Good and Healthy Meatloaf

Pulling another oldie for my Retread week – – hope you enjoy !!

This is a really tasty meatloaf – it is packed with flavor, moist and all the things meatloaf should be 🙂 If you don’t have the individual pans, either make the individual loaves and just set in a baking pan, or make one big loaf. But if you make one big loaf then you will need to increase the baking time so that the center gets done.

Pam
1 lb. extra lean ground beef
1/4 c ketchup, divided in half (2T and 2T)
1/3 c old fashioned oats
1/4 c skim milk
1 carrot in chunks
½ of a small green bell pepper, sliced
1 c fresh parsley, chopped
1 garlic clove, minced
1/4 c egg beaters
1 T Worcestershire sauce
1 T steak sauce
¼ c cold water (or more)
1/4 t salt

Preheat oven to 350 degrees. Mix milk and oats and let sit a few minutes. Put carrots, peppers, onions, parsley and garlic in a food processor or blender and mince. Add oat mix, eggs, Worcestershire, steak sauce, 2 T ketchup and salt. Add beef and mix well. If dry, add some cold water. Spray 4 small individual sized meatloaf pans (I use the disposable ones available in all grocery stores) with Pam. Divide meat mix among the pans and spread 2 T ketchup over each. Place all the mini pans on a baking sheet. Bake 40-45 minutes and let stand at least 5 before serving.

Porcupine Meatloaf (Crock Pot)

What makes a meatloaf ‘porcupine’ ? The addition of rice ! And it also gives the meat a really nice texture and moistness. Try it !

1 can condensed tomato soup
½ c thick salsa
¼ c water
1 ½ lb. lean ground beef
½ c raw instant white rice
¼ c dried onion pieces
1 T Worcestershire sauce
¼ t salt
¼ t pepper
¼ t garlic powder
¼ t onion powder
¼ c Egg Beaters

Combine soup, salsa and water. Combine beef and all the rest of the ingredients plus 1/2 cup of the tomato mix. Shape into an oblong meat loaf and place in the bottom of a crock pot and pour the rest of the tomato mix over the loaf. Cover and cook on low 7-9 hours. Remove from crock and let stand 5 minutes. Slice into 6 slices and spoon the sauce over the slices.

Mushroom Meatloaf

Another day. Another meatloaf 🙂 There are so many variations and I just have to try them all 🙂 So far my favorite is still Good and Healthy Meatloaf. But this one works too – it does not look so full of veggies, so it might do better with kids 🙂

8 oz. assorted mushrooms (or all button mushrooms is fine too)
1 T oil
1 t garlic clove, minced
½ c parsley, chopped
½ c pureed diced tomatoes (canned)
8 oz. lean ground beef
8 oz. ground pork
1 c quick oats
½ medium onion
¼ c Egg Beaters
1 T Worcestershire sauce
1 t kosher salt
½ c ketchup

Preheat oven to 350 degrees and coat a baking dish with Pam. In a food processor, pulse the onion until minced and then add the mushrooms and process until minced and then sauté them in a hot pan with the oil about 5 minutes. If they remain wet, drain the liquid out of the pan. Add garlic, parsley and tomatoes and then set aside.

Mix meats, oats, egg, Worcestershire, and salt into the mushroom mix. Shape into a loaf and set in baking dish or a loaf pan. Spread ketchup over the top and bake an hour or until done. Let rest 5-10 minutes before slicing.
