150 calories per serving½ of a 5 oz. can of tuna fish
1 T light mayonnaise
½ t onion powder
Salt and pepper to taste
1 rib celery, sliced
4 endive leavesMake tuna by mixing all ingredients. Then place in endive leaves and plate.

The avocado is unexpected and that makes it twice as good ! Mixed with the lemon and yogurt, this makes a very light yet creamy dressing.
4 servings
106 calories per serving1 avocado, cut into chunks
¼ c plain low fat yogurt
½ t grated lemon zest
1 T lemon juice
1 T water
½ t salt
4 c sliced romaine lettuce
4 c watercress or endiveIn a blender mix the avocado chunks, yogurt, lemon zest, lemon juice, salt and 1 T water until smooth. Put dressing in a bowl and add greens and mix well.

A sophisticated blend of endive, watercress and apple that cures boring salads !
4 servings
132 calories per servingDressing:
2 T oil
1 T cider vinegar
1 t sugar free maple syrup
2 t Dijon mustard
Salt and pepper to tasteSalad:
2 heads endive
1 bunch watercress
4 stalks celery
1 appleMix dressing. Core and slice endive. Remove thick stems from watercress. Slice celery and apple thinly. Mix together and add dressing. Add 2 T crumbled goat cheese for only 40 calories more.
