Bananasicles

You can use the popsicle ‘molds’ you get at the store, or even more fun is placing the mix in Dixie cups, adding a stick, and then peeling away the cup just before serving. Simple, simple to do and a very tasty evening treat. At only 82 calories per creamy pudding pop, I might just have one every night 🙂

3.4 oz. package of instant banana pudding mix
2 c skim milk
1 banana cut into small pieces
7 T sugar free chocolate syrup (the type you use to make chocolate milk)

Place 1 T of chocolate syrup into the bottom of each cup. Combine pudding and milk until thick then stir in banana pieces and divide mix into 3 oz. paper cups. Cover with foil and poke through popsicle sticks and freeze 3 hours. Peel away cup to serve.

Pumpkin Muffins

Moist and flavorful ! This is like eating a super moist cupcake with a piece of cheesecake thrown in for good measure.

1 spice cake mix
3.4 oz. instant vanilla pudding
1 c canned pumpkin (not pumpkin pie mix – just regular pumpkin)
8 oz. cream cheese at room temperature
1/4 c sugar
1 egg

Preheat oven to 350 degrees. Mix cake batter as directed then add in pudding mix and pumpkin. Spoon into 24 paper lined cups. Beat cream cheese with sugar and egg and spoon over the batter. Bake 20 minutes or until a toothpick comes out clean. Cool on wire racks. Refrigerate any uneaten portions.

My Favorite Pudding Pie

There are lots of pudding pie recipes out there, but this one is my favorite because it has a bit of everything – bananas, chocolate, shipped topping, peanut butter, nuts – this is decadence at its best 🙂 High on the calories, but still under 400 and if it’s your only snack of the day along with other 400 calories meals, then definitely allowed !

1 Nilla Pie Crust (pre-prepared pie crust made with Nilla wafers – much like a graham crust)
1 1/2 squares Bakers semi sweet chocolate
1/2 c peanut butter
2 bananas, cut lengthwise in half, then make long thin slices
1 3.4 oz. pack of sugar free vanilla instant pudding
1 1/2 c skim milk
2 c Lite Cool Whip
2 T salted peanuts, chopped

Take half of one chocolate square and grate it with a coarse cheese grater to make chocolate flakes for the top of the pie. Take the rest of the chocolate and microwave 1 minute then add the peanut butter and microwave for another minute, until completely melted. Put banana pieces in the crust and add the chocolate mix. Whisk pudding and milk for 2 minutes and then fold in 1 c of the Cool Whip and spread over the bananas. Spread the rest of the Cool Whip on top and then garnish with peanuts and chocolate flakes.

Orange Cream

Orangey, creamy, tons of pudding flavor – all for so few calories ! If you want them to come in with even less calories and still have a nice portion, just cut out a few of the orange segments and some of the granola.

1 box (4 servings) sugar free low fat vanilla instant pudding
1 c orange juice
1 c fat free Cool Whip, thawed
2 granola bars, crushed
15 oz. can mandarin oranges

Beat pudding mix and juice with wire whisk 2 minutes. Refrigerate 5 minutes and then fold in Cool Whip. Divide into 4 parfait glasses. This step can be done up to a day ahead of serving. Just before serving top with granola and orange segments.

Fruit and Cream

This makes a really different dessert – instead of just pudding or just fruit – you have a creamy pudding-ish base with tons of yummy fruit thrown in. Very refreshing and very different !

20 oz. can pineapple chunks in juice (not syrup), drained
15.25 oz. can sliced peaches in juice, drained
11 oz. can mandarin oranges, drained
4 apples, peeled and diced
1 ½ c skim milk
1/3 c orange juice concentrate
1 oz. package sugar free vanilla instant pudding mix
¾ c fat free sour cream

Mix fruit in a bowl. Whisk milk with pudding and orange juice for 2 minutes them mix in sour cream. Fold into fruit then cover and refrigerate.

Caramel Apple Pudding Cake

This was sooooo easy to do and everyone just loved it ! You pour a whole lotta liquid over the top but by the end of the backing time, all the brown sugar makes its way to the bottom and drizzled over the top, it is pure heaven !

9 oz. yellow cake mix
1 t apple pie spice
1/3 c skim milk
1 medium apple peeled and coarsely chopped
¾ c brown sugar
1 ½ c water heated to 120 degrees

Preheat oven to 350 degrees. Spray a 9 inch cake pan with Pam. Combine cake mix, spice and milk then stir in apple and spread the mix in the prepared pan. Combine brown sugar and water and mix well and then pour over the batter. Bake ½ hour or until toothpick inserted in the center comes out clean. Spoon warm cake into dishes and serve immediately.

Chocolate Banana Parfaits

This is like having a banana split, but without the ice cream ! The rich pudding mixed with the whipped cream is just fabulous. Add bananas and nuts, and you have a real winning dessert for just 76 calories per serving ! Go ahead, have 2 servings 🙂

1 1.4 oz. package sugar free instant chocolate pudding mix
1 c Cool Whip, thawed
1 large banana, thinly sliced
1 T sliced almonds

Prepare pudding according to package instructions using skim milk and refrigerate until set. Divide half of the pudding between 6 parfait glasses or goblets. Use half the cool whip to make a thin layer atop the pudding in each glass. Top with a few banana slices and repeat the three layers. Sprinkle with almonds, cover and refrigerate until ready to serve.

Strawberry Dream

This is like a pudding pop with strawberries – very rich, very creamy and very delicious !

8 oz. cream cheese, softened
1 c skim milk
1.5 oz. package sugar free vanilla instant pudding
1-1/2 c thawed cool whip
20 Nilla Wafers, coarsely broken
1 c sliced fresh strawberries (save some for tops of desserts)
1/2 c strawberry ice cream topping (or strawberry jam)

Beat cream cheese until creamy and gradually beat in milk. Add pudding and beat 2 minutes (it will be quite thick) then stir in cool whip and berries. Swirl in topping. Divide cookies among 18 cupcake liners (I use silicone ones) then spoon in the strawberry mix, garnish the tops with extra berries and freeze 4 hours. Let sit out 10 minutes before eating.

Raspberry Lemon Cream Pie

This was a very sweet pie perfect for a hot summer day. I added lots of extra raspberries as a garnish and it really hit the spot !

8 oz. low fat cream cheese, softened
1 small package instant lemon pudding
1 c skim milk
2 t grated lemon zest
2 c Cool Whip, thawed and divided
¼ c raspberry preserves
Low fat graham crust
1 c raspberries + extras for garnish

Beat cream cheese, pudding, milk and lemon with electric beater and then gently stir in 1 c Cool Whip. Spoon preserves on bottom of crust and cover with the pudding mix. Top with the rest of the Cool Whip and the raspberries. Refrigerate 4 hours. Garnish each slice with extra berries.

Dulche de Leche Rice Pudding

You can serve this pudding warm or chilled. It is rich and creamy and ever so decadent. It’s good without the caramels melted in – – then you do that step and it gets taken to a whole other level. You must try ! 🙂

I am sure you could bring down the calories using buttery spread instead of butter, Splenda instead of sugar, Fat Free evaporated milk instead of whole – – but this dessert just deserves all the ingredients that give it its creamy goodness.

2 c water
½ c uncooked rice
¼ c sugar
1 ½ cinnamon sticks
1 T butter
Dash of salt
12 oz. evaporated milk
8 caramels
1 T coarse sugar
1/8 t kosher salt

Combine the first 6 ingredients in a saucepan and bring to a boil then reduce the heat and simmer 20 minutes or until all the water is absorbed. Stir in the evaporated milk and bring to a boil again then lower the heat and simmer 10 minutes or until it is thick and creamy then add the caramels and stir until melted. Take out the cinnamon sticks and throw them out, then spoon the pudding into desert dishes. Combine sugar and salt and sprinkle over the pudding just before serving.
