Lunch Nachos

Sometimes you are just in the mood for ‘junk food’ for lunch. This junk food favorite gets pretty healthy when you bake your own chips and add healthy toppings. So go for it !!

12 6 inch corn tortillas, quartered
Pam
1 T oil
2 t ground cumin
1 ½ t chili powder
2 garlic cloves, minced
30 oz. pinto beans, undrained
1 c crumbled queso fresco or shredded low fat cheddar cheese
1 c chunky salsa
1 c diced avocado
6 T chopped cilantro
Salt to taste

Preheat oven to 425 degrees. Spray a baking sheet with Pam. Sprinkle tortilla quarters with salt and ½ t chili powder and bake 8 minutes or until crisp. Work in batches. Heat oil and add cumin, 1 t chili powder and garlic and cook 30 seconds. Add pinto beans and bring to a boil stirring frequently. Lower heat and simmer 10 minutes then partially mash beans. Place 8 chips per plate and spoon bean mix over the chops. Top with cheese and microwave 30 seconds to melt cheese. Add salsa and avocado and garnish with cilantro.

Poblano Grilled Cheese

Looking for something a little spicy and a little different? This will definitely perk up your lunch ! The poblano pepper makes a great grilled sandwich – coupled with the bean and salsa mash, you barely want anything else – even the cheese becomes secondary (and that is often IMPOSSIBLE).

4 poblano peppers
14 oz. can pinto beans
3 T salsa
1/8 t salt
½ c shredded low fat Cheddar cheese
2 T low fat plain yogurt
2 T chopped cilantro
8 slices 45 calorie per slice whole wheat bread

Place peppers in a glass bowl, cover with plastic wrap and microwave 4 minutes to soften. Let sit covered until cool. Mix beans with salsa and salt and mash most of them to form a paste. Mix cheese with yogurt and cilantro. Heat a Panini maker or indoor grill with a press. Spread the bean mix on 4 slices of bread and then top with the cheese mix. Split the peppers in half and remove the seeds then place peppers over the cheese and finish the sandwich. Spray both sides of the sandwiches with 5-6 squirts of ICBINB spray. Grill until golden brown.

Black Beans and Chilies

Serve this nutritious bean based meal as a lunch with some cut up veggies on the side. Or serve as a dinner side next to Mexican flavored chicken or fish.

1 t oil
2 scallions, thinly sliced
2 cloves garlic, minced
2 T chopped green chilies
2 14.5 oz cans black beans, rinsed and drained
2 c water
¼ c salsa
Salt and pepper to taste
4 t shredded low fat cheddar cheese

Heat oil and cook scallions and garlic 1-2 minutes then add chilies, beans and water and bring to a boil then reduce heat and simmer ½ hour. Stir in salsa and warm through then season with salt and pepper just before serving. Garnish each serving with 1 t shredded cheese.

Zesty Mexican Pork Chops

Cheesy, spicy without being hot, cheesy, filling, – oh, and did I say ‘cheesy’? 🙂 I don’t know what is better in this meal, the perfectly spiced pork chops with the cheesy sauce or the cheesy rice ! Why don’t you decide 🙂

1 lb. boneless pork chops
2 t chili powder
1 1/2 t ground cumin
Salt and pepper to taste
1 t oil
3/4 c white rice, uncooked
1 3/4 c water
1/2 c chunky salsa
3 oz. Velveeta 2 % cheese, cut into cubes
2 T chopped parsley

Sprinkle meat with cumin, chili powder, salt and pepper. Heat oil in a skillet and cook chops 5 minutes or just until browned on both sides. Remove to a plate and cover to keep warm. Add rice to skillet and cook 1 minute then add water and bring to a boil. Cover and simmer 16 minutes or until liquid is absorbed. Stir in half of the salsa and half of the cheese and place the chops on top. Simmer 5 minutes. Melt the rest of the salsa and cheese together with the parsley in the microwave for 30 seconds then pour over meat and serve.

Super good – this stacks up to any taco you find out there and the kids love to make these. These tacos really hit the spot.

1 1/2 lb. boneless skinless chicken, cut into bite sized cubes
1t red vinegar
Juice of one half a lime
1/2 t salt
1/2 t pepper
2 cloves garlic, minced
1 t oregano flakes
10 6 inch flour tortillas
1 tomato, diced
1/4 c shredded lettuce
1/4 c shredded Monterey Jack cheese
1/4 c salsa
Pam
1 avocado, sliced

Spray a skillet with Pam and cook chicken 6-7 minutes or until done. Mix in vinegar, juice, salt, pepper, garlic and oregano and simmer 5 minutes. Heat tortillas half a minute in microwave. Put chicken mix in tacos and top with cheese, tomato, lettuce and salsa. Top with 2 slices of avocado per taco.

1/4 c green salsa (salsa verde)
1 T yellow mustard
1/3 c low fat mayo
2 garlic cloves, minced
1.5 lb. boneless pork chops (¼ inch thick)
35 Whole Wheat Ritz Crackers, finely crushed
2 T oil, divided
7 oz. Spring Mix (or your favorite mixed leafy greens)

Mix together salsa, mustard and 1 T may0 and set aside – this is the salad dressing. Mix garlic and mayo and coat pork (put it on like you are buttering bread) then coat with the crumbs. Heat skillet and add half the oil. Cook half the chops 5 minutes per side or until done. Add the other oil and repeat with the remaining chops. Mix greens and dressing.

Tilapia with Melon Salsa

The melon salsa is sweet but has a bite (onions + jalapenos) and is a perfect accompaniment to a simply broiled tilapia fillet.

15 oz. can pinto beans, rinsed
¼ c prepared salsa
¼ c prepared salsa verde
2/3 c shredded low fat sharp cheddar cheese

Preheat broiler. Mix Beans, refried beans, salsas and 1/3 c of cheese in a pan and cook until hot throughout and the cheese has melted. Turn into a casserole dish sprayed with Pam. Sprinkle with the rest of the cheese and the scallions and broil 2 minutes or until cheese is brown.

Sausage Breakfast Wraps

I love a dish you can make for a hungry breakfast crowd that doesn’t entail you standing at the stove being a short order cook 😉 You can put this one together and throw it in the oven then sit and have coffee and chat while it cooks up perfectly. It turns out a flavorful Mexican inspired dish that everyone enjoys !

1 lb. Italian seasoned turkey sausage, casing removed
1 medium red bell pepper, diced
1 small onion, diced
32 oz. Egg Beaters
4 oz. can chopped green chiles
1 t chili powder
10 flour tortillas, warmed
1 ¼ c salsa

Preheat oven to 350 degrees. Cook sausage, peppers and onions in a skillet until sausage is done, and then drain on paper towels. Place in a 13×9 baking dish sprayed with Pam. Mix eggs, green chilies and chili powder and pour over the turkey mix. Bake uncovered 30-35 minutes or until set then break up with a spoon. Place 2/3 c of egg mix down the center of each tortilla then wrap up securely.

Salsa Black Bean Soup

This was so super delicious ! It rivals any restaurant soup out there ! I made it without the cheese and it was so incredibly tasty that you did not miss it at all.

1 t oil
1 T minced garlic
2 c water
1/2 t chipotle chile powder or 3 t chipotle sauce
2 15 oz. cans black beans, rinsed and drained
1 (8-ounce) bottle salsa
1 T lime juice
1/2 c chopped cilantro
1/2 c shredded Monterey Jack cheese

Heat oil and sauté garlic 1 minute. Stir in water, chipotle, beans and salsa. Bring to a boil then reduce heat and simmer 1 minute. Remove 2 c of the mix and put in a blender and puree. Then put back in the pan and simmer 15 minutes. Then add the juice and cilantro and simmer 3 more minutes. Sprinkle with cheese just before serving.
