BLT Wraps

Take something near perfect and make it even perfecter 🙂 The wrap holds in all the goodies unlike the regular old slippery BLT. This is a keeper !!

½ c fat free mayo
½ c fat free sour cream
2 T ranch dressing mix
¼ t red pepper flakes
8 flour tortilla wraps
16 bacon strips, cooked
3 c shredded lettuce
2 c chopped tomatoes

Combine mayo, sour cream, ranch mix and red pepper. Spread on tortillas and then add bacon, lettuce and tomato and wrap up. To fold a wrap perfectly, check out my video below:

Parmesan Pork and Penne

This is a meal that the family was raving about…there was much satisfaction around the dinner table the night I made this one ! Even though it is a very quick sauce, it grabs the flavor from the pork and quickly becomes a sauce full of depth. Be sure to add on the fresh herbs – they really add to the awesome flavor of this dish.

If you don’t use the FiberGourmet pasta, the meal does not come in under 400 calories.

8 oz. FiberGourmet penne pasta
3 T bread crumbs
3 T grated parmesan cheese
¾ lb. pork tenderloin sliced thinly
2 t oil
Pam
14.5 oz. can diced tomatoes, undrained
14.5 oz. can diced tomatoes, drained this time
8 oz. tomato sauce
2.25 oz. can sliced black olives, drained
Salt and pepper to taste
½ t basil flakes
½ t oregano flakes
½ t parsley flakes
Salt and pepper to taste
2 T fresh chopped basil

Cook pasta according to package instructions. Combine breadcrumbs and cheese in a zip loc bag then add the pork slices and shake. Heat oil in skillet and also spray it with Pam and then cook pork 4-6 minutes or until browned on both sides. Add tomatoes, sauce, salt, pepper and olives and bring to a boil the reduce heat to low and simmer 10 minutes or until pork is tender. Serve pork mix over cooked penne. Garnish with fresh chopped basil.

Grilled Pork Salad

This tasted equally as good all nestled inside a wrap for easy portability…what a great brown bag lunch !

¼ c oil
2 T lime juice
1 T Dijon mustard
½ t salt
1 lb. pork tenderloin
Raspberry Vinaigrette
3 bunches watercress torn into pieces
1 small peach, cut into ½ inch pieces
½ c raspberries

Mix oil, lime, mustard, and salt in a zip loc bag and add pork. Mix up and refrigerate in the sealed bag at least 1 hour. Heat grill and cook pork 10 minutes each side or until done. Cut diagonally into ¼ inch slices and set ½ of it aside for another meal. Arrange meat on watercress pieces and drizzle with vinaigrette then garnish with fruit.

Pork Filets

What a great pork recipe ! Any time you serve a sauce with something, it just makes it so much more special. And this sauce is special unto itself ! It is very flavorful with just the right amount of tang from the mustard and Worcestershire. Put the 2 together and you get a meal fit for a king !

Pork:
8 oz. pork tenderloin
1/8 t kosher salt
1/8 t pepper
2 t oil

Sauce:
2 T minced shallots
¼ c white cooking wine
½ c chicken broth
1 t Worcestershire sauce
1 t Dijon mustard
1 t lemon juice
1 T fresh parsley, chopped
1 t butter
1/8 t kosher salt
Tabasco sauce to taste

Cut pork loin into 4 thick pieces and season with salt and pepper. Heat oil in skillet until browned, about 6 minutes per side. Also sear the edges cooking the pork for a total of 16 minutes or until done throughout. Remove pork and keep warm. Saute shallots in same skillet 2 minutes. Add wine and simmer until reduced by half. Stir in broth, Worcestershire, Dijon and lemon juice and simmer 5 minutes. Remove from heat and whisk in parsley, butter and Tabasco. Drizzle sauce over filets.

Grilled Pork Roast

Cooking the pork in this manner turns your grill into a big oven. Be sure to sear the pork at the end of the cooking process so you get a nice browned outside. Serve with Oven Fries and a salad for a great balanced meal. Leftovers are great for making Cuban Sandwiches.

3 pound pork top loin roast or pork loin
2 T parsley, chopped
1 t fennel seeds, crushed
1 t minced dry onion
½ t rosemary, crushed
¼ t salt
¼ t ground cloves
¼ t pepper
¼ t garlic powder
¼ t onion powder
1/8 t ground coriander

Trim fat from roast. Mix all spices together to create a rub and sprinkle it evenly over the meat and rub it in. Heat grill – lower heat to medium low – shut off one side of the grill so that you can grill with indirect heat. Place meat on a rack in a baking pan and place on the side of grill that is NOT on. Cook 1 ½ hours. Sear the meat on the side of the grill that is on for just a few moments, then remove from grill and let sit 15 minutes before slicing.

Cuban Sandwich

Add in some ham and this is a pretty authentic sandwich – it’s just on whole wheat slices rather than a roll. But for only 285 calories, I’ll give up a little authenticity – and you don’t have to give up on ANY of the flavor ! You can add some mustard if you like, but I like this one plain.

2 slices whole wheat lite bread (45 calories per slice)
1 slice light Swiss cheese (70 calories)

Make a sandwich of the pork, cheese and pickles. Heat a grill pan or frying pan and spray with Pam. Spray one side of the sandwich with 5-10 spritzes of ICBINB spray and lay the sprayed side down. Grill 3 minutes pressing down on the sandwich lightly. Spray the top of the sandwich with ICBINB and flip then continue cooking 2-3 minutes.

Herbed Pork Tenderloin

This is a great way to prepare pork tenderloin – the mustardy crust adds great flavor.

1 ½ lb. pork tenderloin
3 T Dijon mustard
1 T buttermilk
2 t fresh thyme
2 t coarsely ground pepper
¼ t salt
2/3 c soft bread crumbs (just put bread in a food processor and processor to form crumbs)

Preheat oven to 425 degrees. Mix mustard, breadcrumbs, thyme, pepper, and salt and spread over meat then place on a rack in a roasting dish, cover and cook 15 minutes then uncover and continue cooking 45 minutes more. Let stand for 10 minutes before slicing.

A simple sandwich that tastes anything but ordinary. Want to lower the calories? Use Kraft fat free American singles for a fraction of the calories and great results.

1 T Miracle Whip
1 slice cheese (70 calories allotted for this)
6 slices deli shaved smoked ham

Spread both slices of bread with 1 t Miracle Whip and add the ham and cheese. Spread the outside of the sandwich with the rest of the Miracle Whip and cook in a skillet 3 minutes each side or until golden brown and cheese is melted.

Fettucine with Ham

The sauce in this dish and very flavorful – almost like an alfredo without being quite as creamy. Feel free to spice it up a bit more by adding extra pepper and red pepper flakes.

12 oz FiberGourmet fettucine
¾ lb. lean ham, cooked and cooked
2 T oil
1 medium onion, chopped finely
½ lb. sliced mushrooms
1 T flour
½ t rosemary
¼ t pepper
1 ¼ c fat free evaporated milk
½ c frozen peas, thawed
2 T fat free sour cream

Cook pasta according to package instructions. Saute ham in oil to brown it a bit and then remove from pan and set aside. Cook onion 4 minutes then add mushrooms and continue cooking another 4 minutes. Mix in flour, rosemary and pepper then gradually add milk and bring to a boil and cook 2 minutes to thicken it up. Then reduce heat and add peas and sour cream and cook 2 minutes. Mix with the drained pasta and ham and heat through.

Braised Pork in Cream Sauce

What a GREAT sauce this makes ! I think it would be equally as good on chicken or even steak. You definitely have to give this one a try for a nice change to pork chops – these are definitely NOT boring, old pork chops. Try serving with Roasted Brussel Sprouts.

6 4 oz. boneless pork chops
¼ t salt
1/8 t pepper
¾ c beef broth
1 T barbecue sauce
1/3 c fat free evaporated milk
1/3 c fat free sour cream
3 T flour

Sprinkle meat with salt and pepper and cooked in a heated skillet sprayed with Pam. Cover and cook 3 minutes on each side. Combine ½ c broth and the barbecue sauce and pour over the chops and cover the pan, reduce heat to medium low and cook 10 minutes. Remove pork chops and keep warm. Combine ¼ c broth, milk, sour cream and flour and mix with a whisk. Pour into skillet and stir over medium heat for 3 minutes and thick. Pour over chops and serve.
