Cinnamon Tortilla Crisps

A perfect accompaniment to ice cream, perfect served alone, a great dipper for Fruit Salsa – these are super easy to prepare and great tasting.

Makes 96 crisps
24 servings (4 crisps per serving)

12 – 7 or 8 inch flour tortillas, cut into 8 wedges
Pam (butter flavored)
1 t cinnamon
½ c sugar

Preheat oven to 350 degrees and spray a baking pan with Pam. Place as many pieces as will fit on the pan and spray with Pam then sprinkle with a mix of the cinnamon and sugar. Bake 5-10 minutes or until crispy. Repeat with other tortillas. Let sit and cool a few minutes to finish crisping.

Parmesan Crisps

These are a GREAT addition to salads, as a side to Italian flavored dishes, etc. 2 ingredients + quick fry method = savory side in next to no time !

1 c grated parmesan cheese
1 t flour

Combine cheese and flour. Heat a non stick skillet to medium high heat. Spoon a thin layer of cheese into a 1 inch circle in hot pan. Repeat with as many as will fit in the skillet without touching. When they begin to sizzle and bottom is golden, flip over and cook until the next side is golden. Work in batches and finish up all the cheese and flour. This will go very quickly.

Apple Crisp

This is so low cal on its own that there’s plenty of room to add a nice scoop of light vanilla ice cream 🙂

3 medium apples, cored and sliced thin
1 t cinnamon
2 T sugar
2 T flour

Topping:
1 c quick oats
1 t vanilla
1/2 t cinnamon
1/4 c brown sugar
2 T margarine

Preheat oven to 325 degrees. Mix first four ingredients and place into a 9 inch square baking dish. In a small bowl mix topping ingredients and sprinkle over the apples. Bake until apples are soft, about 30 minutes.
