Fruit and Creamsicles

Healthy, sweet, frozen, different – these make a great snack ! Try serving with a little cookie pressed into the top.

¼ c walnuts
2 ripe bananas
2 c non fat sour cream
8 oz. can unsweetened crushed pineapple, drained well
1/3 c mini marshmallows
¼ c sugar
1 t vanilla

Pulse walnuts in a blender to chop finely. Add bananas and pulse to blend then add cream, pineapple, marshmallows, sugar and vanilla and pulse to mix. Spoon ¼ c in each of 12 muffin cups and freeze 2 hours them remove and serve (I use silicone muffin cups).

So sweet, so yummy, so good ! This is a great dessert and a great snack. Looking for even lower calories, then use sugar free preserves. Use any flavor or combination on flavors you like 🙂

2/3 c flour
2 c Golden Grahams cereal, crushed
½ c brown sugar
½ t cinnamon
1/3 c melted margarine
2/3 c apricot preserves

Heat oven to 350 degrees. Mix flour, cereal, sugar and cinnamon then stir in butter. Reserve ¾ c of the mix and press the rest of it into the bottom of a square 8×8 baking pan. Spread preserves over and then sprinkle with the rest of the cereal mix. Bake 25 minutes or until light golden brown. Cool 15 minutes and then cut.

Pom Cranberry Relish

Fresh fruit, tons of antioxidants, low cal – this is the perfect sweet side dish. Serve with fish, chicken, next to a sandwich, as a snack….just eat it up before your kid eats the whole bowl on you !!

The addition of Pom juice to an already incredibly fresh cranberry relish … I’d call it a stroke of genius. You have to try it to believe how good it is !!

1 bag cranberries
3/4 c Splenda
1 granny smith apple, cored and in quarters
1 seedless oranges (peel and all !), in quarters
8 oz. Pom Wonderful pomegranate juice

Rinse the cranberries and pick out any bad ones. Place in a food processor and process until they are in small pieces. Remove to a bowl. Place apples in processor and blend until small pieces. Remove to bowl with cranberries. Place oranges in processor and process until all skin is in small pieces. Remove to bowl with cranberries and apples. Add Splenda and juice and mix well. Refrigerate at least 4 hours so flavors blend.

Pom Wonderful

Pomegranates ! One of my favorite fruits. They’re not well know, but they’re well worth getting to know.

While I love them, they are a HUGE pain to prep – just cutting into them leaves you with little stain marks all over the place – no matter how you do it, it can’t be done neatly. But between the unique taste and the healthy benefits, I don’t want to give up pomegranates….and in walks POM WONDERFUL 🙂 This amazing beverage is 100% pomegranate juice…Already all cut up, all squeezed out, and all right there in a cute little bottle just waiting in the refrigerator for you 🙂

Even without all the health benefits, I would drink this up like there’s no tomorrow. I love the rich, tart flavor. I think I am actually addicted to it 😉 And then there’s the recipes….Pom is great for making reduction sauces, as a syrup, in frozen desserts, and as an ingredient in other beverages. It’s versatile, fun, healthy and flavorful.

Oatmeal Pancakes

These are nice hearty pancakes and make a great weekend breakfast.

1 c quick oats
½ c flour
½ c whole wheat flour
1 T sugar
2 t baking powder
½ t baking soda
¼ t salt
1 egg, lightly beaten
2 c buttermilk
2 T canola oil
1 t vanilla
Berries for the topping

Combine the first 7 ingredients. Combine eggs, buttermilk, oil and vanilla and mix well. Stir into the dry ingredients. Pour batter by ¼ cupfuls onto a hot griddle sprayed with Pam. Turn when bubbles form and cook another minute or 2.

Serve with fruit, nuts, and a bit of sugar free maple syrup if you like. I usually serve with bananas 🙂

Fruit and Yogurt Pops

Take one hot and sunny day, add 6 frozen fruit and yogurt pops, and you end up with a perfect way to spend the summer 🙂

1 ½ c strawberry slices
¼ c sugar
1 ½ c blueberries
1 ¼ c low fat plain yogurt

Puree strawberries in food processor with 1 T sugar. Whisk yogurt and 2 T sugar. Puree blueberries in food processor with 1 T sugar. Make layers of fruit and yogurt in your ice pop mold, insert sticks and freeze at least 3 hours.

Tropical Sangria

Sangria is a great festive drink – adding the fruit to the wine makes it so much more special. You can set up pitchers well ahead of time so that the fruit really soaks up the wine. This one does away with the usual apples and oranges and adds some really flavorful tropical fruits. Don’t forget to serve some fruit in each glass !

6 c cubed fruit (mangoes, pineapple, apricot, cantaloupe, honeydew, apples, etc.)
¼ c thinly sliced and peeled ginger
1 c fresh mint or basil leaves
½ c orange liquer or orange juice
1 bottle Pinot Grigio for white or 1 bottle Beaujolais for red
2 T lemon juice

Bruise basil or mint leaves and combine all in a pitcher and refrigerate at least one hour.

Mandarin Dessert

Adding some Cool Whip and fruit to yogurt makes it a whole new dessert – the yogurt is so good for you, and the dessert is tasty and totally guilt free. Enjoy !

1 c Cool Whip Lite, thawed
11 oz. can Mandarin oranges, drained well

Mix yogurt and Cool Whip and then mix in oranges and chill.

Strawberry Tea

Cool, fruity and refreshing – this is a nice mix of fruit and tea. And when you add a little rum, then it is just heaven !

¼ c Splenda (skip this if you use pre-sweetened tea)
1/3 c iced tea mix
10 oz. frozen strawberries, thawed
4 c water
2 c crushed ice

Blend orange juice, Splenda, tea and berries until smooth. Pour into a pitcher and add water and ice.
