Chicken Milanese with Salad

Milanese style just means a breaded cutlet – – This is easy to throw together and the cutlets rival my old standby recipe – it’s the parmesan cheese in them that make these really special. Change up the salad by adding different veggies; tonight I had some left over zucchini and radishes that I threw in.

4 3 oz boneless chicken breasts
1/4 t black pepper
¼ t salt
1/4 c seasoned bread crumbs
2 T grated parmesan cheese
1 1/2 t oil
3 c baby salad greens or field greens
1 c grape tomatoes, halved
1/4 c matchstick cut carrots (pre-packaged)
3 T low fat balsamic dressing
Pam

Sprinkle chicken with salt and pepper. Rinse chicken in water. Combine bread crumbs and parmesan in a bowl and press chicken cutlets in to coat well. Spray a skillet with Pam and heat over medium heat and add the chicken and cook about 4-5 minutes per side or until browned. Mix the salad greens, carrots, tomatoes and dressing and serve salad alongside chicken cutlet.

Chickpea Salad

This is another one of those really versatile salads – you can add into this bits of pieces of all the little leftover bits of veggies in your frig without really changing the calorie count all that much. This is great next to a sandwich or sometimes I have it all on its own with a few Triscuits next to it and call it a meal !

2 14 oz. cans chick peas, drained and rinsed
1 stalk celery, thinly sliced
4 radishes diced small
1 green pepper diced small
½ c chopped parsley
1 T lemon juice
1 T vinegar
1 T oil
Salt and pepper to taste
½ t garlic powder
½ t onion powder
¼ t celery salt

Combine beans and all veggies and then add the rest of the ingredients and mix well.

Cucumber and Radish Salad

This is a crisp salad with the ultimate pairing of zesty dressing and feta cheese. The olives are just a bonus 🙂

4 large cucumbers
8 radishes, thinly sliced
½ c low fat crumbled feta cheese with basil and tomato
1/3 c low fat zesty Italian dressing
1/3 c pitted kalamata olives

Peel the cucs (optional) and cut into thin slices. I like to use English cucumbers as they are basically seedless. Toss cucs with the radishes, cheese and olives and dress the salad.

Luncheon Chicken Salad

Chicken salad served on a lettuce leaf and with pita wedges instead of on sandwich bread just makes it a whole different beast. And all the fresh flavors in this particular recipe renewed my love of chicken salad.

2 c diced cooked chicken breast
1 1/4 c chopped seeded cucumber
1/2 c matchstick carrots
1/2 c sliced radishes
1/3 c chopped green onions
1/4 c light mayo
2 T chopped cilantro
1 t minced garlic
1/4 t ground cumin
Salt and pepper to taste
4 romaine lettuce leaves
4 6 inch whole wheat pitas, cut into 4 pieces each

Mix chicken, cucs, carrots, radishes and green onions. Whisk together mayo, cilantro, garlic, cumin, salt and pepper. Then mix that into the chicken and veggies. Place a lettuce leaf on each plate and top with 1 c chicken mixture. Serve with pita wedges.

Corn Salad

Even my young teenage nephew liked this one ! So it’s kid approved 🙂 Lotsa flavor, lotsa veggies, and a great side to just about anything.

Dressing:
¼ c oil
1 T chopped parsley
3 T rice vinegar
1 T soy sauce
½ t crushed red pepper

Salad:
1 lb. frozen corn
¼ c shredded carrots
¼ c sliced radishes
¼ c sliced green onions (green part only)

Combine all dressing ingredients and refrigerate. Bring a pan of water to a boil and cook corn 2 minutes. Drain and rinse with cold water to cool then pat dry and add to all the rest of the ingredients. Cover and refrigerate 2 hours so flavors mix.

Sacramento Sandwich

The goat cheese and avocado surely make up for the meat on this sandwich and you won’t feel deprived at all. Packed with healthy MUFA and tons of veggies, this will surely be a favorite of yours like it is mine. If you are packing it for work or school, just pack the vinegar separately and pour over just before serving.

1 small piece of cucumber
2 t red wine vinegar
2 slices wheat bread (45 calories per slice)
1 slice goat cheese
¼ c alfalfa sprouts
¼ of an avocado, sliced
¼ c shredded carrots
2 radishes, sliced

Cut a small piece of cucumber into thin slices and sprinkle with vinegar. Toast bread and spread with 1 slice of goat cheese and then add cucumbers, alfalfa sprouts, avocado, carrot and radish.

If you are packing this to go – skip the toast and just place all the ingredients on the bread and douse with vinegar just before serving.

Another favorite chosen for RETREAD week – I love a platter of stuff 🙂

Sometimes I just don’t want a prepared meal – I want to pick like I am eating appetizers at a party. This dish is also a great snack if you have the calories left from eating a lighter lunch and dinner that day. Add more veggies (carrots, radishes, cucs) to make it larger without adding many more calories.

Veggie Salad

Often times the best thing about a salad is not the lettuce, but all the other stuff ! And this salad agrees 🙂 No lettuce – – just all the good veggies in a great lemony dressing. If you have extra broccoli, throw it in. If you are out of celery, don’t’ sweat it ! Make this salad anything you want 🙂

1 yellow bell pepper thinly sliced
1 large cucumber, peeled and thinly sliced
2 stalks celery, diced
2 large carrots, shredded or sliced
6 radishes, sliced
1 T chopped parsley
2 T lemon juice
1 T oil
½ t garlic powder
Salt and pepper to taste

Toss tomato, cucumber, celery, carrots, radishes and parsley. Combine juice, oil, salt, pepper and garlic and mix well and then pour over salad and serve immediately.
