes and then invert over a plate and cut into 12 pieces. Sprinkle with powdered sugar.
