Three Cheese Risotto

Does making risotto scare you? It scares me ! Especially after watching Hell’s Kitchen with Chef Gordon Ramsay screaming at everyone that they can’t get the risotto right πŸ˜‰

It’s creamy, elegant, moist, cheesy, and so very flavorful. I think next time I am going to add some sauted mushrooms in for a beautiful Mushroom Risotto. The box makes 6 servings and it comes out to 140 calories per serving.

Pom Wonderful

Pomegranates ! One of my favorite fruits. They’re not well know, but they’re well worth getting to know.

While I love them, they are a HUGE pain to prep – just cutting into them leaves you with little stain marks all over the place – no matter how you do it, it can’t be done neatly. But between the unique taste and the healthy benefits, I don’t want to give up pomegranates….and in walks POM WONDERFUL πŸ™‚ This amazing beverage is 100% pomegranate juice…Already all cut up, all squeezed out, and all right there in a cute little bottle just waiting in the refrigerator for you πŸ™‚

Even without all the health benefits, I would drink this up like there’s no tomorrow. I love the rich, tart flavor. Teriyaki Chicken

Teriyaki give the chicken a great glaze that then gets nice and crispy when you put it on the grill. The flavor is simple and that means this dish pairs up well with a myriad of different sides.

4 servings
160 calories per serving

4 4 oz. boneless skinless chicken breasts
1 c teriyaki sauce
ΒΌ c lemon juice
2 t minced garlic
ΒΌ t pepper
2 t sesame oil

Marinate chicken in all the mixed ingredients in a zip loc bag in the refrigerator for 24 hours. Heat grill and cook the chicken 6 minutes each side or until done.
