Strawberry Ice ‘Cream’ (no ice cream maker needed)

This is so completely and utterly delicious ! You won’t even miss the CREAM in this ice ‘cream’. The yogurt and sugar make a great, sweet and creamy base and then the minced up frozen strawberries just take over and you have an explosion of flavor with each bite. This is an award winner. And at 70 calories per serving – soooooooooooo guilt free !

1 lb. frozen strawberries
1 c 2 % plain Greek yogurt
¼ c sugar
½ t vanilla extract

In food processor pulse 1 c frozen berries until finely chopped and then transfer to a metal bowl (a metal bowl will get colder quicker in the freezer). Process yogurt, sugar, vanilla and the rest of the berries – move to metal bowl and stir with the other strawberries. Cover and freeze 1 hour (do not let get too hard).

Grilled Chicken with Creamy Pesto Sauce

Simple grilled chicken made super special with the addition of a creamy pesto sauce. This is lightened up quite a bit compared to plain pesto and the sour cream and yogurt make a great cream base for the pesto flavor to shine. Serve this one next time you are grilling with friends. The pesto sauce can be made hours ahead and left in the refrigerator.

4 5 oz. boneless skinless chicken breasts
Pam
Salt and pepper to taste
½ t garlic powder
4 T plain low fat Greek yogurt
4 T fat free sour cream
2 T prepared pesto (available in the refrigerated section of your grocer)

Heat grill and spray with high heat Pam. Sprinkle chicken with salt, pepper and garlic powder. Grill chicken 4 minutes per side or until done. Meanwhile combine yogurt, sour cream and pesto. Spread pesto sauce on plate and serve chicken atop it.

Greek Pastitsio

Authentic, delicious, Greek pasta dish – easy to make and a great meal for entertaining or for every day !

1 lb. lean ground turkey
1 small onion, chopped
24 oz. marinara sauce
2 T red wine vinegar
2 T butter
1 1/2 c skim milk
1 c strained plain Greek yogurt
1/4 t nutmeg
2 c FiberGourmet elbow macaroni, cooked
1/4 c grated parmesan cheese
salt and pepper to taste

Preheat oven to 350 degrees. Brown onions in a skillet sprayed with Pam. Add turkey and brown. Drain. Add sauce and vinegar and cook for 15 minutes. Melt butter and add milk. Bring to a boil on medium heat stirring constantly then lower heat and simmer for 5 minutes. Remove from heat and stir in yogurt and nutmeg. Add macaroni, salt and pepper and stir. Spread meat sauce into a 13×9 baking dish and top with macaroni. Sprinkle with cheese and bake 50 minutes.

Roasted Garlic Dip

Just the right amount of garlic in a great savory dip that is perfect for any occasion.

2 whole garlic heads
4 T mayonnaise
5 T plain Greek yogurt
1 t mustard
1 T olive oil
Salt and pepper to taste

Preheat oven to 400 degrees. Separate the garlic cloves from the whole head, peel them and place in a baking dish and mix with the oil and salt. Cover with foil and bake / roast 30-40 minutes (or until very tender) and then let cool 5 minutes. Mash garlic with a fork then combine with the rest of the ingredients. Cover and chill. Sprinkle with black pepper just before serving.

Garlic Shrimp

Simple to do – sweet to eat – yummy succulent shrimp ! At only 84 calories per large serving (aren’t shrimp great?!?!), add a nice pasta or rice side dish.

8 T plain fat free Greek yogurt
1 T minced garlic
Salt and pepper to taste
¼ c chopped parsley

Heat a skillet and spray with Pam. Mix yogurt and parsley. Cook shrimp 2 minutes. Add garlic and cook a minute longer or until shrimp are done. Toss shrimp with yogurt sauce.

Green Goddess Dressing

Green Goddess dressing was invented in the 20’s at the Palace Hotel in San Francisco and was quite popular for many years. You don’t see it too often anymore, but it’s a great change from the typical ranch dressing and is a snap to make. This one is lightened up using low fat mayo and rich, thick Greek yogurt and I find it perfect on a crispy lettuce such as iceberg.

1 c plain fat free Greek yogurt
½ c low fat mayonnaise
2 t Worcestershire sauce
2 t lemon juice
½ t Tabasco
3 canned anchovy fillets
1 clove garlic, minced
2/3 c parsley
¼ c tarragon
¼ c chives
¼ c chervil

Place all the ingredients in a blender and blend well.

Tandoori Chicken

Tandoori Chicken is an Indian dish with so much flavor. Though it is not cooked in a tandor as you would for authentic Tandoori chicken, this recipe is pretty darned good !

1 ½ c plain low fat Greek yogurt
2 T grated onion (grate it just like you would a hunk of cheddar cheese)
1 T grated ginger
1 T vegetable oil
1 t ground cumin
1/2 t ground red pepper
1/4 t ground turmeric
3 garlic cloves, minced
4 6 oz. boneless, skinless chicken breasts
1/2 t salt

Mix the yogurt and spices in a Ziploc bag. Add the chicken and seal and marinate in the frig for 2 hours. Preheat oven to 450 degrees. Place chicken in a baking dish and roast ½ hour. Turn on the broiler and cook 5 minutes or so to crisp it up.
