July 25th, 2011Lunch, Salads, VegetablesKraft has so many great dressing out there – as well as using them on their own, they make GREAT to use as ingredients in other dressings, sauces, marinades, etc. This salad is a Kraft recipe and it was so good !
2 servings
250 calories per serving1/2 c sliced avocados
3 T mandarin orange juice
2 t lemon juice
3 c baby spinach leaves
11 oz. can mandarin oranges (reserve 3 T juice / rinse the oranges in cold water)
1/4 c Kraft Catalina dressing (sweet French dressing)
2 T pecans (or other nuts), toasted
To toast nuts, heat a skillet on medium high then add nuts. Cook, stirring frequently, until the heat brings out the flavors, about 2-3 minutes (when you smell the great aroma, they are just about done).Mix dressing,. Lemon juice and orange juice. Pour over spinach, oranges and avocados. Garnish with nuts.

July 25th, 2010Dessert, fruit, Kid Friendly, SummerSo extremely yummy and so easy to put together – you buy a prepared angel food cake, mix up an orange juice syrup and add some fruit – feel free to mix it up and use whatever is the freshest at your market. This week I added fresh blackberries !
8 servings
205 calories per serving1 small angel food cake
1 cup orange juice
1 orange, peeled and cut into slices and then cut in quarters (or one small can mandarin oranges, drained and rinsed lightly)
1/3 c Splenda
1 T plus 1 t cornstarch
1 large banana, sliced
2 kiwis, peeled and cut into piecesMix OJ, Splenda and cornstarch and blend to dissolve cornstarch. Bring to a boil then reduce heat and thicken the sauce cooking a few minutes. When done, stir in the bananas and kiwi and stir to coat. Add oranges and mix then serve the fruit mix over cake.
Add some Cool Whip Lite for a great indulgent dessert.

Very refreshing – very summery…it’s the perfect side to any grilled meat.

150 calories per serving2 15 oz. cans kidney beans, drained and rinsed (1 can red and one can white makes a nice salad)
10 oz. grape or cherry tomatoes, halved
1 ½ small cans mandarin oranges, drained and rinsed well
1 medium green pepper, chopped
6 green onions, sliced
½ c light zesty Italian dressing
¼ c sliced almondsMix beans, tomatoes, oranges, peppers and onions. Add dressing and mix well. Cover and refrigerate at least 1 hour. Sprinkle with almonds before serving.

I’ve been making this side salad for years. It is great alongside so many dishes ! Sometimes it’s even good as a lunch served with a few low fat crackers.
10 servings
250 calories per serving15 oz. can black beans, rinsed and drained
1 can mandarin oranges, rinsed
2-3 scallions, thinly sliced
1/3 c chunky salsa
¼ c lime juice
2 cloves garlic, minced
½ t ground cuminMix all ingredients and refrigerate at least 3 hours.

What a festive way to serve fruit! This was a great dessert and great drink – so colorful, so flavorful, so sweet ! It’s also a very versatile recipe – don’t like strawberries, use bananas instead….don’t like raisins, leave them out…substitute mandarin oranges for fresh oranges ! Make it your own

½ c sliced banana
½ c chopped apples
½ c sliced strawberries
2 T raisins
12 oz. diet lemon lime sodaMix fruit and spoon into fancy cups – pour soda over fruit and serve with spoons.
