March 6th, 2012Dessert, fruit, Kid FriendlyFruit salad with a kiss of lime and honey. This is a great fruit combination – the sweet mango, crunchy jicama, tart pomegranate and citrus are a perfect taste treat. So very healthy, make a batch and eat off it for a few days !
8 serving
118 calories per serving1/2 c pomegranate seeds (about 1 pomegranate)
1/2 c julienned jicama (if you do not have this substitute apple)
2 medium ripe mangoes, peeled and cut into thin slices
2 tangerines or clementines, peeled and sectioned
2 blood oranges, peeled and sectioned (sub red grapefruit or navel oranges if you cannot find blood oranges)
1 pear, thinly sliced
2 T fresh lime juice
2 T honey
1/4 t ground red pepper
1/8 t coarse sea saltMix the fruits and toss gently. Combine honey, lime, salt and pepper and pour over fruit. Serve room temperature or chilled.

November 16th, 2010Breakfast, Kid FriendlyThe cream cheese melts nicely on the toast and is a great base for the sweet pear and maple syrup. The nuts are just the icing. What a superb breakfast treat !

190 calories per serving1 slice whole wheat bread
1 T low fat cream cheese
1/4 of a pear
1 t maple syrup
1 T chopped walnut piecesSlice pear very thin. Toast the bread and spread with cream cheese. Layer on the pear slices and then sprinkle with nuts and syrup.

June 27th, 2010Dessert, Kid Friendly, Snacks, SummerWhat a refreshing snack on a hot summer day ! Pops of any kind make a great dessert or snack and these are no exception
12 servings (6 oz. pops)
103 calories per serving2 granny smith apples, peeled and diced
2 c pear juice
½ t ground cardamom
1 ripe pear, peeled and diced
1 c applesauceMix apples, pear juice and cardamom and simmer on low heat 10 minutes to soften the apples. Add the pears and simmer another 5 minutes. Remove from heat and add the applesauce. Fill the molds and insert the sticks and freeze at least 8 hours.
For fun, place a green maraschino cherry at the bottom of each pop before filling with the other mix.
