Maple and Nut Oatmeal

Sometimes you’re just looking for bowl of warmth to fill your belly. I always find that oatmeal is very satisfying and it is very food for you. I think it makes a great snack that will take away the biggest of hunger pangs.

1 packet instant oatmeal
2/3 cup skim milk
1 packet Equal
1 T maple syrup

Mix oatmeal and milk and microwave for 60-90 seconds. When done, stir in equal and maple syrup. Enjoy !

Garnish with some nuts to get your MUFA – 1 T chopped nuts is approximately 85 calories.

Toast with Nuts and Pears

The cream cheese melts nicely on the toast and is a great base for the sweet pear and maple syrup. The nuts are just the icing. What a superb breakfast treat !

1 slice whole wheat bread
1 T low fat cream cheese
1/4 of a pear
1 t maple syrup
1 T chopped walnut pieces

Slice pear very thin. Toast the bread and spread with cream cheese. Layer on the pear slices and then sprinkle with nuts and syrup.

Asian Fish Packets

When fish steams in a packet it gets a wonderful consistency – meaty and rich. The sauce that goes with this has a great Asian flair – the ginger, garlic and soy combine to perfection. Pair with Homemade Lo Mein for a great meal.

1 T lite soy sauce
1 T maple syrup
2 t oil
2 T lime juice
2 t finely grated ginger
2 cloves garlic, minced
½ t pepper
1 bell pepper cut into thin slices
2 T minced parsley
4 scallions, sliced
1 ½ lb. flounder, tilapia or other white fish
1 lemon, cut into wedges

Preheat oven to 350 degrees. In a bowl combine soy, maple syrup, oil., lime juice, ginger, garlic and pepper. Create 4 foil packets and spray lightly with Pam and place fish in packet. Lay pepper strips atop the fish and sprinkle with parsley and scallions. Close foil tightly and bake 20 minutes or until fish is done. Serve with lemon wedges.

Peach Cobbler

Definitely serve this one warm with some vanilla ice cream or some whipped cream – it’s a great dessert that bakes up quickly and tastes so homey.

5 c sliced frozen peaches
1/3 c maple syrup
1/4 c firmly packed brown sugar
2 T MINUTE Tapioca
1 T lemon juice
1/2 t cinnamon
1/4 t nutmeg
1 c Bisquick
2 T sugar
¼ – 1/2 c milk
Preheat oven to 375 degrees. Mix peaches with syrup, brown sugar, tapioca, lemon juice and cook on medium heat until it comes to a boil then pour into 9 inch square baking pan. Stir Bisquick, sugar and milk until soft dough forms then drop by heaping tablespoonfuls onto hot fruit. Optionally sprinkle with a little more cinnamon then bake 28 – 30 minutes or until biscuits are golden brown.

Cinnamon Raisin French Toast

Take the whole frying hassle out of French toast preparation – and add some great apples and nuts along the way. This was a really easy way to prep a great breakfast. Add some extra maple syrup over the top to give it even more flavor !

½ c Egg Beaters
2 egg whites
¾ c skim milk
1 T Splenda
½ t vanilla extract
½ t cinnamon
8 slices cinnamon raisin bread (80 calories per slice) cut in half diagonally
1 t buttery spread
1 T maple syrup
2 apples sliced thinly
4 T sliced almonds

Preheat oven to 350 degrees. Spray a 9×13 baking pan with Pam. Whisk Egg Beaters, egg whites, milk, splenda, vanilla and cinnamon then pour into pan and top with the bread slices. Flip the bread over once to it gets a little coating on each side. Cover with foil and bake 15 minutes then remove foil and bake another 8-10 minutes. Melt butter in skillet and add syrup, then apples. Cover and cook on low heat 10 minutes or until apples are soft then uncover and cook 1 minute to dry up the mix a little. Serve bread with the apple mixture over top and sprinkle with nuts.

Apple Salad

A sophisticated blend of endive, watercress and apple that cures boring salads !

Dressing:
2 T oil
1 T cider vinegar
1 t sugar free maple syrup
2 t Dijon mustard
Salt and pepper to taste

Salad:
2 heads endive
1 bunch watercress
4 stalks celery
1 apple

Mix dressing. Core and slice endive. Remove thick stems from watercress. Slice celery and apple thinly. Mix together and add dressing. Add 2 T crumbled goat cheese for only 40 calories more.

Crock Pot Baked Apples with Maple Foam

Baked apples slow cooked not only taste great, but they make the whole house smell wonderful while they cook 🙂 This recipe is simple to do, yet has an elegant presentation. Though the recipe does not call for it, try adding some cinnamon or nutmeg for a different flavor combo.

2 large sized apples, cut in half and cored
4 t margarine cut in small pieces
1/2 c orange juice
1 T cider vinegar
1/4 c evaporated milk or half and half
2 T maple syrup

Please apples skin side down in a slow cooker. Place a dot of margarine on each. Pour juice and vinegar mix over the top and cook on high 2-3 hours or until soft. Remove apples to a plate and pour the juice in a pan. Bring juice to a boil and cook on high 5 minutes to reduce to a syrup.

Whip milk and maple syrup in an ice cold bowl for 3 minutes. Top each apple piece with 1/4 of the cream and drizzle with the fruit syrup.

Alternately, skip the milk and just add some maple syrup over the top of the apples for another version of a great dessert for a cold night.
