    Gruyere is so tasty – so earthy. This is a great sandwich with quite a bite to it.

    Grilled Mushroom and Gruyere

    Grilled Mushroom and Gruyere

    4 servings
    305 calories per serving

    1 T butter
    8 oz. sliced mushrooms
    4 t Dijon mustard
    8 slices whole wheat bread
    5 oz. spinach leaves
    ¼ c shallots, sliced very thinly
    1 c shredded Gruyere cheese
    Pam
    ICBINB Spray

    Heat butter and sauté shallots 3 minutes then add mushrooms and sauté another 6 minutes. Add up to 2 T of hot water if the mix gets too dry. Spread mustard on bread and add spinach leaves, ¼ c cheese and ¼ of the mushroom and shallot mix. Top with the rest of the bread. Spray a hot skillet with Pam. Spray each side of the sandwich with ICBINB Spray and then cook 2-3 minutes per side or until golden and cheese is melted.

    What a wonderful appetizer or lunch ! The marinade makes the shrimp nice and spicy. And the sauce is a great deviation from the typical ketchup and horseradish mixture…this one uses tomatoes and has a much fresher taste. Try dipping your avocado slices in the sauce too – the flavors go together perfectly.

    Warm Shrimp Cocktail

    Warm Shrimp Cocktail

    Cocktail Sauce
    14.5 oz. can diced tomatoes, undrained
    3 T cilantro
    2 T lime juice
    1 T prepared horseradish
    1 T Worcestershire sauce
    ¼ t Kosher salt
    ¼ t pepper
    (you can make this a day ahead)

    Shrimp
    24 fresh clean jumbo shrimp with tails on (if desired)
    3 T lime juice
    3 T chili sauce
    1 clove garlic, minced
    ½ t Kosher salt
    1/8 t pepper

    4 ripe avocados, sliced

    Prepare sauce and refrigerate at least 2 hours. Place shrimp in a zip loc bag with the juice, sauce and garlic and place in the refrigerator 1 hour. Heat grill and spray a grill basket with Pam. Drain shrimp and sprinkle with salt and pepper. Grill 7-8 minutes or until done. Serve with cocktail sauce and sliced avocados.

    If you don’t have a grill, you can broil or pan fry the shrimp.

    You can serve these veggies in bread, on top of a salad, or in a crunchy taco shell. I choose a taco ! Spreading the cheese inside the taco makes for a great bite from start to finish.

    Grilled Veggie Tacos

    Grilled Veggie Tacos

    4 servings (1 serving = 2 tacos)
    230 calories per serving

    Get taco shells and spread the inside with the spread mix – then put in veggies – if more room, add extra chopped lettuce for crunch

    Spread:
    3.5 oz. goat cheese
    ¼ c roasted red peppers
    1 t chopped chives
    1 t liquid from jar of roasted red peppers

    Veggies:
    1 T oil (used in an oil mister, 1 T goes a long way !)
    1 t Kosher salt
    4 large Portobello mushrooms halved
    1 red bell pepper, quartered lengthwise
    1 yellow bell pepper, quartered lengthwise
    1 small eggplant in ¼ inch slices
    4 taco shells
    4 lettuce leaves, chopped
    Pam

    Preheat broiler. Process all the ingredients for the spread in a food processor and then set aside. Spray a baking sheet with Pam and place mushrooms, peppers and eggplant in a single layer on sheet and spray with oil and sprinkle with salt. Broil 8 minutes, turn, then broil another 5 minutes or until tender. Cool for a bit and then slice up. Spread inside of tacos with the cheese mix and then add lettuce and then veggies.

    This is such a great snack – and it even makes a great, filling lunch when you pair it with Triscuits.

    1 can black beans, drained, rinsed, and mashed
    1 c chopped avocado
    1 c shredded low fat mozzarella cheese
    4 c baby carrots for dipping

    Place the beans in 4 bowls and coarsely mash. Stir in cheese and avocado. Serve carrots alongside. Add 100 calories worth of Triscuits or your favorite cracker to make it a little more filling and meal sized instead of snack sized.

    1 Arnold Select Multi-Grain 100 calorie roll
    1 T buttery spread
    ½ t garlic powder
    1 t oregano flakes
    4 slices lean thin turkey breast
    1 slice fat free American cheese

    Heat oven to 350 degrees or heat toaster oven. Spread buttery spread on inside of top and bottom of roll. Sprinkle with garlic powder and oregano. Toast a couple of minutes until golden brown. Place turkey and cheese on roll and make a sandwich and continue heating a few moments longer.

    This is one of those recipes where you just don’t miss the meat – not one bit ! Roasting the veggies first gives them a great flavor, then you add chili powder, then you add rice simmered with chipotle for the smoky flavor and then you add CHEESE ! This is a satisfying, perfect lunch.

    Vegetable Burritos

    Vegetable Burritos

    4 servings
    380 calories per serving

    Salt and pepper to taste
    1 1/3 c water
    ½ c brown rice
    1 T minced canned chipotle in adobo sauce
    4 bell peppers cut into thin strips
    4 medium carrots thinly sliced
    1 T oil
    1 T chili powder
    6 oz. fresh spinach leaves thinly sliced
    4 10 inch burritos
    ¾ c low fat shredded Monterey Jack cheese
    ½ c salsa (optional)

    Preheat oven to 450 degrees. Bring water to a boil and add rice and 1 t salt along with the diced chipotle. Cover and cook 45 minutes then remove from heat and let stand 15 minutes. Toss pepper, carrots, oil and chili powder in a baking pan and roast about ½ hour then add spinach and toss. Warm tortillas and add rice, cheese and veggies and wrap. Serve with salsa.

    A Waldorf salad has apples and nuts and celery and is mixed with mayo. Here I recreate it but in sandwich form and serve it atop lean turkey slices. So good !!

    100 calorie English muffin, toasted
    1/2 small apple sliced
    ¼ c chopped walnuts
    ¼ c thin celery slices
    1 T non fat mayonnaise
    4 slices thin deli sliced lean turkey (Oscar Mayer pre-packaged meats are great)
    2 lettuce leaves

    Spread bread with mayo. Make sandwich with turkey and apples. Sprinkle with walnuts and celery slices. Top with lettuce.
