Fettuccine and Shrimp

This quick cream sauce can be used on just about any pasta dish – added to the flavored fettuccine from FiberGourmet and topped with sauted shrimp – mmmm, mmmmm good !

8 oz. FiberGourmet Fettucine (without it you have to add 80 calories per serving) – I used a pepper flavored pasta and it was so awesomely spicy
2 T butter
½ c thinly sliced shallots
3 cloves garlic, minced
1 c canned diced tomatoes, drained
1 lb. cleaned, peeled shrimp
½ t red pepper flakes
Salt and pepper to taste
½ c fat free half and half
1/3 c chopped parsley
1/3 c thinly sliced basil leaves

Cook pasta according to package instructions. Melt butter and sauté shallots 4 minutes then add garlic and cook 2 minutes more. Add shrimp to skillet and sprinkle with spices and cook until shrimp is just about done. Add tomatoes , parsley and basil and cook another minute. Then add half and half and keep warm on low temperature. Pour over pasta and serve immediately.

Fettuccine Alfredo

A dish that many order in a restaurant – but you can do it for so many fewer calories at home…and it tastes great !

12 oz. FiberGourmet fettuccine (I used their tomato flavored fettuccine)
2 t buttery spread
1 t oil
3 cloves garlic, minced
¼ c finely chopped red bell pepper
¼ c sliced green onions
¼ c chopped parsley
1 T flour
12 oz. can fat free evaporated milk
½ t basil flakes
¼ t oregano flakes
Salt and pepper to taste
¼ c parmesan cheese

Cook pasta according to package instructions. Melt spread and oil in a skillet. Cook garlic on medium high heat for one minute then add pepper, onions, parsley and flour and cook another minute. Gradually add milk and blend and bring to a boil stirring constantly. Cook 5 minutes or until sauce thickens. Remove skillet from heat, stir basil, oregano salt and pepper and then toss with pasta. Sprinkle with cheese and serve immediately.

Bayou Beef and Fettuccine

The Fibergourmet Cajun fettuccine really makes this dish all it is – the flavor is subtle yet delicious. Adding in some other layers of spice make this one a real winner !

10 oz. FiberGourmet Cajun flavored fettuccine noodles
Pam
1 c frozen stir fry pepper and onions
1 lb. thinly sliced beef
14.5 oz. canned diced tomatoes with garlic and onion, undrained
1 t garlic powder
¼ t pepper
½ t salt
½ t Cajun seasoning
Fresh basil leaves, chopped

Cook pasta according to package instructions. Sprinkle meet with Cajun seasoning. Heat skillet and spray with Pam and cook meat 5 minutes then stir in peppers and onions and cook 3-6 minutes, stirring frequently. Then mix in tomatoes, garlic, salt and pepper and cook 2 minutes. Stir in pasta and cook 2 minutes to heat through. Garnish with basil.
