Creamy Caesar Salad

This recipe gives you a really nice creamy dressing since you use mayo instead of eggs and oil. If you like it with a lot of bite, add extra anchovy.

½ c grated parmesan cheese
½ c fat free mayo
¼ c lemon juice
2 t anchovy paste
2 t Worcestershire sauce
½ t pepper
¼ t dry mustard
5 large cloves garlic, minced
8 oz. fresh bread cut into cubes
4 head romaine lettuce in bite size pieces

Preheat oven to 300 degrees. Combine 1.2 c water with cheese, mayo, lemon juice, anchovy paste, Worcestershire, pepper, mustard and garlic. Whisk well and set aside. Place bread pieces on a baking sheet and bake 15 minutes to toast them. When done combine croutons and romaine and then dress and serve immediately.

Chicken Milanese with Salad

Milanese style just means a breaded cutlet – – This is easy to throw together and the cutlets rival my old standby recipe – it’s the parmesan cheese in them that make these really special. Change up the salad by adding different veggies; tonight I had some left over zucchini and radishes that I threw in.

4 3 oz boneless chicken breasts
1/4 t black pepper
¼ t salt
1/4 c seasoned bread crumbs
2 T grated parmesan cheese
1 1/2 t oil
3 c baby salad greens or field greens
1 c grape tomatoes, halved
1/4 c matchstick cut carrots (pre-packaged)
3 T low fat balsamic dressing

Sprinkle chicken with salt and pepper. Rinse chicken in water. Combine bread crumbs and parmesan in a bowl and press chicken cutlets in to coat well. Spray a skillet with Pam and heat over medium heat and add the chicken and cook about 4-5 minutes per side or until browned. Mix the salad greens, carrots, tomatoes and dressing and serve salad alongside chicken cutlet.

Grilled Chicken Sandwich

When you add creamy avocado to a sandwich, there is no need for any other dressing. And avocado is a great MUFA for your diet. This grilled chicken sandwich is very tasty.

3 oz. chicken breast
1 hoagie / sub roll
1 slice tomato
1 large slice lettuce
Salt and pepper to taste
Garlic powder to taste
¼ c avocado slices

Heat grill. Sprinkle chicken with salt, pepper and garlic powder and grill 3-4 minutes each side or until done. During the last minute, slice your roll and place face down on the grill to toast the bun. Make a sandwich of all the ingredients.

If you do not have a grill, you can toast the roll in a toaster oven and you can pan fry the chicken in a skillet sprayed with Pam.

BLT Salad

I’m not a big salad lover. That is always a tough part of ‘dieting’ for me. But once in a while I actually crave a big bowl of greens. Adding bacon and croutons makes this one a winner.

3 c chopped romaine lettuce
6 slices turkey bacon
1 c halved grape tomatoes
1 slice 45 calorie bread
2 T dressing (70 calorie)

Toast bread and let it sit to harden (about 5 minutes) and then cut into cubes. Cook bacon according to instructions. When cool, crumble up. Put lettuce and tomatoes in a bowl. Top with bacon and croutons. Drizzle with dressing.

Greek Chicken Pitas

Greek food is so flavorful and fresh tasting. And many of the dishes are surprisingly simple to make. Using store bought tzatziki here is a time saver, but if you want to make it from scratch, it’s pretty easy. It’s just a mixture of plain Greek yogurt, garlic and cucumber pieces. You can skip the tzatziki if you don’t like it, then just substitute some hummus to add in more moisture.

1 lb. chicken tenders
1 t Greek seasoning (mix of oregano, salt, onion powder, garlic powder and paprika)
1/2 c tzatkizi
4 8 inch pita breads
2 c romaine lettuce, chopped
2 plum tomatoes, sliced
1 cucumber, seeded and cut into strips
1/4 c crumbled feta cheese

Spray a large skillet with Pam. Heat on medium high and add chicken. Sprinkle with the seasoning and cook 6-8 minutes or until lightly browned and done throughout.

Slice pitas so you will be able to fill the pocket. Add chicken, lettuce, tomatoes, cucumbers, feta and tzatziki. I often slice the chicken up first so it gets more distributed throughout the sandwich.

Grilled Veggie Tacos

You can serve these veggies in bread, on top of a salad, or in a crunchy taco shell. I choose a taco ! Spreading the cheese inside the taco makes for a great bite from start to finish.

Get taco shells and spread the inside with the spread mix – then put in veggies – if more room, add extra chopped lettuce for crunch

Spread:
3.5 oz. goat cheese
¼ c roasted red peppers
1 t chopped chives
1 t liquid from jar of roasted red peppers

Veggies:
1 T oil (used in an oil mister, 1 T goes a long way !)
1 t Kosher salt
4 large Portobello mushrooms halved
1 red bell pepper, quartered lengthwise
1 yellow bell pepper, quartered lengthwise
1 small eggplant in ¼ inch slices
4 taco shells
4 lettuce leaves, chopped

Preheat broiler. Process all the ingredients for the spread in a food processor and then set aside. Spray a baking sheet with Pam and place mushrooms, peppers and eggplant in a single layer on sheet and spray with oil and sprinkle with salt. Broil 8 minutes, turn, then broil another 5 minutes or until tender. Cool for a bit and then slice up. Spread inside of tacos with the cheese mix and then add lettuce and then veggies.

There’s lots of flavor packed into this sandwich ! It makes an excellent brunch or lunch meal.

1/4 c hummus
1/4 English cucumber sliced into 28 thin slices
1/4 c crumbled reduced fat feta cheese
8 thin slices of tomato
4 lettuce leaves

Toast muffin lightly and spread with 1 T hummus. Add cucumber, cheese and tomato. Top with lettuce.

Waldorf Sandwich

A Waldorf salad has apples and nuts and celery and is mixed with mayo. Here I recreate it but in sandwich form and serve it atop lean turkey slices. So good !!

Spread bread with mayo. Make sandwich with turkey and apples. Sprinkle with walnuts and celery slices. Top with lettuce.

Super good – this stacks up to any taco you find out there and the kids love to make these. These tacos really hit the spot.

1 1/2 lb. boneless skinless chicken, cut into bite sized cubes
1t red vinegar
Juice of one half a lime
1/2 t salt
1/2 t pepper
2 cloves garlic, minced
1 t oregano flakes
10 6 inch flour tortillas
1 tomato, diced
1/4 c shredded lettuce
1/4 c shredded Monterey Jack cheese
1/4 c salsa
Pam
1 avocado, sliced

Spray a skillet with Pam and cook chicken 6-7 minutes or until done. Mix in vinegar, juice, salt, pepper, garlic and oregano and simmer 5 minutes. Heat tortillas half a minute in microwave. Put chicken mix in tacos and top with cheese, tomato, lettuce and salsa. Top with 2 slices of avocado per taco.

Veggie Pitas

It’s a salad in a pita ! And a mighty good one at that !

1 t grated lemon zest
1 t oregano flakes
¼ t garlic powder
¼ t onion powder
Salt to taste
1/8 t cayenne pepper
¾ c chopped romaine lettuce
½ c finely chopped tomato
½ c finely chopped English cucumber
¼ c chopped black olives
¼ c crumbled low fat feta cheese
4 6 inch pita pockets, sliced

Mix oil, vinegar, zest, oregano, garlic and cayenne. Add in all the rest of the ingredients and mix well then spoon mix into pita breads.
