Artichoke Dip

This whips up in 5 minutes and is a great appetizer or snack. If you like artichokes, you will love this dip !

8 oz canned artichoke hearts
2 clove garlic
1 t cumin
2 t olive oil
Salt and pepper to taste

Place the artichokes in a food processor with the garlic and cumin and oil. Process to a smooth paste then season with salt and pepper.

Serve with store bought or homemade pita chips.

Chicken Tortellini Stew (Crock Pot)

This is a soupy stew or a thick soup 🙂 Whatever it is, it’s absolutely delicious. The sweet fennel adds just the little something different that makes this meal one of a kind.

2 carrots, sliced
2 cloves garlic, minced
1 lb. boneless skinless chicken breast cut into bite sized pieces
1 medium fennel bulb, chopped
19 oz. cannellini beans, drained and rinsed
Salt and pepper to taste
1/2 t garlic powder
1 3/4 c chicken broth
2 c water
9 oz. refrigerated tortellini
1 c baby spinach leaves
2 green onions, sliced
1 t basil flakes
2 T grated parmesan cheese

Spray crock pot with Pam. Layer carrots, garlic, chicken, fennel and beans then add broth, water, garlic powder, salt and pepper. Cover and cook on LOW 6-8 hours. Sit in pasta, spinach, onions and basil then cover and cook on HIGH 20 minutes. Spoon into bowls and garnish with cheese.

Chicken Tikka Masala

This is one of my daughter’s favorite dishes and she made it up for me the other night. My goodness, this has to be one of the best things I have EVER eaten. You can taste each individual spice and it’s like heaven on earth.

Marinade:
1 c plain non fat yogurt
1 T lemon juice
2 t ground cumin
1 t cinnamon
2 t cayenne pepper
2 t black pepper
1 T ginger, minced
2 t salt
1 lb. boneless skinless chicken cut into bite size pieces

Sauce:
1 T butter
1 clove garlic, minced
1 jalapeno pepper, sliced and then cut the rounds in half
2 t ground cumin
1 ½ t coriander
¼ t cardamom
¼ t turmeric
2 t paprika
¼ t cayenne
2 t salt
4 oz. tomato paste mixed with 4 oz. water
1 c heavy cream
¼ c cilantro, chopped

Mix all the marinade ingredients except the chicken. Place chicken in a zip loc bag and add the yogurt mix. Mush it around to coat all the chicken and then refrigerate 1 hour to overnight. Preheat grill. Grill chicken in a grill basket 5-6 minutes or until done. (You can also broil 4 minute a side)

Melt butter and sauté garlic and jalapeno 1 minute then add all the spices, tomato paste mix and cream. Simmer 15 minutes to thicken. Add chicken and simmer 5 minutes to heat through. Garnish with cilantro.

Tomatoes with Ginger Dressing

This ginger dressing rivals those served at Japanese steakhouse. Make a batch up and use it on salads and even atop fresh tomatoes as a great side dish to any meal.

2 T minced onion
3 T peanut oil
2 T distilled white vinegar
1 1/2 T finely grated fresh ginger
1T ketchup
1 T soy sauce
1/4 t minced garlic
Salt and pepper to taste
2 medium tomatoes, sliced thinly

Combine onion, oil, vinegar, ginger, ketchup, soy sauce, garlic, salt and pepper in a blender. Process until combined. Lay tomato slices on a platter and drizzle with dressing.

Shrimp with Verde Sauce

Verde is ‘green’ in Spanish and this dish is VERY green. The processed parsley and green onions put a great color on these shrimp. This is one of those restaurant worthy dishes – and it only takes minutes to prep ! Cut out the bread and you cut out tons of calories here – shrimp are very low cal !!

3 ½ T oil
6 garlic cloves
1 c chopped green onions
1 c chopped flat leaf parsley
½ t salt
½ t pepper
¼ t red pepper flakes
2 ¼ lb. large shrimp, cleaned and peeled
1/3 c dry white wine or chicken broth
6 oz. French bread in thin slices (more than ½ MB bread tub – 26 slices)

Preheat oven to 500 degrees. Place oil and garlic in food processor and process until garlic is fine then add onions and parsley and process again. Place in a bowl and add salt and peppers. Add shrimp and mix to coat. Place in a shallow roasting pan and add wine. Bake 7 – 10 minutes or until done. If the shrimp are not in a single layer, you may want to stir halfway through to ensure even cooking. Serve with bread for dipping in extra sauce.

Steak with Mushroom Gravy

This is a very satisfying and enjoyable meal. The gravy is very tasty and there are just enough noodles to really make this dish not seem too ‘dietish’. Serve with Roasted Green Beans for a great complete meal.

2 c raw egg noodles
Pam
1 lb. sirloin steak or filet mignon cut into bite sized pieces
1 T butter
2 T thinly sliced shallots
8 oz. sliced mushrooms
1 T minced garlic
1 T low sodium soy sauce
3 T flour
1 1/2 c fat free beef broth
1/2 t pepper
1/2 t salt

Cook noodles according to package directions and keep warm. Heat a large skillet on medium high and then spray with Pam. Add steak and cook 5-8 minutes to brown all sides. Remove from pan, cover, and keep warm. Melt butter in pan and cook shallots and mushrooms 5 minutes. Add garlic and cook a minute longer. Stir in soy and then sprinkle with flour. Cook, stirring constantly, about 1 minute. Add broth a bit at a time. Add salt and pepper and bring to a boil and cook 2 minutes. Return beef to pan and cook another 2-3 minutes.

No Fuss Ropa Vieja (Pressure Cooker)

Not quite authentic, but a great no fuss alternative to the awesomely delicious dish named Ropa Vieja. Serve next to rice or use as a filling in flour tortillas. This has WOW taste, great texture and is so, so satisfying.

1 c beef broth
1/4 c sherry vinegar
2 stalks celery, thinly sliced
1 large onion, chopped
1 large green bell pepper, chopped
3 cloves garlic, minced
15 oz. can diced tomatoes, undrained
1 T ground cumin
Salt and pepper to taste
3 lb. flank steak, trimmed of fat, each steak cut into thirds
1/2 c cilantro, chopped
10 flour tortillas, heated in oven or microwave

Place beef in pot. Mix broth, vinegar, celery, onion, pepper, tomatoes and spices and pour over the beef. Cover and 1 1/2 hours on high pressure. Let naturally cool down. Place meat on a large platter and let cool 10 minutes then using 2 forks, shred it well. Place it back in the pot with the cilantro and let sit 10 minutes. Serve with tortillas.

Authentic Lasagna

Thank you, thank you, thank you @ FiberGourmet ! This lasagna comes in at just 325 calories per serving because of your noodles !!! There is just no way to get close to a regular lasagna for under 400 calories – – until now ! The portion size is huge, the meal very, very tasty and I don’t even have to wait for ‘cheat day’.

¾ lb. lean ground turkey
3 cloves garlic, minced
¼ c parsley
28 oz. can diced tomatoes with their juice
14/5 oz. cam stewed tomatoes with their juice and tomatoes chopped up
8 oz. cam tomato sauce
6 oz. can tomato paste
2 t oregano flakes
1 t basil flakes
¼ t pepper
½ t salt
1 t onion powder
½ t garlic powder
2 c no fat cottage cheese
½ c grated parmesan
15 oz. no fat ricotta cheese
12 oz. FiberGourmet Lasagna Noodles (no boil noodles)
2 c shredded mozzarella cheese
Fresh herbs – basil, parsley

Preheat oven to 350 degrees. Spray a pan with Pam and cook turkey until almost done – make sure to crumble it as you cook it. Then add garlic and cook another few minutes. Add 2 T parsley, diced tomatoes, stewed tomatoes, tomato sauce, tomato paste, oregano, basil, salt, pepper, onion powder, and garlic powder then cook on low heat 45 minutes.

Mix 2 T parsley with the cottage cheese, parmesan and ricotta and stir well. Spread ¾ c tomato sauce in a 13×9 pan. Arrange a layer of noodles over the mix and then top with half the cheese mix, another 2 c of the tomato mix, and 2/3 c of the mozzarella. Repeat layers and then top with a final layer of noodles and put the remaining sauce over the top. Cover with foil and bake 1 hour. Then sprinkle with the rest of the mozzarella and bake uncovered for 10 minutes. Let rest 5 minutes before serving. Garnish with fresh herbs

Chicken and Pesto Soup

By adding pesto to the broth, you end up with a soup that is so tasty and delicious ! It really makes an ordinary chicken broth something very special.

1/2 cup carrot , julienned or shredded
8 oz. leftover cooked chicken
1 large clove garlic, minced
5 cups chicken broth
1 1/2 t oregano flakes
4 oz. baby spinach, coarsely chopped
15 oz. can chick peas, rinsed and drained
Salt and pepper to taste
2 T prepared pesto (available in the refrigerator section of your market)

Heat oil in soup pan and add carrot and chicken and heat for 2 minutes. Add garlic and cook 1 minute. Add broth, oregano, salt and pepper and heat 2 minutes. Add spinach and chick peas and cook 3 minutes. Add the pesto sauce and cook 5 minutes so all flavors blend.

Zucchini Fritters

This one is a great side dish. It’s tasty and something a little different than usual. You might even get the kids to eat zucchini 🙂

2 c shredded zucchini (use a cheese grater – the same size you would use to shred cheddar cheese)
1/2 c panko breadcrumbs
1/2 c shredded parmesan cheese (not grated, shredded)
1/3 c shredded onion
1/4 c Egg Beaters
1 garlic clove, minced
1/4 t black pepper
2 t oil, divided

Combine the first 7 ingredients. Heat 1 t oil. Spoon 1/2 of mix by quarter cupfuls into pan. Press down a bit with the back of a spoon to make sure each fritter holds together well. Cook 2 minutes each side. Repeat with the second batch.
