Chicken Casserole with Wild Rice

This is one of those ‘all in one dishes’ that I love to make. You can make it ahead of time, refrigerate, and then do the baking right at the very end. Very convenient, very easy, very good !

You can make this casserole ahead and refrigerate until you are ready – just bake longer (about an hour) to make sure it heats all the way through.

2 c water
1/2 c wild rice
2 lb. boneless, skinless chicken, cooked (Perdue Shortcuts work great here !) and cut into bit sized pieces
2 T oil
3 scallions, chopped
1 1/2 lb. sliced mushrooms
1 c chicken broth
1/4 c flour
2 c skim milk
1/2 c grated Parmesan
1/2 c low fat sour cream
1/3 c chopped parsley
1 t salt
1/2 t pepper
2 c frozen French cut green beans
1/2 c sliced almonds

Mix water and rice and bring to a boil then lower to a simmer and cook 35-40 minutes. Drain and reserve. Heat oil in a large Dutch oven or soup pot and cook mushrooms 12 minutes or so to release all the liquid and allow it to dry up. Add broth and scallions and cook 5 minutes. Sprinkle in flour and stir then add milk and simmer 2 minutes. Add cheese, sour cream parsley, salt and pepper and remove from heat.

Preheat oven to 350 degrees. Spray a 9×13 pan with Pam and place the rice in as the bottom layer. Top with chicken and beans then pour over the mushroom sauce and sprinkle with nuts. Cook 30 minutes and let stand a bit to cool before serving.

Lemon Glazed Chicken

What a great tangy yet mild sauce – it makes the chicken tenders simply splendid !!

1 ½ lb. chicken cutlets or tenders
½ t salt
½ t pepper
3 T lemon juice
Pam
8 oz. sliced mushrooms
2 garlic cloves minced
½ c fat free chicken broth
2 T chopped parsley
1 t cornstarch
¼ c water

Season chicken with salt and pepper and 2 T lemon juice then place in a heated skillet that has been sprayed with Pam and cook 5-6 minutes each site or until browned then remove from pan and keep warm. Add mushrooms and garlic to pan and cook 4 minutes then add the rest of the juice, the broth, and the parsley. Mix 1 t cornstarch with ¼ c cold water and add to the mix. Simmer and stir to thicken sauce and then return chicken to the pan. Cook 3-5 minutes or until heated through.

Pasta and Beef Bake

Sometimes baking prepared pasta and sauce makes it taste like a whole different meal – and when you add in a layer of decadent cheese, then it really feels special 🙂 This is super easy to do and tastes GREAT !

8 oz. Uncooked FiberGourmet penne or rotini (without using FiberGourmet pasta, you add 80 calories per serving)
½ lb. extra lean ground beef
2 8 oz. cans tomato sauce
14.5 oz. can diced tomatoes, drained
4.5 oz. jar sliced mushrooms, drained
1 t basil flakes or 1 T fresh basil, chopped
½ t oregano flakes
½ t salt
¼ t pepper
½ t onion powder
½ t garlic powder
Red pepper flakes if you like it spicy
½ c fat free shredded mozzarella cheese

Heat oven to 350 degrees. Spray 8 inch baking dish with Pam. Cook pasta according to package instructions. Brown ground beef and drain then add tomato sauce, tomatoes, mushrooms herbs and spices and bring to a boil them remove from heat and stir in pasta then turn into the baking dish and cover and bake 15 minutes. Then uncover and sprinkle with cheese and bake another 5-10 minutes.

White Boboli

Stock up on Bobolis when they go on sale and you always have a great dinner ready to go – I add some sauce and layer mine up with all the different leftovers from the week. This time I skipped the sauce and did a ‘white’ boboli using up left over ricotta and spinach. It was scrumptious !

1 Boboli shell
½ c sliced canned mushrooms
½ c packed with baby spinach leaves
1 c broccoli florets
1 c part skim ricotta cheese
½ t garlic powder
2 T grated parmesan cheese
Red pepper flakes
Oregano flakes
Parsley flakes
Salt to taste

Preheat oven to 350 degrees. Spread ricotta cheese over Boboli leaving a ½ inch edge. Sprinkle with garlic powder, parsley, oregano and red pepper flakes. Lay spinach leaves on top of cheese and then layer on the mushrooms. Finally add the broccoli florets then sprinkle with salt and parmesan cheese. Bake 15 minutes or until heated through. Cut into 6 pieces.

Rice and Veggies – Very Cheesy !

Another great dish where your veggies and your starch are all together in one place. This whips up quickly and is a great side to chicken and fish dishes.

2 c hot cooked rice
¾ c shredded low fat cheddar cheese
½ c egg beaters
¾ t garlic salt

10 oz. package frozen broccoli florets, thawed
4 oz. chopped mushrooms
½ c chopped green bell pepper
½ medium onion, chopped
1 c egg beaters
½ c skim milk
½ t onion salt
½ t pepper
½ t salt
4 oz. shredded low fat cheddar cheese

Preheat oven to 375 degrees. Combine the first 4 ingredients and press into the bottom of a 2 quart baking dish sprayed with Pam. Steam the broccoli, mushrooms, bell pepper and onion for 5 minutes. Mix egg, milk, onion salt and pepper and stir into the veggies and pour it all over the rice crust. Sprinkle with cheese and bake 25-30 minutes or until a knife inserted comes out clean.

Creamy Beef and Pasta

This dish uses yogurt to make a delicious and creamy sauce. But you don’t even know it’s yogurt ! Try this for a great filling one dish meal.

5 oz. uncooked FiberGourmet Penne or Rotini
¾ c low fat plain yogurt
1 T cornstarch
1 T oil
¾ lb. beef round steak cut into thin strips
1 onion sliced thin
2 T flour
½ c beef broth
1 can diced tomatoes
1 green bell pepper in 1 inch squares
1 c fresh mushrooms, quartered
1 t basil flakes
½ t parsley flakes
½ t salt
¼ t pepper
½ t garlic powder
½ t brown sugar

Cook pasta according to package instructions. Combine yogurt and cornstarch and mix well. In a large skillet heat oil to medium high heat and cook beef and onion until beef is brown then add all the rest of the ingredients other than the pasta and yogurt sauce. Cover and cook on medium 8 minutes or until veggies are beginning to get tender. Remove from heat and gradually add 2 c meat mix into the yogurt sauce then return it to the skillet and stir over medium heat until well heated. Add pasta and toss to combine.

Baked Ravioli

This is a rich, delicious dish. The whole ‘ravioli splitting in the boiling water’ hazard is gone and this is something you can put together ahead of time and then bake just before serving. Very easy, very convenient and very good !

28 oz. jar marinara sauce
25 oz.package frozen cheese ravioli
2 c shredded no fat mozzarella cheese
2 T grated parmesan cheese
1 c sliced mushrooms (fresh or canned)
9 oz. frozen spinach, thawed and squeezed dry in a colander
½ t salt
½ t pepper
½ t garlic powder
½ t onion powder

Heat oven to 350 degrees and spray a 13×9 pan with Pam. Spread ¾ c sauce in bottom and arrange ½ the ravioli in the dish. Top with the spinach and mushrooms and then sprinkle with salt, pepper, onion powder and garlic powder. Top with half of the remaining sauce and 1 c mozzarella cheese. Add another layer of ravioli, then the rest of the sauce. Finally add the rest of the mozzarella and then sprinkle with parmesan cheese and cover and bake 40 minutes. Remove the foil and bake another 15 minutes until hot and bubbly. Then let sit 15 minute before serving.

Tuna Casserole

Everyone loves a good tuna casserole. This one tastes great and is way lower in the calorie department than my regular recipe. It gets skinnied up by using a slim milk and broth based sauce rather than a creamier version. The results are great !

8 oz. whole wheat egg noodles
1 medium onion, chopped finely
8 oz. sliced mushrooms
½ t salt
¼ t pepper
½ c chicken broth
6 T flour
3 c skim milk
12 oz. can chunk light tuna in water, drained well
1 c frozen peas, thawed
1 c finely shredded parmesan cheese
½ c panko breadcrumbs

Cook noodles according to package directions. Preheat broiler.

Heat a skillet and spray with Pam. Then cook onions 5 minutes. If they start to dry out, add a tablespoon or so of hot water. Add mushrooms and cook another 3 minutes. Add wine and continue cooking until liquid is evaporated, about 4 minutes then add milk, salt and pepper. Sprinkle peas with flour and mix to coat. Add to mushroom mix with tuna and half of the parm. Stir in the noodles. Place in a baking dish and sprinkle with crumbs and the rest of the parm. Broil 3-4 minutes until bubbly and top is brown.

Sprinkle the casserole with breadcrumbs and the remaining 1/2 cup Parmesan. Broil until bubbly and lightly browned on top, 3 to 4 minutes.

You can also prepare this ahead and then sprinkle with the breadcrumbs and cheese last minute, cover and bake at 350 degrees for an hour or so, taking off the cover the last 10 minutes to brown the top.

Beef Stroganoff Topped Potatoes (Crock Pot)

This serves up a super scrumptious stroganoff and serving it atop potatoes is a nice change from the typical noodles.

1 medium onion, chopped
1 ½ lb. boneless beef round steak cut into strips
2 4.5 oz. jars of Green Giant Sliced Mushroom and Garlic, drained
2 t beef boullion crystals
2 T water
1 t garlic powder
1 t onion powder
Salt and pepper to taste
6 medium baking potatoes
8 oz. low fat sour cream
1 T flour
1 T ketchup
Chopped parsley for garnish

Layer onion, beef and mushrooms in the crock pot. Combine beef boullion, salt, pepper, spices and water and pour over beef mix. Cover and cook on low 8-10 hours. An hour before serving, cook baked potatoes (LINK TO RECIPE). Mix sour cream, flour and ketchup and stir into beef mix. Place heat on high and recover and cook another 10 minutes. Cut potatoes in half lengthwise and loosen the pulp with a fork. Spoon beef mix over potatoes and sprinkle with parsley.

Chicken Tetrazzini

Mark this down as another of those recipes that you will make again and again. Some of the noodles get a little crunchy from the oven and it makes the dish that much more enjoyable. Tetrazzini is usually made with spaghetti, but I like using fettucine noodles sometimes !

7 oz. FiberGourmet pasta (fettuccine noodles or spaghetti) – without FiberGourmet pasta, this dish will not come in under 400 calories !

¼ c margarine
¼ c flour
½ t salt
¼ t pepper
1 c chicken broth
3/4 c heavy cream
¼ c skim milk
2 T water
1 ½ lb. cooked chicken in bite sized pieces (Perdue Shortcuts work great here!)
1 can sliced mushrooms
½ c parmesan cheese

Heat oven to 350 degrees. Cook pasta according to package instructions. Melt margarine on low heat and stir in flour, salt and pepper and stir constantly until smooth and bubbly then remove from heat. Stir in the broth and cream and then heat to boiling stirring constantly and cook 1 minute. Then stir in water, pasta, chicken and mushrooms. Put into a baking dish and sprinkle with cheese and bake ½ hour.
