Pumpkin Muffins

Moist and flavorful ! This is like eating a super moist cupcake with a piece of cheesecake thrown in for good measure.

1 spice cake mix
3.4 oz. instant vanilla pudding
1 c canned pumpkin (not pumpkin pie mix – just regular pumpkin)
8 oz. cream cheese at room temperature
1/4 c sugar
1 egg

Preheat oven to 350 degrees. Mix cake batter as directed then add in pudding mix and pumpkin. Spoon into 24 paper lined cups. Beat cream cheese with sugar and egg and spoon over the batter. Bake 20 minutes or until a toothpick comes out clean. Cool on wire racks. Refrigerate any uneaten portions.

Rustic and homey – these pumpkin bars with pepitas are a great dessert for those who like desserts a little less sweet.

½ c whole wheat flour
1 c rolled oats
½ t baking soda
½ t cinnamon
½ t allspice
¼ t salt
½ c canned pure pumpkin
1 egg
¼ c canola oil
1 t vanilla
¼ c sugar
¼ c raw,. shelled pumpkin seeds (Pepitas)

Preheat oven to 350 degrees. Spray an 8×8 square baking pan with Pam. Combine flour, oats, baking soda, cinnamon, allspice and salt. Whisk together pumpkin. egg, oil, vanilla and sugar then stir pumpkin mix into the flour mix and stir in pumpkin seeds. Spread evenly into prepared pan and bake 20 minutes or until toothpick inserted in center comes out clean. Cool and then cut into 8 bars. Wrap bars individually and store in the refrigerator.

A nice change to the regular boring old oatmeal. This one adds lotsa flavor without adding too much sugar. And the serving size is sure to fill you up !

Pinch salt
1/3 c quick oats
1/4 c canned pumpkin
2 T almonds, toasted and chopped
1/4 t cinnamon
2 t brown sugar
Pinch nutmeg

Toast almonds by placed in a hot skillet for 5 minutes. Bring water to boil and add salt and oats. Cook, stirring, for 90 seconds. Combine the rest in a small bowl. Reduce heat to low and stir in the pumpkin mix. Sprinkle with nuts. Serve immediately.

½ c skim milk
3 squirts Torani Pumpkin syrup
2 T pure pumpkin puree
4 T Redi-Whip whipped cream
Cinnamon

Mix milk with syrup and pumpkin puree. Microwave for 1 minute to heat through. Pour in coffee and top with whipped cream. Finally sprinkle with cinnamon just before serving.

I use their syrups making lo fat lattes and all sort of coffee drinks. And they have a whole bunch of fruit flavored syrups that are perfect in a glass of iced tea. Some are sugar free and ZERO calories. Others have sugar and are 80 calories or so per ounce.

What I love is that their flavors don’t taste like fake flavoring – the blood orange tastes like you squeezed a blood orange into the tea ! Watermelon syrup makes you think you just bit into a slice of watermelon. And the coffee ones are the same – pumpkin, gingerbread, vanilla – – all GREAT flavors that don’t have any nasty aftertaste and make a real treat out of your everyday coffee and tea drinks.

Naked Pumpkin Pie

What’s pumpkin pie without the crust? It’s naked pumpkin pie ! And by removing the crust, you also remove oodles of calories. Serve with a slice of low fat graham cracker if you miss the crunch too much. For 400 calories, you can almost eat the whole pie (Did I say that out loud?) 🙂

15 oz. can of pure pumpkin (NOT the prespiced pumpkin pie mix)
12 oz can fat free evaporated milk
½ c Egg Beaters
2 ½ t pumpkin pie spice
½ c Splenda
1 ½ t vanilla extract

Preheat oven to 400 degrees. Spray a pie plate with Pam. Mix all the ingredients in a bowl and then pour into the plate. Bake for 15 minutes. Then reduce the heat to 325 degrees and cook for another 40-45 minutes. Cool completely.
