Avocado and Spinach Salad

Kraft has so many great dressing out there – as well as using them on their own, they make GREAT to use as ingredients in other dressings, sauces, marinades, etc. This salad is a Kraft recipe and it was so good !

250 calories per serving

1/2 c sliced avocados
3 T mandarin orange juice
2 t lemon juice
3 c baby spinach leaves
11 oz. can mandarin oranges (reserve 3 T juice / rinse the oranges in cold water)
1/4 c Kraft Catalina dressing (sweet French dressing)
2 T pecans (or other nuts), toasted
To toast nuts, heat a skillet on medium high then add nuts. Cook, stirring frequently, until the heat brings out the flavors, about 2-3 minutes (when you smell the great aroma, they are just about done).

Mix dressing,. Lemon juice and orange juice. Pour over spinach, oranges and avocados. Garnish with nuts.

Mexican Mac and Cheese

This is one of the better mac and cheese recipes I have done. Make sure you stir the mix enough to get all the cheese melted. And try not putting in the half and half until a good amount of the cheese is already melted so you don’t get unmelted lumps. This really hit the spot and you can certainly change it up by adding bits of different vegetables, maybe even some hot peppers 😉

2 c FiberGourmet rotini pasta (without FiberGourmet, the recipe comes in at 285 calories per serving)
¼ c sliced black olives
½ c fat free half and half
½ t salt
1 small red bell pepper chopped
1 can (4 oz.) chopped green chilies, drained
4 slices fat free Kraft American cheese slices

Cook pasta according to package instructions and stir in the rest of the ingredients. Cook over low heat 5 minutes or until cheese is all melted.

Bacon and Cheese Muffin

This is basically an eggless version of a great breakfast sandwich. This is so satisfying when you need something bacony and cheesy !

1 light whole wheat muffin (100 calories)
6 sprays I Can’t Believe It’s Not Butter spray
2 slices fat free Kraft singles
3 slices turkey bacon

Cook the bacon according to package instructions. Toast the muffin and when done, immediately spray each half with butter spray and place the cheese slices on so they get melty. Top with the cooked bacon and eat open faced or make a sandwich.
