Smores – sweet, delicious and they bring out the kid in you – here we do it all without the camp fire !

3 T creamy peanut butter
9 reduced fat Honey Grahams, broken in half to make 18 squares
3 T hot fudge sauce
1/2 c mini marshmallows

Take 9 squares and spread each with 1 t peanut butter, then 1 t fudge then place 3-4 marshmallows on top. Cover with another cracker to make a sandwich.

Heat oven to 350 degrees. Place Smores on a baking sheet and cook 9-11 minutes or until chocolate is melted and marshmallow are puffed.

Toffee Ice Cream Pie

You’d never know this is fat free ice cream. Adding the toffee bits and topping with Cool Whip and hot fudge make this as delicious as any full calorie dessert.

2 1.4 oz. Heath bars, finely chopped
1 6 oz. low fat graham crust
½ c hot fudge topping
½ c cool whip, thawed

Combine ice cream and candy and then spoon into a crust then cover and freeze 3 hours. Cut into 8 slices and drizzle with hot fudge and top with cool whip.

Peanut Butter Fudge Pie

This tastes just like a Peanut Butter Silk pie that a restaurant around here used to serve. When the restaurant closed, we all mourned the loss of the pie ! But now I’ve found just the right mixture of ingredients to reproduce it ! It’s a little high in calorie count for a dessert, but it is sooooooooooooo worth it, so save it for a splurge day and dig in 🙂

8 oz. cream cheese, softened
½ c sugar
¼ c creamy peanut butter
2 c cool whip, thawed
1 oreo pie crust
¼ c hot fudge topping, warmed

Beat cream cheese with sugar and peanut butter and then whisk in cool whip. Spoon into crust and drizzle with topping and gently swirl with a knife. Refrigerate 4 hours.
