    This is a sandwich that makes your mouth happy :) The combination of the Cajun flavoring on the chicken along with the roasted red pepper and pepperoncini is just perfect. This one is a sure crowd pleaser and cut into strips, would make a great appetizer.

    Grilled Cajun Chicken Sandwiches

    1 serving
    330 calories per serving

    2 slices Italian bread
    1 ½ t light mayonnaise
    6 slices Cajun spiced deli chicken breast (if unavailable, sprinkle roasted deli chicken with some Cajun seasoning)
    3 strips jarred roasted red peppers
    1 small pepperoncini pepper sliced
    1 no fat cheese slice (Kraft Singles are nice and creamy!)
    2 t lite Italian dressing

    Brush the outside of the sandwich with the dressing and cook in a skillet 3 minutes per side or until golden brown. Spread mayo on bread and then add all the ingredients.

    This recipe gives you a really nice creamy dressing since you use mayo instead of eggs and oil. If you like it with a lot of bite, add extra anchovy.

    Creamy Caesar Salad

    Creamy Caesar Salad

    ½ c grated parmesan cheese
    ½ c fat free mayo
    ¼ c lemon juice
    2 t anchovy paste
    2 t Worcestershire sauce
    ½ t pepper
    ¼ t dry mustard
    5 large cloves garlic, minced
    8 oz. fresh bread cut into cubes
    4 head romaine lettuce in bite size pieces

    Preheat oven to 300 degrees. Combine 1.2 c water with cheese, mayo, lemon juice, anchovy paste, Worcestershire, pepper, mustard and garlic. Whisk well and set aside. Place bread pieces on a baking sheet and bake 15 minutes to toast them. When done combine croutons and romaine and then dress and serve immediately.

    This is simple to make and you can even pack it up to go as it travels well. All the southwest flavors mingle nicely and it’s a refreshing lunch salad. If you don’t like Ranch dressing, substitute any other low fat or no fat dressing.

    10 oz. frozen corn, thawed and drained
    1 large red pepper, chopped

    ½ c low fat ranch dressing
    2 T cilantro, chopped

    Arrange greens on plates and top with beans, corn, peppers, tomatoes and cheese. Top with dressing and cilantro.

    1/2 c fat free Italian dressing
    2 T chopped basil
    2 cloves garlic, minced
    3 low fat mozzarella sticks, sliced into small rounds

    Mix all together and refrigerate at least 1 hour.

    The horseradish really does come through in this dressing. I can see this doing equally as well on a chilled seafood salad, but I used it on greens and it really made for a zesty, spicy salad.

    2 T Worcestershire sauce

    1 t or more black pepper
    Tabasco sauce, to taste

    Mix all and chill for at least an hour.

    Mix broccoli, tomatoes, cheese, and seeds. Mix dressing, Splenda and mustard and then mix with veggies.

    ½ c sliced avocado
    1 T low fat Zesty Italian Dressing

    Mix it all up and serve next to soup or a light sandwich.

    Whether you’re slicing avocados for sandwiches, salads or snacks, it’s nice to have pretty slices rather than gouged out chunks. Avocados are not the easiest things to work with – but they are well worth the work! Nothing tastes quite like an avocado. And there is now a kitchen tool out there that takes all the hard work out of it. Just slice your avocado in half, remove the pit, and then use the tool to do the rest.     1 small onion, chopped
    1/4 c fat free Zesty Italian Dressing
    8 oz. mushrooms, sliced
    14.5 oz. vegetable broth
    1 c frozen peas
    2 c instant white rice, uncooked
    4 oz. low fat cream cheese, at room temperature
    1 t grated lemon zest
    Salt and pepper to taste
    1/4 c parmesan cheese

    Heat a skillet and add dressing – heat 30 seconds. Then add onions and cook 5 minutes or until tender. Then add mushrooms and cook another 4 minutes or until tender. Add broth and peas and bring to a boil then stir in rice and cream cheese and cover. Remove from heat and let stand for 8 minutes then stir in zest, salt and pepper and parmesan.

    This tastes as good as any ginger dressing you get at any Asian restaurant (usually served at Hibatchi places). Whip some up and if you don’t have any spinach around, place on any leafy greens.

    Spinach with Ginger Dressing

    Spinach with Ginger Dressing

    3 servings
    173 calories per serving

    2 T minced onion
    3 T peanut oil
    2 T distilled white vinegar
    1 1/2 T finely grated fresh ginger
    1T ketchup
    1 T soy sauce
    1/4 t minced garlic
    Salt and pepper to taste
    5 oz spinach
    1 small carrot, grated
    1/2 medium red bell pepper, very thinly sliced

    Combine onion, oil, vinegar, ginger, ketchup, soy sauce, garlic, salt and pepper in a blender. Process until combined. Toss spinach, carrot and bell pepper with the dressing in a large bowl until evenly coated.

About 400 Calories or Less

What's a foodie to do when she passes the 40 mark and her metabolism comes to a screeching halt? (hint...denial did not work !) So I've put together a collection of everyday meals that are simple to make, under 400 calories, yet so savory and delicious that you won't miss your old favorites and standbys. I've tested and tweaked, tested and tweaked and the recipes yield satisfying and scrumptious home cooked foods, because regular 'diet food' just wasn't going to cut it in this house !

If you are cooking for a family, stick to the 400 calories for yourself, but just give larger portion sizes to other family members. I double up dinner for my husband and it is more than enough. That way you are not spending too much time cooking multiple dishes. The family will love these meals !
