Chicken Liver Pate

Don’t be afraid of pate – if you like liver, you’re going to love this ! This is such a great appetizer dish – people always go crazy for pate ! This one is so simple to prepare and is sooooo tasty. You can make it a day ahead and have it ready to go for a cocktail party.

1 cup
79 calories per serving (1 serving = 1 T pate and 2 crackers)

2 slices bacon
8 oz. chicken livers
½ c chopped onion
4 cloves garlic, minced
2 T milk
¼ t salt
¼ t pepper
¼ t nutmeg
Crackers or Melba Toast rounds

Cook bacon until crisp and remove from skillet and reserve 2 T drippings. Crumble bacon. Add chicken livers, onion and garlic to reserved drippings and cook 10-15 minutes or until done then cool slightly. Mix livers, bacon, 2 T milk, salt, pepper and nutmeg in processor. Line a mold with plastic wrap and spoon in mixture. Cover and chill at least 4 hours. Unmold onto a plate and serve with crackers.

Mexican Pork Dinner

This is a great quick meal – the chops are tender and tasty and the corn mixture is not your boring old corn ! Try serving with Cheesy Spirals.

3 t chili powder
1 t cumin
½ t salt
¼ t cayenne pepper
4 4 oz. boneless pork chops
1 t oil
½ c finely chopped onion
½ medium green bell pepper finely chopped
1 lb. frozen corn

Combine chili powder, cumin, salt and cayenne. Rub half the mix over both sides of the pork chops. Spray a skillet with Pam ad cook chops 5-6 minutes each side on medium high heat. Remove to a plate and cover to keep warm. Spray skillet again and cook onion and bell pepper 4 minutes or until tender. Add corn, the rest of the seasoning and continue cooking 3 minutes.

Creamy Chicken Rice Soup

The broth for this soup is just perfect – it is satisfyingly creamy without being too much. The veggies are just enough. And the rice makes it really stick with you. It is a great lunch soup and reheats well. Be sure to not skip the wine and lemon juice – just the little bits make a big difference in the taste of the broth !

½ c chopped carrot
1/3 c finely chopped onion
1/3 c chopped celery
2 T butter
¼ c flour
6 c chicken broth
2 c cooked rice
1 c cubed cooked chicken
½ t salt
¼ t pepper
1/8 t garlic powder
1 c 2 % milk
2 T lemon juice
1 T white wine

Saute the carrot, onion and celery in the butter until tender then mix in flour and gradually stir in the broth. Mix in rice, chicken, salt, pepper and garlic powder and bring to a boil the reduce heat, cover and simmer 15 minutes. Reduce heat to low and stir in the milk, lemon juice and wine and cook 5 minutes or until heated through.

Pepper and Egg Sandwiches

This is something I grew up with, but most people never think of pairing eggs and peppers and putting them on a sandwich. Try it, you’ll be glad you did 🙂

1 Club Roll
1 bell peppers, any color, cut into thin strips
1/4 large onion, sliced thin
1 t oil
Pam
Salt and pepper to taste
1/4 t garlic powder
1/4 t onion powder
hot water
½ c egg beaters
Salt and Pepper to taste

Place oil in large skillet and heat to medium high. Put onions in pan and saute 5 minutes. Move onions to the side, remove pan from heat and spray skillet with Pam. Return to heat and add peppers to skillet. Let cook down a little and then season with all the spices. After about 5 minutes, lower heat to medium and continue cooking to desired doneness (about 10-15 minutes – you want them nice and soft for this recipe). You may need to add up to a tablespoon of water at a time to keep the mix from getting dry.

When done, move onions and peppers to the side, remove pan from heat and spray skillet with Pam. Return to heat and add egg beaters and quickly scramble the eggs. Mix all together when eggs are done and place all on the club roll and enjoy !

Zucchini Boats

This has a definite Middle Eastern flair to it with the coriander and cumin as the main seasoning. Serve next to Eastern Fried Rice for a great vegetarian meal.

2 medium zucchini, halved lengthwise
½ T oil
1 small onion, chopped
1 clove garlic, minced
2 oz. button or Portobello mushrooms, chopped
1 t ground coriander
¾ t ground cumin
½ c chick peas, rinsed and drained
1 T lemon juice
2 T chopped parsley
Salt and pepper to taste

Preheat oven to 350 degrees. Spray a baking dish with Pam. Scoop the flesh out of the middle of the zucchinis to create boats for the filling. Chop the removed flash and reserve. Heat oil in a skillet and cook onions 5 minutes then add garlic and cook another minute. Add chopped zucchini and mushrooms and cook 5 minutes then add coriander, cumin, chick peas, lemon, parsley, salt and pepper. Stuff the zucchini shells and bake 35-40 minutes.

Chicken and Veggies (Crock Pot)

New chicken recipes for the crock are always welcome in my house ! I love to be able to put a meal together and then walk away and have it ready to eat hours later. This one has all the flavor of a nice chicken soup, but has a thick sauce and is more like a chicken stew. As with any crock recipe, if you like you meat browned (which the crock will not do), either pre-sear it, or at the end place under a hot broiler for just a few minutes.

4 boneless skinless chicken breasts
1 c potatoes, peeled and quartered
2 carrots, cut in small pieces
½ onion, chopped small
1 rib celery, chopped
½ c frozen lima beans
¾ c water
½ t salt
¼ t pepper
¼ t onion powder
¼ t garlic powder
½ t basil flakes
½ can low fat cream of chicken soup

Place chicken in crock and add vegetables, water, salt, pepper and other spices. Pour soup over the veggies. Cover and cook on high 4 hours.

Mushroom Soup

It’s amazing how such a quick cook soup can produce such a flavorful broth ! The mushrooms really release all their mushroomy goodness in this one 🙂

½ c finely chopped onion
¼ c chopped parsley
2 garlic cloves, minced
2 lb. slices assorted mushrooms (canned and fresh)
32 oz. fat free chicken or beef broth
1 c water
½ t salt
¼ t pepper
½ t garlic powder
½ t onion powder
½ c nonfat sour cream

In large saucepan heat oil and add onion, parsley and garlic and cook 5 minutes or until onion is tender. Add mushrooms, broth, water, salt, garlic powder, onion powder and pepper and bring to a boil and cook 4 minutes. Reduce heat to low and simmer 15 minutes then stir in sour cream and serve.

Quick Baked Beans

Great to serve next to a no fat hot dog (which is only 145 calories on a bun!). This is a great side dish full of fiber and full of rich flavor.

16 oz. can of pork and beans
15 oz. can of red kidney beans, drained and rinsed
¼ c ketchup
2 T brown sugar
1 T cooked bacon crumbles
Dash of Smoke Flavoring (optional)
2 t dried minced onion
2 t spicy brown mustard

Combine all and cook on low heat 15 minutes so flavors mingle.

Vegetable Paella

This is loaded with veggies and tastes so good ! It’s way quicker than a regular paella and if you really want some seafood in there, add some Buttery Baked Shrimp. Paella is a great healthy dinner that the whole family will enjoy.

3 T oil
½ onion, chopped
½ green bell pepper, chopped
½ poblano pepper, seeded and chopped
12 oz. sliced mushrooms, roughly chopped
2 cloves garlic, minced
1 t paprika
1 t oregano
½ t pepper
¼ t red pepper flakes
1 ½ c brown rice (MINUTE rice)
2 ½ c vegetable stock / broth
14.5 oz. can diced tomatoes
1 ½ t salt
9 oz. baby spinach leaves, chopped roughly
1 c frozen peas and carrots, thawed
1 c frozen or canned artichoke hearts
2 T red vinegar
¼ c chopped parsley

Heat oil in a Dutch oven or large soup pot on medium heat and cook onion 7 minutes. Add bell pepper, poblano pepper, mushrooms and salt and cook 5 minutes then add garlic, paprika, oregano, red pepper and black pepper and continue cooking another minute or two. Add stock and tomatoes and salt and bring to a boil. Then stir in rice. Cover and reduce heat to low and cook 7 minutes. Stir in spinach, peas, artichokes, vinegar and half the parsley. Season with salt and pepper to taste and cover again and let sit 5 minutes for all the juices to absorb. Serve with parsley garnish.

Caribbean Chicken

This recipe makes a nice mellow flavored meal full of Caribbean richness and warmth. Try serving with a tossed green salad and some rice.

1 T sugar
1 T finely chopped jalapeno pepper (seeds removed)
2 t cider vinegar
2 t soy sauce
½ t salt
½ t ground allspice (or a mix of ground cloves and ground nutmeg)
½ t thyme
½ t pepper
¼ t red pepper flakes
1 ½ lb. boneless, skinless chicken thighs

Combine all except chicken and Pam in a large bowl. Add chicken and toss well to coat. Heat a grill pan (or the BBQ grill in the backyard !) on medium high heat and spray with Pam. Cook 5 minutes per side or until done.
